Ingredients:
4 cups Quinoa, cooked and warmed 2 large beets, diced 1 large sweet potato, diced 4 kale leafs 1/4 cup olive oil 1/2 cup crumbled goat cheese 1/2 cup raisins 4 green onions diced

Directions:
Yields 8, 1 1/2 Cup Servings Serve with Creamy Chipotle Dressing or Cilantro Lime Dressing 1. Begin by preheating the oven to 450 degrees F. Toss the diced beets and sweet potatoes separately with olive oil and place on a baking sheet. Roast for 30 minutes or until tender. Keep warm. Meanwhile, remove the ribbing from the kale leafs and tear into small pieces. Coat with olive oil and place on a baking sheet. Bake 5-7 minutes or until crispy.

To assemble the bowl: In eight bowls place 1/2 cup quinoa, 1/8th of the beet sweet potato mixture, 1 Tbsp goat cheese, 1 Tbsp raisins, 1/8th of the diced green onion, 1/8th of a 1 lime, quartered lime, 2 Tbsp corn, 1/4 cup diced chicken, and top with1/8th 1 cup canned or frozen corn, warmed of the kale. 2 cups cooked diced chicken Dressing of choice.

2 cups cooked quinoa, warmed 2 cups cooked brown rice, warmed 2 cups canned black beans, drained and rinsed 1 cup diced pineapple 2 cups diced red bell pepper 1 avocado sliced 1/2 of a jicama sliced into sticks 1/4 cup almonds 1 lime, quartered 2 cups grilled chicken, diced 1/2 papaya diced Dressing of choice

1. Heat the black beans on the stove in a pan on medium heat until warm. 2. Meanwhile take four bowls. In each bowl place: 1/4 cup quinoa, 1/4 cup brown rice and top with 2 Tbsp pineapple, 1/4 cup red bell pepper, 1/8th of the avocado, 1/8th of the jicama, 1/2 Tbsp almonds, 1/8th of the lime, 1/4 cup chicken and 2 Tbsp papaya. 2 cups cooked Quinoa, warmed 2 cups canned hominy rinsed and warmed 1 head broccoli cut into florets 1 avocado 8 oz grilled tempeh, tofu or chicken 1 cup shredded green cabbage 1/2 cup shredded red cabbage 1/2 bunch of cilantro roughly chopped 1/2 tomato diced 1 clove garlic minced 1 lime, juiced 2 Tb canola oil 1/4 tsp cayenne pepper 1/2 tsp cumin 1 tsp honey Salt and pepper to taste

In a bowl combine cabbages, tomato, and cilantro. In a small bowl whisk together garlic, lime juice, oil, honey, cumin, cayenne and appx 1 tsp salt and 1/2 tsp pepper. Toss the cabbage with dressing and let sit 10 minutes.

Cilantro Lime Dressing

Ingredients: 1 bunch of cilantro, remove leaves from stem. 1 Tb honey 4 oz mayonnaise 2 limes juiced 2 cloves garlic, minced 1 tsp salt 1/2 tsp pepper 1/2 tsp Chili d arbol powder or chili powder 4 oz canola oil

Directions: Yields 9, 2 Tbsp Servings In a blender or food processor, process all ingredients except oil until smooth. Add more lime juice, honey, salt and pepper as needed. Slowly drizzle in oil while blender or food processor is on until the dressing is creamy and smooth.

Ingredients: 2 canned chipotle peppers in adobo sauce with sauce 1 shallot minced 1 clove garlic minced 3 Tb honey 4 oz greek yogurt 1 tsp salt 1/2 tsp pepper 2 limes, juiced 8 oz canola oil

Directions: Yields 9, 2 Tbsp Servings 1. In a blender or food processor, process all ingredients except oil. Add in 2 Tb of the canned chipotle pepper adobo sauce or more as needed to enhance flavor. 2. Turn on blender or food processor and slowly drizzle in oil until combined. Season to taste with salt and pepper as needed.
