The Menu:

hilip Smith moulds fresh ground
beef around small mounds of
cheese. A good blue cheese like
Stilton aoos a burst ol havour to your
homemade burgers. Simply roll it and
build your burger around it. Philip says
its easy to dress-up your barbecue and
reoehne your comlort zone.
Philip has been a chef for over 20
years; more than seven at The Old Tri-
angle Pub. He says being organized
is key.
He veers away from traditional burg-
er sauces and uses little bowls of garlic
mayo made with fresh garlic instead.
His chipotle mayo is smoky and spicy
with a Southern kick. He also makes
a cranberry mayo for a sweet and tart
topping.
Philips piece de resistance is his
Vodka BBQ Sauce which is tangy and
havourlul on burgers ano robust on
ribs and chicken. See page 69 for his
recipe.
FLilip tLinly slices oiherent Linos ol
local sweet potatoes, blue potatoes and
red-skinned potatoes and roasts them
in the oven. Serve with a fresh salad.
IinisL oh vitL Homemaoe Strav-
berry Shortcake. He marinates the
strawberries for a couple of hours in
sugar and a little vanilla. Spoon the
fruit mixture over some biscuits and
add a dollop of fresh whipped cream.

ean Gallagher puts muscle into kneading his pasta
oougL. He mounos a Leap ol hour onto Lis vorL
surface, makes a deep well in the centre and cracks in
the eggs. Hes not averse to getting his hands sticky as he
slovly vorLs tLe hour into tLe vLisLeo eggs to maLe a solt,
pliable ball. And then its time for kneading and working the
oougL until it`s ust rigLt. 1Lat`s tLe most oimcult part, Le
says, but its also super fun.
His pLilosopLy is simple: gooo ingreoients equals gooo
food. He says if you use high quality, whole foods, you cant
go wrong.
When the keen surfer is not catching a wave, hes sur-
rounded by fresh food and mouth-watering aromas at Local
Source, his catering company and neighbourhood shop.
Sean harvests local ingredients from across Nova Scotia. Hes
not a traditional chef, but came by his trade naturally while
putting Limsell tLrougL university vorLing as a hne-oining
waiter.
I loveo creating experiences lor people by pairing havours
from high quality food with great wines. When it comes
to summer entertaining, Sean loves the abundance of crisp
cucumbers, ripe berries and heirloom tomatoes. Good
vine-ripened tomatoes are going to taste like candy.
He says a simple Caprese salad using vine-ripened heir-
loom or cherry tomatoes is a colorful and fragrant dish to
LicL-oh a summer party. 1Le Ley is really nice balsamic vin-
egar and really nice olive oil. Arrange tomatoes on a platter
and top with fresh basil and cheese, like chevre. You can roll
the chevre into little balls and marinate, or Sean says simply
drizzle the balsamic and oil over the top.
People are always impressed with homemade pasta he
says with conviction. Making ravioli or bow tie pasta is super
easy seriously. Sean says to treat it liLe a oumpling ano hll it

brigLt havor. He also says bov tie-sLapeo pasta is simple.
Cut homemade pasta into thick, long strips and then pinch
them in the centre and allow to dry.
Sean`s rule lor Lomemaoe pasta is to use 100 grams ol hour
for every egg. The method can be found online. He says to
cracL a beer, hour tLe counter top ano Coogle tLe instruc-
tions. Seans topping of choice in the summertime is a simple
tomato sauce.
Seans Spiced Filo Baskets with Marinated Berries are a
must-try oessert lor any nev Lost. 1aLe hlo pastry, cut tLe
sheets into squares, and coat them with melted butter. Using a
mumn tin, pusL lour to six layers into inoivioual mumn cups
and sprinkle with cinnamon sugar. Bake in the oven.
Marinate some berries in maple syrup and chopped mint or
basil. I like to marinate them in vodka, maple syrup with a
little bit of cracked black pepper. When ready to serve des-
sert simply spoon some berries into spiceo hlo basLets ano top
with fresh whipped cream or mascarpone cheese.
Sean treats hosting as if its a cooking show. The trick, he
says, is mise en place. All the elements you need to make a meal
are prepared in advance. For instance, have the table nicely set
in advance and plan out what cocktails and pre-dinner drinks
will be served. Have them ready to pour the minute guests
arrive. Hors doeuvres should be pre-prepared and nicely pre-
sented so guests can simply help themselves. Sean suggests
spreadable cheese like chevre, crisp crostini and olives. Its the
little details that really make guests feel special.
Chilled jugs of water infused with cucumber, berries, mint
or lime are a simple way to wow guests- and keep them hy-
drated.

simple. Dont go beyond your
skill set, but dont be intimi-
oateo by havours, Le says. Collin is
the executive chef at Hart and Thistle
Gastropub and Brewery in Halifax.
Collin says pork is great for people
who arent into red meat. Its versatile,
light and can incorporate a lot of fruit.
He says a grilled pork loin dressed with
a fresh blueberry and apple chutney
makes an impressive main course.
Collin makes his chutney with oxford
and valley apples to strike the right
balance of sweet and sour. It looks
great ano tLe havors are avesome.
Pair it with a light side dish like
a mesclun mixed salad with a light
oil-based vinaigrette and raspberries or
peaches, depending on the time of year.

Dont overthink it, he says. Have
a simple dessert ready to go in the
refrigerator. After the main course,
you look like a superstar when you
pipe some whipped cream on top of a
mousse. Boom you put a strawberry
on top of it, a little chocolate sauce, a
mint sprig you look like a god.

Spicy, savoury, salty. Its like a Bloody
Mary, except more delicious. Unlike
Bloody Marys, Caesars use Clamato
juice a salivating blend of tomato and
clam juices. Our Spicy Caesar has every-
thing you need to kick-start the day fruit,
legumes and a shot of vodka.
Ingredients:
6 oz Clamato juice
1 oz vodka
celery salt
1 tsp horseradish
4 dashes Worcestershire sauce
4 dashes Tabasco sauce. Add to taste
lime wedge
spicy bean
Method:
Run the lime wedge around the rim of the
glass. Pour celery salt on a plate, and rim
the glass with the salt. Throw in ice cubes,
and pour vodka and Clamato Juice into
the glass. Add Worcestershire sauce,
Tabasco sauce, horseradish and garnish
with the lime wedge and a spicy bean. Stir
and enjoy.

Costigan offers advice on bulking up at home, nutrition and gym etiquette.
What's a good home workout for someone with no equipment?
One of the easiest routines is eight rounds of a simple exercise, 20 seconds
on, 10 seconds off. It takes four minutes to do each exercise, and you can
cycle through push-ups, planks, squats, lunges, jumping jacks or sit-ups. Just

Protein shakes post-workout- worth it?
Theres a 30-minute post-workout window when your body absorbs nutrients
better than usual. Exercise breaks down muscle so you need to build it back
up the importance isnt the protein shake itself, but getting nutrients right
after you work out. Its hard to eat a full meal at the gym, so protein shakes
can be an easy way to get those nutrients in within the half-hour time frame.
Is it okay to hit on someone at the gym?
Is it appropriate to hit on someone on the street? I think its the same. If some-
ones working out hard, listening to music, its totally inappropriate to stop
them. If they talk to you, then sure its the same as any public place.

Ditching the city centre for a breath of
fresh air may seem simple, but you gotta
know someone who knows someone to
experience the wild side of Nova Scotia,
says John Glynn-Morris. He wants to
change that. A mastermind behind Recre-
ation Nova Scotias Outdoor Network, his
mission is to make information about prime
outdoor areas available to those outside
the circle of hardcore outdoor enthusiasts.
To start, heres his top-three list of hiking
trails near Halifax:
The BIuff TraiI tops the list for a few
reasons. First of all, its Timberlea location
means Halifax Metro Transit can take
you there in no time the cost of getting
there is pocket change. Its also one of
Glynn-Morris favourites because it has
four stacked loops, meaning you could
stroll for two hours, make it a full-day or
overnight trip. In 2008, Explore Magazine
named it one of the eight best urban
escapes in the country.
The Duncan's Cove TraiI is a less-
er-known coastal trail less than half an
hour from downtown Halifax. Its a there-
and-back trek that takes three hours round
trip. This ocean-side trail makes for a
breathtaking view and is also popular for
some World War I monuments along the
way a wilderness and history experience
all in one.
The Crowbar Lake TraiI is a well-es-
tablished trail system about 45 minutes
northeast of Halifax. Like the Bluff Trail, it
offers various options, ranging from 1.6
km to 20 km, depending on your level of
ambition. The three major lakes these trails
visit are great places to stop for lunch or to
cast a line.

STEP 1
Youve got a hole in your drywall. Its not
big since only your hst vent tLrougL. Il it
was bigger the method would be a little more
complicateo. but it`s not. So hrst remove tLe
loose oryvall lrom tLe eoges.
STEP 2
Lsing tLe oryvall sav, cut out a piece ol ory-
vall tLe approximate size ol tLe Lole. It neeos
to ht snuggly into Lole.
STEP 3
Place the drywall inside the hole.
STEP 4
Apply spacLling arouno tLe eoges ol tLe ory-
vall piece, hlling in tLe Loles. SmootL vitL
tLe oryvall Lnile. Allov to ory tLorougLly
until the spackling has turned white. This
usually takes 30 minutes.
STEP 5
Once dry, sand the wall until its smooth.
MaLe tLe patcL husL vitL tLe vall vitLout
sanding through to the drywall.
STEP 6
Stick the adhesive drywall patch over the
dried spackling.
STEP 7
Re-apply anotLer layer ol spacLling smootL-
ly over the patch. Again, allow to dry until
spackling turns white.
STEP 8
Cnce ory, sano oovn ano aoo a coat ol
primer. Once the primer has dried, add a coat
ol paint.
STEP 9

you watch the paint dry.
Method
It takes an idiot to punch a hole in a wall (probably a drunk one), but it doesnt

says its as simple as cracking open a beer, and only takes a couple hours.

ts not about winning the top prize at com-
petitions though the free booze is nice and
its not just about paying 25 bucks for more
than a hundred bottles of beer. To Anthony Lord,
home brewing means crafting each bottle or pint
with his own two hands.
The back porch of his Halifax home is rigged
with two shining 40L pots on roaring propane
burners. Clear plastic pipes run between them,
connecting through a giant steaming cooler
hlleo vitL grain. 1Lis is tLe evolution ol AntLo-
nys setup. He used to buy beer-making kits and
brev in pots on Lis LitcLen stove, but, Le says
with a laugh, you can only do that for so long
before your girlfriend kicks you out. Now he
works from scratch instead of kits, which means
he sources his ingredients through local Halifax
breweries like Propeller, and Noble Grape: Urban
Winery.
It also means he can make bigger batches at a
time. Big enough that he got sick of bottling his
brews it takes a full afternoon, while making
the beer itself is only a four-hour process. Antho-
ny investeo in a lev Legs. A small lreezer in Lis
kitchen holds three of his own beers, on tap.
Anthony is an ultimate craftsman type: a new-
ly-graouateo LalLousie Lniversity engineer, Le
built a voooen garage in Lis yaro ano hlleo it up
with power tools for wood and metal work. He
hxes up olo motorcycles as a sioe proect ano is
renovating Lis Louse into a rustic style Lome vitL
barnboaro trim. 1LougL Le revels in tLe cralt
itsell, even AntLony got into breving because ol
tLe savings.
Between the equipment on his porch and the
keg setup, Anthony racked up about $600 in
start-up costs more than he actually needed to
get starteo. but alter tLe initial investment, ingre-
dients for his monthly 40L batch costs about the
same as a 12-pacL ol KeitL`s at tLe Mova Scotia
liquor store or about 30 cents a pint.
For Halifax master brewer Greg Nash, it started
tLe same vay. Initially I got into it liLe every-
booy else ooes, trying to save some money, Le
says. But that changed in a hurry. Now that hes
more experienced, making beer is about rolling
up Lis sleeves ano getting creative. Ior me it`s all
about the craft, he says. When you go to a brew
shop and buy a kit to make beer, you get it home,
open it up, hno tLe instructions ano tLrov tLem
in tLe garbage. He got tLat aovice lrom vLat Le

ick and Jesse loved music. After a party,
theyd to go back to Nicks room and
listen to The Kooks until she fell asleep,
curled up in his bed. It was a perfect friendship, un-
complicated by sex. The only problem Nick wanted
more. He wanted out of the friend zone.
The friend zone that terrible place where one per-
son in a friendship wants sex or romance and the other
is happy just being friends. In modern dating, its not
uncommon. But unrequited love has always been part
of the game. Even Romeo fell hard for the unrespon-
sive Rosaline before he met Juliet. Getting stuck in
the friend zone is a little newer. It keeps one person
hanging on, desperately hoping things will advance
to the next step. Its sexual purgatory. It gets worse
when the friendship is a benefriends situation, where
two people are having sex that is supposed to be at
least in the mind of one of the friends no strings
attached.
Halifax psychologist and couples counsellor Dr.
David Mensink thinks, in many ways, dating hasnt
fundamentally changed.
Its the same basic hu-
man system, he says.
People are still attracted to
other people in the exact
same way theyve always
been. In clinical terms,
he says, it comes down to
neurotransmitters, brain
chemicals that help us to
feel good when were with
certain people. These exist
in any dating situation, from a dinner and a movie a
deux to a group hang out at a pub. But Dr. Mensink
points out two recent big changes: the co-equality of
men and women and the increase in benefriend sit-
uations. In 2008, Project Innovation Inc. published
a stuoy calleo Farticipants in 'lrienos vitL benehts`
relationships. More than half the men and women
interviewed said they had a past or current benefriend.
So vLy oo ve hno ourselves in situations vLere a
relationship isnt going anywhere and both people
Lnov it? Lr. MensinL says it`s partly because hguring
out the relationship status is more complicated than it
used to be. Some people see friendship as a stepping
stone to sex or a romantic relationship. Scott Nord-
lund was one. I thought the best way to get to her
was to be friends and it would morph, he says.
Turns out, men are much more likely to enter the
lrieno zone vitL oiherent expectations tLan vomen.
A study published in the 2012 Journal of Social and
Fersonal RelationsLips calleo beneht or buroen: at-
traction in a cross-sex friendship found men were
four times more likely than women to want to date
platonic friends of the opposite sex. Men were also
more likely to assume their opposite-sex friend found
them sexually appealing.
The line between friendships and relationships
is murky, Dr. Mensink says, Theres a lot of sliding
back and forth. People use the term there for me,
when they talk about why someone is a good friend,
but in a romantic relationship, says Dr. Mensink,
you expect more.
One-on-one situations are complicated enough,
but when someone tries to satisfy their relationship
needs with two people one for friendship and one
for sex it gets messy.
Thats what happened with Nick. He wasnt hap-
py in the friend zone, but didnt talk to Jesse about
it at hrst, Loping tLeir lrienosLip voulo eventually
become something more.
Then Jesse started sleeping
with Nicks roommate,
Anthony. It was a purely
physical attraction, Jesse
says, Looking back on it,
I know it hurt Nick, but
at the time, I didnt realize
how much. Nick, Jesse
and Anthony continued
their games for months
until Nick made a play. He
told Jesse he wanted more. Our friendship meant so
much to me that I didnt want anything to change.
When Jesse told him she didnt see him romantically,
their friendship ended.
Trying to get from the friend zone to the end zone
isn`t impossible, but it`s oehnitely a Hail Mary: be pre-
pared to hear, I just want to be friends.

A new Halifax company is brewing things
differently. Bridge Brewing Company opened
its doors in January and the owner, 31 year-old
Peter Burbridge, cant keep up with demand.
Their popularity is based on a zero emissions
goal the brewery is working hard to direct all
its waste streams back to a different agricultural
process.
For now, all of Bridge Brewerys spent grain is
being used by TapRoot Farms as animal feed.

Peach Salad
Goes with Chipotle Rub
Ingredients
5 peaches, cubed
1 small red bell pepper, diced
2 tbsp chopped cilantro
2 groon onions, diood hno

cup olive oil
1 tbsp honey or sugar
tsp chipotle powder
Combine all the ingredients and toss.
An exclusive male tradition from Northern
Spain has arrived in Halifax. Txoko, pro-
nounced so-ko, is a society of men who
meet for cooking and conversation no girls
allowed.
Local Source Market owner and self-
taught chef Sean Gallagher has started his
own Txoko, but with a competitive edge. The
group of men gather every other week, each
host trying to outdo the last with themed
menus guests bring bottles to match it.
In Seans culinary circle, elaborate meals
and perfect drink pairings impress, but any
group of men can start a Txoko, he says.
Whatever your style, its the camaraderie
that counts.

A meal for men
Heres some delicious summer salads, perfect for entertaining.
Try them with the steak marinade and rub recipes on page 20.
Panzanella Bread
Salad
Goes with Herbed Rub
Ingredients
5-6 fresh tomatoes, cubed
1 Italian rustic bread loaf,
cubed
cup chopped basil
cup grated parmesan
cheese
3 cloves of garlic, crushed
cup olive oil
cup balsamic vinegar
teaspoon sugar
salt and pepper to taste
Toss the bread in half the olive
oil and vinegar.
Toast bread cubes in the oven
at 350 degrees for 15 to 25
minutes.
You want bread to become
crusty on the outside, but not
dry out completely all the way
through.
Mix the remaining olive oil and
balsamic vinegar with the gar-
lic, sugar, salt and pepper.
Toss the toasted bread, toma-
toes, parmesan cheese and
dressing together.
Serve immediately.
Caesar Salad
Goes with Rosemary Marinade
Dressing
1 tbsp lemon juice
2 tbsp mayonnaise
1 to 2 cloves garlic, crushed
1 tsp worcestershire sauce
1 tbsp Dijon mustard
cup buttermilk
olive oil
pepper to taste
Salad
cup grated parmesan
croutons
bacon, sliced
romaine lettuce, sliced
Combine the dressing ingredients then toss with
the salad.

Philip Smiths Vodka BBQ Sauce
1 cup vodka
1 Spanish onion, large
2 cups ketchup
1 cup brown sugar
cup garlic powder
1 cup white vinegar
2 tbsp mustard
1 cup molasses
Saut onions in small amount of oil. Add
vodka and simmer on medium heat for 10
minutes. Add all ingredients and cook on
low heat for 30 minutes. Stir occasionally.

She slied into the seat beside him smeing of
strawbeies and sunscrn. Her wet hair tied into
a subtle tourban with her favourite silk scarf, she
leaned in for a quick ki and put her ft up on the
dash. They had the wkend ahead of them and the
city behind them and tiny sandwiches in a cler in
the trunk. But the wind was fierce that day and,
when rounding a particularly precarious bend,
