Welcome to our second edition of the Harvests of Haldimand
Local Food Guide.
Haldimand Countys farmers produce a bounty of goodness,
fresh from some of the most prized agricultural land to be found
anywhere in Southern Ontario. This diversity of food inspires our
local chefs to create unique and delectable Haldimand Dishes. A
celebration of the Harvests of Haldimand occurs throughout
the year, from fruit, vegetables, meat and poultry to cheese, eggs,
jams, and maple syrup.

Why eat a tomato that has traveled for days on a truck?
Fully ripened and bursting with favour, your local tomato can
be on your dinner plate the same day it was picked. Fresh food

long distances), providing you with a more natural, wholesome
product. Quality local food isnt just about produce. Theres a wide
variety of great tasting food, including eggs, milk, cheese, meat,
honey, preserves and poultry waiting for you to discover. Youll

from other countries and provinces. Local farmers can ofer

food builds relationships based on understanding and trust, the
foundation of strong communities.

Local food doesnt have to travel far. By reducing packaging
material and the distance food travels, we can reduce carbon
emissions and leave a smaller ecological footprint. When we

1 Tbsp diced red onion.
1 Tbsp diced celery.
1 tsp curry paste.
Salt and pepper to taste.
Instructions
Combine all ingredients in a bowl. Makes enough flling for 1 large bun.

Blueberry Streusel Muffns
1/3 cup sugar
1/4 cup butter or marg, softened
1 egg, beaten
2 1/3 cup four
4 tsp baking powder
1/2 tsp salt
1 cup milk
1 tsp vanilla extract
1 1/2 cup fresh or frozen blueberries
Streusel:
1/2 cup sugar
1/3 cup four
1/2 tsp cinnamon
1/4 cup butter or margarine
In mixing bowl, cream sugar and butter. Add egg; mix well. Combine four, baking
powder and salt; add to creamed mixture alternately with milk. Stir in the vanilla. Fold
in blueberries (if using frozen, do not thaw). Fill 12 greased or paper- lined muffn cups
2/3 full. In a small bowl, combine sugar, four and cinnamon; cut in butter until crum-
bly. Sprinkle over muffns. Bake at 375 for 25-30 min or until browned. Yield: 1 doz.

BOILED CORN ON THE COB
Remove husks, silk and ends, from each ear. Rinse corn in cold water and drop into a kettle of vigorously boiling unsalted
water, making sure water completely covers corn. Allow water to return to a boil for four minutes. Drain and serve im-
mediately with butter, salt and pepper (if desired).
MICROWAVED CORN ON THE COB
Cook fresh corn on the cob in microwave with husks and silk intact. They will cook in their own natural moisture.
Cooking Timetable:
Remove and wrap in kitchen towel, foil or stick in oven mitts for at least 5 minutes. Remove husks and silk (which is
easier than when cold) and serve.
BARBEQUED CORN ON THE COB
Take unhusked corn on the cob and submerge in water for about 20 minutes. Remove corn from water and place into
hot coals, or on a gas grill. Turn occasionally until done (approximately 15 to 20 minutes) or until outside of husks are
burnt. Remove husks and season with butter and salt.

Steamed Mussels with Bacon, Shallots & Apple
Ingredients
4 oz. smoked bacon (Hanson Meats, Cayuga), cut into 1/4 inch lardons
2 shallots, peeled and sliced into thin rings (Richardsons Farms,
Dunnville)
1 tart apple, peeled and small diced
1 pound mussels, washed and bearded
1 ounce dry white wine
1 ounce apple cider
1/2 ounce apple cider vinegar
2 ounce heavy cream (Hewitts Dairy, Hagersville)
1 fresh thyme branch
Kosher or sea salt
Fresh ground black pepper
Directions
Cook bacon over a medium high heat in a wide saucepan until rendered and crisp. Drain off some of the fat. Add shallots and
apple. Cook until slightly caramelized. Add mussels and stir to coat. Deglaze with white wine, apple cider, and vinegar.
Reduce slightly. Add cream, thyme, salt, and pepper. Cover and cook until all the mussels are open and the sauce is reduced and
slightly thickened. Serve in the pan or transfer to a large, wide bowl. Delicious with toasted country bread.
Makes 6-8 servings.

Maple Syrup Pie
1 baked 9 pie shell, cooled
1 1/2 cups maple syrup (preferably dark)
1 cup whipping cream (35%)
1/4 cup cornstarch
1/4 cup cold water
In a medium size heavy bottom pot, combine maple syrup and cream. Blend cornstarch together until smooth.
Stir into cream mixture. Bring mixture to boil over medium heat and cook 2 to 3 minutes, stirring constantly until
thickened. Pour into baked pie shell and let cool until set. Serve with dollop of whipped cream and seasonal fruits.

1 cup pecan halves

Instructions
Thoroughly mix sweet potatoes, milk, melted butter, salt and paprika. Spread in greased casserole. Make topping by heating brown
sugar/maple syrup and butter over low heat, stirring constantly, until butter is barely melted. Spread topping over sweet potatoes and
cover with pecan halves. Refrigerate until ready to heat. Warm in oven or microwave until bubbling hot. Serve immediately.
