1. Microbial Analysis of Service Water in Different Food Establishments in
the Vicinity of De La Salle University
Due to industrialization and other anthropogenic activities,
the purity of water is critically threatened. The microbiological
parameters that are considered for drinking water to be safe for
consumption are the amount or concentration of Enterococci,
Escherichia Coli, and coliform bacteria which all should be zero.
In a study done in Lonand, a town in Khandala Tahsil,
Satara, water samples were analyzed for Klebsiella and E. coli
estimation. Results revealed that most samples were positive of
Klebsiella and E. coli.
Another study done in Chennai used samples from bottled
drinking water to analyze for total and faecal coliform count, total
viable plate count and culture. Results show that faecal coliforms
were not isolated from any of the bottles drinking water.
This test could indicate whether the food establishments
around De La Salle University use filtrated, purified drinking water
as their service water.

2. Microbial Analysis of Sauces Used by Different Food Stalls in the Vicinity


of De La Salle University and College of Saint Benilde
In a study conducted on the selected street food sauces sold in
Cagayan de Oro City, two of the five randomly selected samples were
positive of E. coli contamination. Because sauces are more exposed in the
environment, they are potential vehicles of food borne diseases. In
another study conducted on street vended chili sauce in Mexico, 40% of
the samples were faecally contaminated. This indicates that some food
stalls serve sauces contaminated with disease-causing bacteria. In
addition to this, the study may identify food stalls whose food preparation
was done in an unsanitary environment, possible of human contact as
well. This study may be significant in preventing contraction of food borne
diseases among the consumers of street vended food within the vicinity of
De La Salle University and College of Saint Benilde.
