An

A-Z Guide for a Green chef

ABOUT THE AUTHOR

Who is Susana Pascual Guerrero?

he is Annie to her circle

of friends; Mom to Badjie
Trinidad, her eldest daughter and
to her siblings; Tita Annie to
those who are close enough to be
considered family; and Miss Annie
to many others who use the Miss
with much respect and admiration
- I am one of those.
From childhood Miss Annie
knew she was born to cook
and conquer! For the last 50
productive years of her life, the
kitchen has been the other better
place to always be. This passion has
translated into hundreds original
recipes and countless versions of
other already existing recipes. She
has authored eight self-help books
that discuss both culinary and environmental matters. This book is
the 8th.
Her cool and inspiring leadership style has managed to establish
some of the countrys best restaurants, coffee shops and events venues
since 1988. The Cravings Group (TCG) continues to innovate
and re-invent itself. The Groups vision is one of the best I have
encountered: To passionately satisfy everyones cravings. This shortly
written vision is loaded with all the hopes and dreams Miss Annie
continues to have for her first baby, TCG.
Another highly successful endeavor was the founding of the
Center for Culinary Arts (CCA, Manila) in 1996, the pioneer culinary
institute in the Philippines. Since its founding, CCA has graduated
over 1,000 chefs, many of them holding top culinary positions in

the best hotels, resorts, restaurants, cruise liners, catering facilities,

industrial catering companies and leading multinational companies.
Some of these graduates have been discovered by television executives
and are now full-time celebrity chefs. Miss Annies original vision for
CCA is very much in sync with the Centers newly rewritten vision:
To fulfill culinary dreams. With such a great vision that has already
proven results, Miss Annie believes CCA will continue to produce
exemplary chefs not only for the Philippines but for the world.
What is keeping Miss Annie very engaged at the moment are
her programs for underprivileged women which is being run by the
Culinary Education Foundation (CEF), where she is President. The
CEF teaches these underprivileged women the basic culinary skills,
organic farming, recycling and bee farming. The CEF also provides
scholarships to deserving women by teaching them how to manage,
cook and own their small carinderias. This program provides these
women with the essential skills to help them make a decent living.
Miss Annie so rightly put it: Teach them how to cook, and feed
them for a lifetime.
Miss Annies concerns for the production of more sustainable
food products, the mentoring of our future breed of excellent chefs
and the teaching of underprivileged women on how to make a living
is laudable, to say at the very least.

Environmentalist!
