Preheat your oven to 400F (200C) and grease 12 standard size muffin-pan cups.
Beat together the butter and granulated sugar until light and fluffy.
One at a time, add the eggs, beating thoroughly after each is added.
Beat in the bananas until the mixture is smooth.
Mix together the flour, salt, baking powder and baking soda.
Alternately stir the flour mixture and the buttermilk into egg mixture until the dry ingredients are
just moistened.
Stir in the chopped pecans and vanilla extract.
Spoon the batter into the greased muffin pans, filling about two-thirds.
Bake for around 20 minutes or until golden brown.
Blueberry Muffin recipe
2 cups of blueberries.
2 eggs.
2 cups of flour.
1 cup of sugar.
1/2 cup of milk.
1/4 cup of butter.
2 teaspoon of baking powder.
1 teaspoon of vanilla.
1/2 teaspoon of salt.
Instructions for Blueberry Muffin:
Preheat your oven to 350F.
Grease and floor muffin pan. Beat together the butter, eggs, salt and sugar.
Mix the flour with baking powder and sift into first mixture, alternating with milk.
Blend in the vanilla. Add the blueberries.
Pour into the muffin pan and bake for about thirty minutes.
Blueberry Oat Muffins recipe
1 cup of oats.
1 cup of buttermilk.
1 cup of all-purpose flour.
1 teaspoon of baking powder.
teaspoon of baking soda.
teaspoon of salt.
cup of packed brown sugar.
1 medium egg, beaten.
cup of margarine, melted.
1 cup of blueberries.
Instructions for Blueberry Oat Muffins:
Combine the oats and the buttermilk; allow to stand.
In a mixing bowl, combine the flour, baking powder, baking soda, salt and sugar. Stir well to
blend.
Add the beaten egg and melted margarine to the oat mixture. Mix thoroughly.
Add to the dry ingredients, stirring just until moistened.
Gently fold in the blueberries.
Fill 10-12 muffin cups sprayed with nonstick Spray.
Bake at 375F (190C) for 20-25 minutes, or until the top springs back when lightly touched.
Carrot and Raisin Muffins recipe
3 medium eggs.
1 cups of all-purpose flour.
1 cups of shredded carrots.
1 cup of powdered sugar.
cup of granulated sugar.
cup of raisins.
cup of milk, plus 2 tablespoons of milk.
cup of melted butter, plus 1 tablespoon of melted butter.
cup of cream cheese, softened.
2 teaspoons of cinnamon.
1 teaspoons of baking powder.
teaspoon of baking soda.
teaspoon of salt.
teaspoon of vanilla.
Instructions for Carrot and Raisin Muffins:
Preheat your oven to 400F (200C).
Combine the all-purpose flour, cinnamon, baking powder, baking soda and salt.
Beat together the eggs and the granulated sugar.
Add the shredded carrots, raisins, cup of milk, and cup of melted butter; mix thoroughly.
Add the flour mixture and stir until the dry ingredients have moistened.
Spoon the batter into twelve greased muffin cups.
Bake for 20 minutes.
Mix together cream cheese and 1 tablespoon of butter.

Cherry and Almond Low Fat Muffins
Method
1. Heat the oven on 200C . Brush oil on only the base of 14 muffin tins (normal size) or 8
large ones or line with paper cases.
2. Mix the flour, almond meal and baking powder in a bowl.
3. Add the cherries and sugar, mix well and make a well in the centre.
4. In another bowl mix the apple sauce, milk, eggs and oil.
5. Add the liquid ingredients to the dry ones all at once. Using a fork, stir and fold the
ingredients together only until it is all wet, it doesn't even matter if there are small areas
of flour about. Do not over mix it.
6. Spoon the mixture into muffin tins, and bake for approximately 20 -25 minutes for
normal size. They are ready when turning golden brown and a skewer comes out clean.
7. Place muffins on a wire rack to cool.
Chocolate Chip Muffins recipe
lb chocolate chips.
1/3 lb of soft butter.
4 medium eggs.
2 cups of flour.
1 cup of sugar.
cup of milk.
1 tablespoon of baking powder.
teaspoon of vanilla extract.
teaspoon of salt.
Instructions for Chocolate Chip Muffins:
Preheat your oven to 400F (200C) and butter your muffin pan.
Beat the butter and the vanilla extract together to form a light, airy mixture.
One at a time, add the eggs, and beat gently.
Add cup of the sugar after each egg and mix thorougly.
Put the baking powder and salt in the milk, then add to the mixture.
Fold in the flour and the chocolate chips.
Pour the mix into your buttered muffin pan, filling each cup two-thirds full.
Bake for 25 minutes or until muffins turn golden brown.
Chocolate Muffin recipe
2/3 cup of baking cocoa.
2 large eggs.
2 cups of flour.
1 cup of chocolate chips.
1/2 cup of sugar.
2 teaspoons of baking soda.
1 1/3 cups of milk.
1/3 cup of vegetable oil.
1 teaspoon of vanilla.
1/2 teaspoon of salt.
Instructions for Chocolate Muffin:
Preheat your oven to 400F.
Coat muffin tins with non-stick cooking spray.
In a large bowl, combine the cocoa, flour, sugar, baking soda, salt and vanilla.
Stir in half a cup of chocolate chips.
In a separate bowl, combine the eggs and milk.
Add the egg/milk mixtute to the other ingredients until moistened.
Scoop the batter evenly into the prepared pan.
Sprinkle with the remaining chocolate chips.
Bake for about twenty minutes or until a toothpick inserted in the middle comes out clean.
Cool on a wire rack before removing from the pan.
Christmas Muffins
Method
1. Soak the mixed fruit in brandy or sherry for at least 2 hours or overnight if you are so
inclined (like Mum).
2. Preheat the oven to 200C . Prepare 12 muffin tins by brushing the bases with oil or
lining with paper cases.
3. Sift the flour, baking powder, cinnamon and salt into a bowl and stir in the sugar, nuts and
cherries.
4. Mix the egg, butter and milk in another bowl. Stir in the fruit and brandy.
5. Pour the egg mixture into the flour mix and fold in with a fork. Do not over mix.. it has to
be JUST mixed.
6. Spoon the mixture into the tins. Bake for approximately 15-20 minutes. They are ready
when a skewer comes out clean.
7. Place muffins on a wire rack to cool.
Cinnamon Muffins recipe
2 medium eggs.
3 cups of flour.
1 cup of milk.
1 cup of sugar.
5 tablespoons of butter.
5 tablespoons of shortening.
3 teaspoons of baking powder.
1 teaspoon of salt.
1/2 teaspoon of nutmeg.
Topping:
1 cup of melted butter.
1 cup of sugar blended with 1 tablespoon of cinnamon.
Instructions for Cinnamon Muffins:
Method
1. Heat the oven on 200C . Brush oil on only the base of 12 - 16 muffin tins (normal size)

2. Sift the plain flour and baking powder into a bowl.
3. Add the dates, zest, and sugar, mix well and make a well in the centre.
4. In another bowl mix the juice, milk, eggs and oil.
5. Add the liquid ingredients to the dry ones all at once. Using a fork, stir and fold the
ingredients together only until it is all wet, it doesn't even matter if there are small areas
of flour about. Do not over mix it.
6. Spoon the mixture into muffin tins, and bake for approximately 20 -25 minutes for
normal size and around 10 mins longer for texas size. They are ready when turning
golden brown and a skewer comes out clean.
7. Place muffins on a wire rack to cool.
Hawaiian Muffins recipe
4 eggs, beaten.
4 cups of flour.
1 cups of crushed pineapple, drained.
1 cups of skim milk.
cup of sugar.
cup of melted butter.
2 tablespoons of baking powder.
1 teaspoon of salt.
Instructions for Hawaiian Muffins:
Sift together the dry ingredients.
Add the beaten eggs, milk and melted butter; then stir until smooth.
Add the crushed pineapple and mix thoroughly.
Spoon into greased three inch muffin pans, filling three quarters full.
Bake at 425F (220C) for 20 minutes or until done.
Healthy Muffins recipe
cup of low-fat milk.
1 cup of low-fat yoghurt.
3 x egg whites.
cup of apple sauce.
2 cups of wholemeal flour.
cup of folled oats.
cup of oat bran.
3 teaspoons of baking powder.
2 teaspoons of cinnamon.
cup of raisins.
cup of chopped apricots.
Instructions for Healthy Muffins:
1. Beat the egg whites lightly then add the milk, yoghurt & apple sauce.
2. Combine the flour, oats, bran, baking powder, cinnamon, raisins & apricots in a seperate bowl.
3. Add the dry mix to the wet mix until combined.
4. Spoon into muffin tins & bake at 350 F for about 20 mins or until cooked.
Mango and White Chocolate Low Fat Muffins
Method

1. Dalam satu bekas, satukan bahan2 diayak bersama gula halus dan 150 g chocolate chips,
gaul rata. Tuang bahan2 yang dikacau rata dan gaul hingg semua sebati dan mesra.
2. Sudukan bancuhan muffin tadi ke dalam muffin cup 3/4 penuh dan hias dgn taburan
coklat chips, buat hingga siap
3. Bakar dalam oven pada suhu 180Cm selama 18 - 20 minit. Sejukkan sebelum
dihidangkan. Sesuai untuk minum petang bersama keluarga...
4. muffin ni juga boleh ditukar kepada perisa pandan, blueberry, strawberry dll. masukkan
perisa tersebut dalam bahan yang disatukan dan kacau rata

1. Bahan A digaul sebati.
2. Masukkan bahan B dan gaul rata. Adunan sedikit cair, isikan ke dalam mangkuk kertas.
3. Bakar dalam oven bersuhu 200C selama 15 minit.
Muffin coklat
Bahan-bahan ( 10 biji )
Cara-cara

Antara bahan-bahan yang diperlukan

Cairkan coklat. Gunakan kaedah "double boiler" .

Kemudian masukkan mentega. Kacau sehingga mentega cair. Selepas tu bolehlah
panaskan oven sehingga suhu 170C.

Dalam mangkuk lain, masukkan telur dan gula. Kacau sampai sebati. Tak perlu
penaik(kembang).
5. Masukkan telur ke dalam mangkuk coklat. Kacau biar campuran sebati.

Ayakkan tepung dan baking powder ke dalam mangkuk coklat. Gaul sehingga sebati.

Isikan adunan ke dalam bekas muffin sehingga 1/2 penuh atau 60% penuh. Bakar selama
20 minit.
8. Selepas masak tu, mungkin muffin ni lembik sikit( sebab hanya sedikit tepung yg
digunakan) tapi bila dah sejuk dia akan keras dengan sendiri. Jadi kalau lepas 20 minit tu,
masih lembik tak payah bakar semula.

1. satukan tepung,serbuk koko,baking n soda dalam 1 mgkuk,kemudian ayak.
2. pukul butter n gula hingga kembang,masuk telur 1per 1....pukul lagi..masuk campuran
tepung tadi selang seli ngan susu hingga habis...gaul rata.
3. sudukan 1/2 dalam acuan,letak coklat ug dicincang,kemudian sudukan lagi 1/2 bancuhan
tadi. bakar 160...20 minit. hiaslah ngan butter icing..
Muffin gebu
1 cup butter
1 cup gula halus
1 1/2 cup tepung gandum (ayak)
3 biji telur (asingkan)
1 1/2 teaspoon bicarbonate of soda

kuning 1 per 1 & masukkan esen vanila
3. kemudian masukkan tepung yg telah diayak dgn bicarbonate soda dan kacau hingga
bersatu. KEmudian masukkan putih telur yang telah d pukul td. gaul hingga just combine
je (Kaup balik)... DO NOT OVER MIX

Kalau nak rasa coklat boleh masukkan serbuk koko & tabur badam kat atas. masukkan
dlm acuan muffin 3/4 penuh & bakar dlm oven 180 C selama 15 minit. WARNING>>>>

White Christmas Muffins
Method
1. Heat the oven on 200C . Line 12 muffin tins with paper cases or brush oil on the
bottoms.
2. Sift the flour, salt and baking powder into a bowl. Mix in the sugar, mixed fruit, choc
chips and cherries.
3. Melt the cooking chocolate and the butter together over boiling water or in the
microwave.
4. In another bowl mix the milk and eggs.
5. Add the liquid ingredients and butter mix to the dry ingredients all at once. Using a fork
fold the ingredients together only until it is all wet.
6. Spoon the mixture into muffin tins.
7. Bake for approximately 15 to 20 minutes. They are ready when a skewer or toothpick
comes out clean.
8. Place muffins on a wire rack to cool. Then dust lightly with icing sugar to decorate.
Strawberry Muffins

Mix the dry ingredients with the strawberries in one bowl.
In another mix the egg, milk, vanilla and butter.
Add the liquid ingredients to the dry ones and fold lightly with a fork. Do not over mix..
it just has to be wet mostly through, it doesn't even matter if there are small areas of flour
about. This is the main secret to good muffins.

6. Bake for approximately 15-20 minutes or until just starting to brown and a skewer or
toothpick comes out clean.
7. Place muffins on a wire rack to cool.
Strawberry Muffins recipe
4 medium eggs, beaten.
3 cups of all-purpose flour.
2 cups of fresh strawberries, rinsed, hulled and sliced.
2 cups of sugar.
teaspoon of salt.
Raisins (optional).
Instructions for Oatmeal Muffins:
Soak the oatmeal in the sour milk overnight.
The next day, preheat your oven to 425F (220C).
Add the remaining ingredients and beat thoroughly.

Oatmeal and Prune Muffins recipe
1 cup of all-purpose flour.
cup of sugar.
1 teaspoons of double-acting baking powder.
1 teaspoon of salt.
teaspoon of baking soda.
1 1/3 cups of quick-cooking rolled oats.
1 cup of pitted prunes, chopped.
1 cup of buttermilk.
cup of unsalted butter, melted and cooled.
cup of molasses.
1 large egg, beaten lightly.
Instructions for Oatmeal and Prune Muffins:
In a suitably sized bowl, sift together the flour, sugar, baking powder, salt and baking soda.
Stir in the oats and chopped prunes.
In another bowl, whisk together the buttermilk, unsalted butter, molasses and egg.
Add the buttermilk mixture to the flour mixture, stirring the batter until it is just combined.
Divide the batter among 12 buttered 1/3 cup muffin tins and bake the muffins in the middle of a
preheated 400F (205C) oven for 20-25 minutes or until golden and springy to the touch.
Turn the muffins out onto a rack and allow them to cool.
Nutty Mincemeat Muffins recipe
1 cups of all-purpose flour.
1/3 cup of sugar.
2 teaspoons of baking powder.
teaspoon of salt.
Cara-cara
1. Pisang dilenyek jangan sampai keluar air. Masukkan banana esen dan vanilla. Ketepikan.
2. Telor dan ovellete dipukul sehingga berbuih dan masukkan gula sedikit-sedikit sambil
dipukul sehingga habis. pukul lagi sehingga kembang dan gebu.
3. Masukkan tepung yang telah diayakkan dan soda bicarbonate sedikit sedikit hingga habis.

4. Masukkan pisang dan kacau sehingga sebati. Akhir sekali masukkan minyak.
5. Isi adunan sebanyak 3/4 dalam paper cup. bakar selama 25 minit.
Sugar Donut Muffins
Bahan-bahan ( 10 biji )
Cara-cara
1. Preheat oven to 350F. Lightly grease a muffin tin with cooking spray or vegetable oil.
2. In a large bowl, beat together sugar and egg until light in color.
3. In a small bowl, whisk together flour, baking powder, salt and nutmeg. Pour into egg
mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract.
4. Divide batter evenly into 10 muffin cups, filling each about 3/4 full.
5. Bake for 15-18 minutes, until a tester inserted into the center comes out clean.
6. While muffins are baking, melt butter and pour remaining sugar into a small bowl.
7. When muffins are done, lightly brush the top of each with some melted butter, remove
from the pan and roll in sugar. Cool on a wire rack.
8. Note : I x letak ground nutmeg but rasa nyer still umpphh~ Lembut...
Muffin pisang special
Bahan A: 280 grm tepung gandum 1 sudu kecil baking powder 1/2 sudu kecil sodium
bikarbonat (Bahan2 diayak)
Bahan B: 400 grm pisang (dilenyek) 150 grm gula (Ini kurang manis) secubit garam
(Dicampurkan sehingga rata)
BAHAN C: 200 grm minyak masak (Seri Murni) 3 bj telur ( dipukul dengan 1 sudu kecil
essen vanilla-ditapis) 50 grm susu (ideal milk) 50 grm air (Dicampurkan kesemua
sehingga sebati)
Cara-cara
1. Senang sahaja.Masukkan BAHAN C ke BAHAN B.Masukkan BAHAN A sedikit
sedikit.Kacau hingga sebati. Masukkan adunan ke dalam paper cup.Bakar 25 min dgn
suhu 180 darjah. Kalau makan panas muffin akan terlekat di paper cup. Sejukkan dulu
Maccha Mufin
120 gm butter
130 gm brown sugar
2 nos Egg (L size )..lightly beaten
To be sift
220 gm superfine flour
10 gm maccha powder
1tsp baking powder
1/2tsp baking soda
120cc soy milk
1.Beat butter till fluffy then add sugar.Beat again till light and creamy
2.Add beaten egg at small amount each pour
3.Add sifted ingredient alternately with soy milk
4.Mix till no flour texture can be seen
5.Bake in 170C for 20 mins
Chocolate Chips muffin
170 g mentega
170 g gula halus (castor sugar)
Panaskan oven pada suhu 175C. Putar mentega dengan gula hingga putih,
masukkan telur satu persatu sambil terus memutar hingga kembang dan gebu.

Masukkan esen vanilla dan putar. Perlahankan speed dan masukkan tepung
berselang seli dengan susu segar tadi hingga habis. Gaul rata.

Jika suka letak banyak choc. chips: sudukan adunan ke dalam mangkuk muffin
hingga 1/2 penuh. Masukkan choc chips, sudukan adunan untuk menutup choc chips
tersebut sehingga 3/4 penuh. kemudian taburkan choc chips lagi di atasnya. Bakar selama
15-20 minit (ikut keadaan oven masing2) hingga masak. (atau cuma tabur choc chips/ choc
rice) Keluarkan dari oven dan sejukkan atas jaringan hingga betul-betul sejuk
