.*stract The food industry is al/ays in search of novel and healthy additives /hich are /idely used as dye to functional foods# Considering the fact that mother nature offers a high diversity of plants, some of /hich are used as food, feed, clothing and for medicinal purposes 0ust to name a fe/# 1o/adays, more than 23,333 different compounds have *een identified to *e of value to the food industry# They are e4ploited as food additives 5serving as flavors, fragrances and colorants6, cosmetics, nutraceuticals and as plants protective su*stances 5insecticides and pesticides6# .ll these compounds are secondary meta*olites produced *y varieties of plants either under stress or as defense mechanism against predators# In recent time, cell cultures are *eing used as alternative to traditional agricultural in order to *etter understand the *iochemical path/ays of these plants and easy the industrial production of these different secondary meta*olites# Under controlled conditions, plant cell cultures are not limited *y *iotic and a*iotic factors# 7any plants /ith high economic value or of medicinal importance have disappeared or getting e4tinct due to harsh environmental conditions# There are many medicinal plants rich in pharmaceutical compounds /hich can *e e4ploited in the treatment of diseases such as cancer, malaria, different heart complications 0ust to name a fe/# 8lant cell cultures offers a lot of advantages in comparison to the conventional production of secondary compounds due to the fact that cell cultures are gro/n under controlled conditions independent of geographical, seasonal variations and environmental factors# Than9s to cell culture, endangered plants species can *e protected and conserved, enriching natured and can *e e4ploited in the production of medicine for the treatment of different diseases# The aim of the study is to characteri+e phenolic compounds especially phenolic acids and anthocyanin in different cell cultures# The plant cell cultures /ere esta*lished from plants /hich have a high genetic potential for the production of phenolic compounds# .fter screening and selecting cell cultures /ith a high content of phenolic compounds, they /ere su*0ected to stress factors li9e elicitors, precursors, and high electric fields to increase the yield of secondary meta*olites# Key /ords, cell culture, food additives, functional food, phenolic acid, anthocyanin
