This recipe makes enough for
2-3 days worth of meals
10 cups water
2 cups split mung
beans*, rinsed
2 1/2 Tbs. olive oil
2 Tbs. curry
powder (or
more to taste)
Salt
In large pot, bring
water and beans to a
boil. Reduce heat and
stir in oil, curry powder
and salt. Simmer 25
minutes or until beans
are soft, stirring
occasionally.
*They look a bit like split peas and are usually
sold in the Asian section of supermarkets or
with dry beans and peas at natural-food stores.
