What is cofee?
Cofee literally grows on
trees! Tese evergreen trees
produce delicate, highly
fragrant white fowers that
smell a bit like jasmine.
Tese little blooms turn into
cofee cherries, and each of
these cherries contains two
little cofee beans.

Instant versus fresh cofee
whats the diference?
Instant
Its not called instant for nothing! You just pop a spoonful of
granules into a mug, pour in boiling water, add some milk
and sugar if you like and hey presto, your cofee is ready to
drink. Instant cofee has to go through all sorts of processes
afer its roasted to make it dissolve in water extraction,
freeze-drying, spray-drying. Tis heavy processing means
that the cofee loses all of its wonderful natural favours.
Fresh
Fresh ground cofee, also known as roast and ground, is
simply cofee beans that have been roasted and ground. It
doesnt dissolve like instant cofee, thats why you need to use
a flter or cafetire. But, unlike instant its completely natural
nothing is added but heat. Its a bit like putting UHT milk on
your cornfakes instead of fresh milk you wouldnt dream
of it! So if you want the real thing, fresh ground cofee is the
natural choice.

Now that you know the
diference between instant
and fresh ground cofee, its
time to get to grips with
the beans.
Tere are lots of diferent
species of cofee but you
only need to know about
two. Afer all, cofee is one
of lifes simple pleasures so
lets keep it that way!
Arabica
Nearly all fresh cofee is
made from this bean.
Arabica is grown at
very high altitudes in
semi-tropical climates near
the equator. Te conditions
make it trickier to grow, so
its expensive to produce
but well worth the efort, as
the beans are bursting with
wonderful favours.
Its all about the bean

Robusta
Tis bean is grown at much
lower altitudes. Robusta
packs a punch with twice
the cafeine content, but
lacks the fnesse of Arabica
when it comes to favour.
When you sip an instant
cofee, youre more than
likely tasting robusta beans.
Te taste test
Arabica is by far the
superior bean theres
simply no contest in terms
of taste. At Bewleys we
never settle for second
best. Tats why we insist
on using only the fnest
100% Arabica beans in
our cofees.

Fresh ground cofee is the most natural thing in the world.
Te beans are picked, dried and roasted, preserving all those
wonderful favours. Instant cofee goes through all sorts of
processes, such as freeze-drying and spray-drying.

Whats in a name?

can feel like a geography lesson sometimes, but its really
quite simple. Cofee is grown in several diferent countries,
right across the globe. So when you see the word Colombia
on a bag of cofee, it means that the cofee has been grown
in Colombia!

Now this is where it gets interesting. Were always talking
about how things taste diferent when were on holidays the
favour of a Spanish tomato is completely diferent to an Irish
one, isnt it? Well, its the same with cofee. Each cofee-
growing country is diferent. Climate, soil, sunlight these
all afect how the cofee tastes, thats why a Kenyan cofee will
taste diferent to a Java cofee.

Te strength guide explained
You might have noticed a
number on your cofee bag.
Simply put, this number
indicates the strength of
the cofee the higher the
number, the stronger tasting
the cofee. Its a bit like
chocolate really, some like it
white and mild, some like it
dark and strong.

Cofee myth:
Te higher the cofee strength, the
higher the cafeine content.
No, no, no, this simply isnt true. A little cup of espresso
packs a big punch but its got the same cafeine content as a
mellow cup of freshly ground cofee.
If you cant resist the mellow taste of white chocolate
then go for...
Strength 1-2 (Mild)
If you prefer the rich, luxurious taste of milk chocolate

Fairtrade, organic it can all get a bit confusing.
Heres a quick guide to help you understand what these labels
mean and why they are important when it comes to choosing
what cofee to buy.
Did you know...
Bewleys was the frst company to bring Fairtrade cofee to
Ireland and is still the largest importer to this day. Were proud
of the close relationships we have with our growers, ensuring
they receive a decent and fair income from their trade.

Fairtrade
Fairtrade is the only
certifcation that guarantees
a minimum price for its
producers. Tis allows small
farmers to compete with
the bigger players without
getting squeezed out of the
market. When you buy a bag
of Fairtrade cofee, you can
rest assured that it has been
bought at a fair price, the
workers are treated decently
and the local community
benefts as a whole.
Organic Standard
If you see this symbol on
a cofee bag it means that
the cofee inside is certifed
to high organic standards.
Tese standards cover
everything from banning
the use of harmful pesticides
to conserving wildlife. Tis
symbol also guarantees
traceability right back to
the source.

How cofee is packed
Cofee bags come in all sorts of shapes and sizes. Here is a
quick low down on the three main types:
Valve bags
When cofee is roasted it releases gases. If its packed straight
into a bag and simply sealed, the result could be a nasty
explosion on the supermarket shelf! To avoid this, special
little valves are inserted into the bags. Tese let out any excess
gases but also stop air and moisture getting in, sealing in the
lovely favours and aromas. Te result? Deliciously fresh
cofee and no nasty surprises!

Vacuum packs
A bag of vacuum-packed cofee looks a bit like a brick. Afer
the bag is flled all the air is sucked out, leaving a solid pack
of cofee. When its time to make your cofee you simply snip
of the corner of the bag and, hey presto, air rushes in and the
bag becomes sof enough to take out a scoop of cofee.

Capsules
Capsules are the ultimate in portion control! Each little
airtight capsule contains a measure of cofee exactly the
right amount for one cup. Tis is the perfect solution for
occasional cofee drinkers. Tey can enjoy a fresh cup of
cofee whenever they fancy, without having to open a
whole bag.

Ground Cofee
A cup of fresh cofee really does hit the
spot. Its the perfect eye-opener in the
morning when youre not quite fring
on all cylinders; its a lifesaver in the
afernoon when you hit that energy
slump. So why settle for anything less?
You deserve better!

Getting your measurements right
So now you know the
basics of fresh cofee,
its time to take the next
step making the perfect
cup of fresh cofee. But
before you put the kettle
on theres just a few more
things you need to know.
Cup versus mug - whats the diference?
When a friend ofers you a cup of cofee, chances are they
mean a mug. When you ask for a cup of cofee in your local
caf, youll probably get it served in a cup. To clear up any
confusion when it comes to making cofee heres a little tip
to remember:

One spoon or scoop equals one person

When making a fresh cofee the measure is a heaped dessert-
spoon per person. Whether you pour it into a cup or mug is
neither here nor there!

Types of machine
Tere are so many diferent
cofee machines out there
that it can all seem a little
bit daunting. But remember,
making fresh cofee isnt
rocket science. Once you get
to grips with the equipment
its just a matter of choosing
what suits your budget, your
lifestyle and your kitchen!

Cafetire
Tis is also known as a Plunger or French Press and is
probably one of the simplest pieces of equipment to use. You
simply scoop the cofee into the heat resistant glass jug, pour
in water (just of the boil but more about that later), leave
the cofee to brew for 3-5 minutes, give it a stir, then push
down the plunger, pour and enjoy.

Filter machine
Tis handy machine is easy to use. You just pour cold water
into one compartment, pop a paper flter into another, scoop
the cofee into the flter, fick a switch and the machine does
the rest! Te water heats up, drips through the ground cofee
in the flter and hot cofee pours into the jug below.
Espresso machine
Tis machine is a smaller version of what you see in cafs
all over Ireland. It works by forcing pressurised hot water
through cofee which has been pressed into a little flter with
a handle. Te result is a strong, rich shot of cofee. You can
even have a go at making your own cappuccinos, as most
espresso machines have a device for heating and frothing up
your milk, using steam.

Moka pot
Tis little gadget allows you to make cofee on your stove-top.
It comes in three pieces and is simple to use. You just pour
cold water into the base, pop the metal funnel on top, fll it
with cofee, and screw the top on. Ten its just a matter of
placing the pot on a hot cooker ring. Once you hear a strange
gurgling noise, you know your cofee is ready!
Capsule machine
Tese clever little machines have become very popular. Tey
are neat, straightforward to use and great for occasional
cofee drinkers. You simply pop in a cofee capsule and out
pours a perfect measure of fresh cofee. Tese machines are
really fexible. You can buy a variety of diferent types and
strengths of cofee and choose whichever suits your mood!

to perfect cofee
Fresh cofee is simply
delicious and deliciously
simple! In fact, it takes the
same length of time to make
a cup of fresh cofee as it
does a cup of tea, so there
are no excuses. Grab your

A little hint.....
If you want to check how

takes to fll your cafetire up

Step 1
Warm your cafetire using some hot tap water, then let it sit
for a minute before emptying it out. Add one heaped dessert-
spoon or scoop of Bewleys fresh ground cofee per person.

Pour in water, just of the boil, up to the metal rim and stir to
release those fabulous favours. Leave for 3-5 minutes to brew.

Slowly plunge your cofee by pushing down on the centre shaf
until the flter gently reaches the bottom of your cafetire.

Te fve enemies of cofee!
Air
Air is the chief enemy of fresh cofee it makes cofee lose
its favour very quickly.
Light
Cofee is light-sensitive it spoils very quickly when
exposed to sunlight so dont forget to keep it in the
kitchen cupboard.
Heat
Cofee is also very sensitive to heat. It breaks down the
natural oils and sugars that give cofee its distinctive taste.
Moisture
Next up is moisture. If your cofee gets damp it gets mouldy,
simple as that.
Time
And fnally, if that bag of cofee you bought last Christmas is
still lurking in your cupboard, bin it now! Fresh cofee, even
when its stored properly, will only last for about two weeks.

How to keep your cofee fresh
Use an air-tight container
Te best home for your
cofee is an air-tight
container. Try and get one
with a rubber seal, that
way your cofee will stay
really fresh.

Use a cofee clip
Cofee clips are a simple and
cheap alternative. Just fold
down the top of your cofee
bag and use the cofee clip to
seal it. You can also use the
little reseal tab that comes
with most cofee bags.
Zip-loc bags are perfect too.

Cofee myth...
Cofee stays fresher for longer if you
keep it in the fridge
Wrong. Cofee beans grow in a very hot climate so its not
surprising that they dont like the cold! Never store your
cofee in the fridge. Te condensation will make your
cofee mouldy.

Where it all began
From Ethiopia to Yemen, to
Arabia to Turkey, the world
has been enjoying this
deliciously aromatic drink
since 600BC. Cofee fltered
into Europe through the
trade routes, where cofee
houses became all the rage.
Fast-forward a few hundred
years to a young Ernest
Bewley. Eager to spread
cofee culture in Ireland,
he ran cofee-making
demonstrations from the
back of his shop in Georges
Street, Dublin at the turn
of the last century. A lot
of cofee and sticky buns
later and weve fallen truly,
madly, deeply in love. Can

comes from
Its all about the numbers...
Te best conditions for
growing cofee lie between
the tropics of Cancer and
Capricorn, lying 25 degrees
north and south of the
equator. Tis area is known
as the Cofee Belt.
At Bewleys weve fne-tuned
our co-ordinates even
further. We never stray
above latitude N 23.5 or
below latitude S 23.5,
and we wont move an inch
below an altitude of 1,300
metres! Tis guarantees that

hardly surprising considering theyre the worlds biggest
cofee producer! But did you know the Brazilian term for
breakfast is Caf da Manh? Tis literally means morning
cofee. Tey believe that breakfast just wouldnt be breakfast
without it!

Tailand
If you have a really sweet tooth youll love cofee prepared the
Tai way. Tey like to add sweetened condensed milk to their
freshly brewed cofee.

Turkey
Sweet, spicy and frothy, Turkish cofee is a real treat.
Two spoons of fnely ground cofee are put into a little
long-handled copper pot along with a generous spoon of
sugar. Te pot is then put on the heat, brought to the boil
three times then the rich, sweet cofee is poured into little
cups. Cardamon seeds are added for that extra exotic twist.

Espresso
An espresso is made by
forcing hot water quickly
through fnely ground
cofee, at very high pressure.
Te result is a rich, dark

favour. A shot of espresso
is the main ingredient for

based drinks.

Cappuccino
By far one of the most
popular drinks in Irish caf
culture, a cappuccino is
a double espresso topped
up with milk which has
been steamed to a silky
smooth texture (similar to
marshmallows). Some like
to add a sprinkle of cocoa
powder or cinnamon on top.
Americano
An Americano is made by
taking a shot of espresso
and adding hot water in
other words its a black
cofee! It got its name back
in World War Two when the
American soldiers found the
taste of espresso too strong
and asked the Italians to top
it up with hot water.
