RESUMEN
Se modific almidn de pltano (Musa paradisiaca L., var. Ma-
cho) mediante acetilacin con anhdrido actico y un tratamiento
alcohlico-alcalino con el objeto de evaluar su composicin qu-
mica y algunas de sus propiedades funcionales utilizando almidn
de maz como testigo con el fin sugerir su posible uso en la elabo-
racin de alimentos. Los resultados indicaron que los almidones
granulares solubles en agua fra (AGSAF) preparados a 25
o
C y
40 y 60% de etanol tuvieron la menor solubilidad, hecho que se
debe a la importante funcin que tiene la temperatura en el proce-
so de modificacin. Los almidones modificados tuvieron menor
tendencia a la retrogradacin, medida como porcentaje de
transmitancia. La capacidad de absorcin de agua (hinchamien-
to) y la solubilidad se incrementaron con las modificaciones; ade-
ms, la estabilidad al congelamiento-deshielo fue mejorada con
estos tratamientos. Contrariamente, el almidn de maz acetilado
mostr una pobre estabilidad al congelamiento-deshielo en com-
paracin con la muestra sin modificar. La viscosidad aparente de
los almidones modificados fue mayor que la de sus almidones nati-
vos. Con base en estos resultados, los almidones modificados po-
dran tener una adecuada aplicacin como aditivos para postres
congelados y espesantes para sopas.

INTRODUCCIN
E
l almidn constituye una excelente materia prima
para modificar la textura y consistencia de los ali-
mentos (French, 1984; Biliaderis, 1991). Su
funcionalidad depende del peso molecular promedio de
la amilosa y la amilopectina, as como de la organizacin
molecular de estos glucanos dentro del grnulo. Los al-
midones nativos se utilizan porque regulan y estabilizan
la textura y por sus propiedades espesantes y gelificantes

ABSTRACT
Starch from banana (Musa paradisiaca L., var. Macho) was
modified by acetylation and an alcoholic-alkaline treatment in
order to evaluate its chemical composition and some of its
functional properties, using corn starch as a control, to suggest its
possible use in food preparation. The results showed that the
granular cold-water soluble (GCWS) starches prepared with 40%
and 60% of ethanol at 25
o
C had the lowest solubility in cold water,
suggesting that the temperature has an important role in the
modification process. Modified starches had smaller tendency to
the retrogradation, measured as percentage of transmittance.
Water absorption capacity (swelling) and solubility increased with
the modifications; also, the stability to the freeze-thaw process
improved with these treatments. Conversely, starch from acetylated
corn showed a poorer stability to the freeze-thaw process compared
with non modified samples. The apparent viscosity of the modified
starches was bigger than that of its native starches. According to
these results, the modified starches could be used as additives in
frozen desserts and as thickeners in soups.

INTRODUCTION
S
tarch constitutes an excellent raw material to
modify food texture and consistency (French, 1984;
Biliaderis, 1991). Starch functionality depends on
the average molecular weight of amylose and
amylopectin, as well as of their molecular organization
within the granule. Native starches are used in foods
because they regulate and stabilize the texture and
because of their good thickening and gelling properties
(Cousidine, 1982). However, the native structure of starch
can be less efficient because the process conditions (e.g.
temperature, pH and pressure) reduce their use in other
industrial applications, due to their low resistance to high
shear rates, thermal decomposition, high retrogradation
and syneresis.

(Cousidine, 1982). Sin embargo, la estructura nativa del
almidn puede ser menos eficiente debido a que las con-
diciones del proceso (e.g. temperatura, pH y presin) re-
ducen su uso en otras aplicaciones industriales, debido a
la baja resistencia a esfuerzos de corte, descomposicin
trmica, alto nivel de retrogradacin y sinresis.
Las limitaciones anteriores se pueden superar modi-
ficando la estructura nativa por mtodos qumicos, fsi-
cos y enzimticos (Fleche, 1985), dando como resultado
un almidn modificado; se incluye a los almidones
hidroxipropilados, de enlaces cruzados y acetilados (Van
Der Bij, 1976). Estos almidones generalmente muestran
mejor claridad de pasta y estabilidad, menor tendencia a
la retrogradacin y aumento en la estabilidad al
congelamiento-deshielo (Agboola et al., 1991). El almi-
dn acetilado se obtiene por la esterificacin de almidn
nativo con anhdrido actico (Jarowenko, 1986) y el n-
mero de grupos acetilo incorporados en la molcula de-
pende de la concentracin del reactivo, tiempo de reac-
cin, pH, y la presencia de catalizador (Betancur-Ancona
et al., 1997). En aplicaciones para alimentos, la Admi-
nistracin de Drogas y Alimentos de los Estados Unidos
(FDA) slo permite almidones con bajo grado de substi-
tucin.
Para extender la utilizacin del almidn en aplicacio-
nes industriales, se estn desarrollando almidones
granulares solubles en agua fra (AGSAF). stos confie-
ren propiedades funcionales importantes a muchos ali-
mentos instantneos, tales como una mayor viscosidad,
textura suave y propiedades similares a las de los almi-
dones pre y gelatinizados (Chen y Jane, 1994a). Los
AGSAF se pueden producir por un tratamiento del almi-
dn en una solucin acuosa de alcohol, con alta tempera-
tura y presin (Eastman y Moore, 1984), mediante un
proceso de secado por aspersin en un sistema de doble
boquilla (Pitchon et al.,1981) y por un tratamiento alco-
hlico-alcalino (Chen y Jane, 1994a), el cual es eficaz
con una gran variedad de almidones, resultando
viscosidades ms altas y una mejor estabilidad al
congelamiento-deshielo (Chen y Jane, 1994b).
El pltano (Musa paradisiaca L.) es una fuente al-
terna para obtener almidn (Kayisu et al., 1981; Lii et
al., 1982) que es el componente principal del fruto in-
maduro. Bello-Prez et al. (1999) aislaron el almidn
de dos variedades de pltano y estudiaron la composi-
cin qumica y algunas de sus propiedades fsico-qu-
micas y funcionales. Sin embargo, son pocos los estu-
dios relacionados con la modificacin qumica de este
biopolmero (Betancur-Ancona et al., 1997). Por tanto,
el objetivo del presente estudio fue modificar el almi-
dn del pltano usando acetilacin y un tratamiento al-
cohlico-alcalino, y evaluar algunas de sus propieda-
des funcionales para sugerir su posible aplicacin en
alimentos.
These shortcomings can be overcome by modifying starch
native structure by chemical, physical and enzymatic
methods (Fleche, 1985), giving as a result a modified
starch; which may be hydroxipropilated, cross-linked and
acetylated starches (Van Der Bij, 1976). Modified starches
usually show better paste clarity and stability, smaller
tendency to retrogradation and increased freeze-thaw
stability (Agboola et al., 1991). The acetylated starch is
obtained by the esterification of native starch with acetic
anhydride (Jarowenko, 1986) and the number of acetyl
groups incorporated into the molecule depends upon the
concentration of the reagent, reaction time, pH, and the
presence of catalyst (Betancur-Ancona et al., 1997). In
food applications, the Food and Drug Administration of
the United States (FDA), allows only starches with low
substitution degree.
To expand the use of starch in industrial applications,
granular cold water soluble (GCWS) starches are being
developed. Important functional properties to many
instant foods, such as a higher viscosity, soft texture and
similar properties to the pre and gelatinized starches are
conferred by GCWS starches (Chen and Jane, 1994a),
which can be produced by treatment of starch in an
aqueous solution of alcohol at high temperature and
pressure conditions (Eastman and Moore, 1984), by
means of a spray-dryer fitted with a two fluid nozzles
system (Pitchon et al., 1981) and by an alcoholic-alkaline
treatment (Chen and Jane, 1994a), which is effective with
a great variety of starches, resulting in higher viscosities
and a better stability to freeze-thaw (Chen and Jane,
1994b).
The banana (Musa paradisiaca L.) is an alternative
source for obtaining starch (Kayisu et al., 1981; Lii et
al., 1982) which is the main component of the immature
fruit. Bello-Prez et al. (1999), isolated starch of two
banana varieties and studied their chemical composition
and some of their physicochemical and functional
properties. However, there are few studies related with
the chemical modification of this biopolymer (Betancur-
Ancona et al., 1997). Hence, the objective of the present
study was to modify banana starch using acetylation and
an alcoholic-alkaline treatment, and to evaluate some of
its functional properties to suggest its possible application
in foods.
MATERIALS AND METHODS
Banana starch isolation
Unripened bananas from a variety named macho were collected.
The starch was isolated by the procedure of Kim et al. (1995). The
fruits were peeled and cut into 5-6 cm cubes and immediately rinsed
in sodium sulfate solution (1.22 g L
-1
) and then macerated at low speed
in a blender for 2 min. The homogenate was consecutively sieved

Aislamiento del almidn de pltano
Se utilizaron frutos inmaduros de pltano de la variedad Macho. El
almidn fue aislado utilizando el procedimiento reportado por Kim et
al. (1995). Los frutos fueron pelados y cortados en cubos (5 a 6 cm), los
cuales se lavaron con una solucin de sulfato de sodio (1.22 g L
-1
) y
maceraron en una licuadora por 2 min a baja velocidad. El
homogeneizado se pas a travs de mallas 50 y 100 hasta que el agua de
lavado estuviera completamente limpia; a continuacin el macerado se
centrifug a 10 800 x g por 30 min. El sedimento correspondiente al
almidn se sec en un horno de conveccin a 45 C por 48 h, para
posteriormente molerlo en un mortero hasta malla 100 y almacenarlo a
temperatura ambiente en un recipiente sellado.
Acetilacin del almidn
Se pesaron 162 g (base seca) de almidn en su forma nativa, en un
matraz Griffin de 400 mL de capacidad, se adicion 220 mL de agua
destilada a 25
o
C y la mezcla se agit hasta obtener una suspensin
uniforme del almidn. Se utiliz tanto el almidn de pltano obtenido
segn lo ya descrito, como almidn de maz (Zea mays L.) comercial
(Industrializadora de Maz) el cual se us como testigo. El pH se ajus-
t a 8.0, adicionando algunas gotas de NaOH a 3%, manteniendo la
suspensin en agitacin. A continuacin se adicionaron simultnea-
mente el anhdrido actico y NaOH para mantener el pH de la suspen-
sin entre 8 y 8.4; despus el pH se ajust a 4.5 con HCl. La suspen-
sin se filtr, resuspendi en 150 mL de agua y posteriormente se
refiltr, proceso que se repiti una vez ms. Finalmente la pasta de
acetato de almidn se sec con aire caliente hasta el contenido de
humedad en equilibrio.
Grado de sustitucin (GS)
Una muestra pulverizada de 1 g del acetato de almidn se coloc
en un matraz de 250 mL y se adicion 50 mL de una solucin de
etanol-agua (75% v/v). La mezcla se agit y se mantuvo a 50
o
C du-
rante 0.5 h. A continuacin se enfri y se agregaron 40 mL de KOH
(0.5 N). Esta mezcla se mantuvo durante 72 h con agitacin ocasional.
El exceso de lcali fue titulado por retroceso con una solucin estndar
de HCl (0.5N) usando fenolftalena como indicador. La solucin se
dej en reposo por 2 h y despus se neutraliz el exceso de lcali que
an pudiera tener la muestra. Simultneamente se titul una muestra
testigo utilizando una muestra original del almidn.
Clculos
El nivel de acetilacin y el grado de sustitucin del almidn se
calcularon como sigue:

through screens number 50 and 100 U.S. mesh, until the washing water
was clean; then it was centrifuged at 10800 x g for 30 min. The white-
starch sediment was dried in a convection oven at 40
o
C for 48 h,
ground with a mortar and pestle to pass a 100 U.S. mesh and stored at
room temperature in a sealed container.
Starch acetylation
162 g (dry basis) of starch in its native form was weighed in a
Griffin beaker of 400 mL of capacity, and 220 mL of distilled water at
25
o
C were added. The mixture was stirred until a uniform slurry of
starch in water resulted. The slurry was then placed under moderate
mechanical agitation using a magnetic stirrer. The banana starch
obtained as described in the previous section, as well as commercial
corn starch (Zea mays L.) (Industrializadora de Maz) marked as control,
were used. The pH was adjusted to 8.0, by adding dropwise to the
suspension 3% sodium hidroxide solution while keeping it under
agitation. Next, the acetic anhydride and NaOH were added
simultaneously to maintain the pH of the suspension between 8 and
8.4. When all the acetic anhydride was added, the pH was adjusted to
4.5 with HCl. The filter cake was reslurried in 150 mL of water and
refiltered. Last, the resulting filter cake was hot air-dried to equilibrium
moisture content.
Degree of substitution (DS)
A powdered starch acetate sample (1.0 g) was placed in a 250 mL
flask, and 50 mL of a 75 % ethanol in distilled water solution were
added. The mixture was agitated, warmed to 50
o
C, held at that
temperature for 0.5 h, and cooled, then 40 mL of 0.5 N potassium
hydroxide were added. The mixture was then allowed to stand 72 h,
with occasional swirling. The excess alkali was back titrated with
standard 0.5 N hydrochloric acid using phenolphthalein as indicator.
The solution was allowed to stand 2 h, then any additional alkali which
might leach from the sample was titrated. A blank was titrated at the
same time, using an original sample of the starch.
Calculations
The acetylation level and the degree of substitution of the starch
were calculated as follows:

Obtainment of GCWS starches
It was proceeded as described by Chen and Jane (1994a), using
ethanol and NaOH (3M) in different proportions (40 and 60%, v/v)

Obtencin de almidones granulares
solubles en agua fra (AGSAF)
Se procedi conforme a lo descrito por Chen y Jane (1994a), uti-
lizando etanol y NaOH (3 M) en diferentes proporciones (de 40 a
60%, v/v) y temperaturas de acuerdo con lo sealado en el Cuadro 1.
Para ello se suspendieron muestras del almidn (100 g, base seca) en
etanol-agua (40% v/v) en un matraz de 3 L. A esta mezcla se adicion
NaOH (3 M) a una velocidad de 4 g min
-1
y con agitacin suave.
Despus de 10 min la mezcla se dej a temperatura ambiente hasta
que los grnulos de almidn comenzaran a sedimentar. Posteriormen-
te, el almidn se resuspendi en una solucin acuosa de etanol neutra-
lizado con HCl (3M). Los grnulos se deshidrataron con etanol abso-
luto y posteriormente se secaron en un horno a 80
o
C por 3 h. Final-
mente el almidn seco se moli (malla 100) y almacen a temperatura
ambiente en frascos sellados.
Solubilidad en agua fra
Se determin la solubilidad en agua fra de los AGSAF por el
mtodo de Eastman y Moore (1984). A 100 mL de agua destilada se
les adicion 1 g (base seca) del almidn, mezclndose a baja velo-
cidad en una licuadora. Despus de agregar toda la muestra de al-
midn, el equipo se oper a alta velocidad por 2 min. La suspensin
de almidn fue vaciada en botellas de 259 mL, para centrifugar a
1220 x g durante 15 min. Una alcuota de 25 mL del sobrenadante
se transfiri a una caja de Petri previamente pesada y se sec en un
horno a 110
o
C por 4 h. Por diferencia de peso se calcul la solubi-
lidad en agua fra (%).
Anlisis qumico
La humedad se determin por prdida de peso a 130H2
o
C, por
3 h. El contenido de cenizas, protena y grasa se evalu de acuerdo
con los mtodos 08-01, 46-13 y 30-25 de la AACC (1983).
