Ingredients/ Steps for Pasta Sauce Napoletana:

1. Blanch 12 tomatoes
2. Boil the tomatoes till the skin starts to come of
3. Once the tomatoes are de skinned deseed them and strain the puree in a
pan.
4. In a separate pan add 3tbspns of olive oil
5. Cut one onion and one garlic clove finely and add to the olive oil
6. Once the onions turn translucent and the tomatoes along with 2tbspns of
tomato puree
7. And salt to taste
8. Keep stirring the ingredients till the tomato sauce is thick
9. Add basil a bunch of basil leaves and stir
10.Add the remaining tomato puree if remaining till the sauce is a bit thick.
Same sauce is used for the base of the pizza; it has to be put in the
mixer till it is ground like a paste.

Empty one packet of milk in a container


Add half an onion pierced with three cloves
Boil the milk
As the milk starts to boil add white pepper and salt
Keep stirring the milk till the mixture is thick.
In a pan add refined flour and butter.
Once the butter starts to melt add the milk.
The ratio of the mil, flour and butter is 10:10:100
Keep whisking the sauce till it becomes thick.

Parmesan cheese can be added and it becomes a white cheese sauce.


Ingredients/Steps to make pizza base:
1. 3/4th cup of lukewarm water
2. Add 1tspn of sugar
3. Add 1tspn of active yeast
4. Cover the cup in cling film and keep in a warm area
5. Once the yeast is activated there will be a layer of foam forming
6. In a big container add two cups of refined flower
7. Make a center in the shape of a well and add the water from the glass
8. Mix the flour and the water together.
9. Knead the dough till it is sticky
10.Add olive oil to the container and mix the dough that is remaining.
11.Cover the container with cling foil and let the dough puf up.
12.Once is dough has expanded remove the cling foil
13.Remove how much dough is needed to make the base
14.Roll the dough on a flat surface with a rolling pin
15.On the pizza tray add a bit of olive oil and spread it on the tray

16.Add the dough and shape it accordingly


Add your choice of sauce followed by toppings to make your choice of
pizza.

Pepperoni and Cheese


Bell Peppers, Mushrooms and Corn, Olives
Chicken, Peppers, Capsicum
(I have forgotten the other ingredients for toppings, sorry)
Add mozzarella and grate parmesan
Place in oven pre heated at 200C

In a container add water, oil and penne pasta.


Boil the pasta and add salt to taste.
In a separate pan add the Napoletana sauce (recipe already given)
Add chicken mince to the Napoletana sauce and saut till mice is ready.
Add pasta water if the sauce is dry

This dish can be served two ways:


1. The penne can be added to the Napoletana sauce along with the chicken
and stirred for a minute or two then added to the serving dish with
freshly grated parmesan and a basil leave for the garnish
Or
2. The penne can be placed on the serving dish first and then the
Napoletana sauce along with the chicken can be added with freshly
grated parmesan and a basil leave for garnish.
The vegetarian Napoletana is the same sans the chicken mince.

1. Saut chicken mince in butter, add thyme and salt to taste.
2. In a pasta dish add olive oil and spread it through the container
3. Add pasta sheet at the bottom.
4. Next layer add chicken mince
5. Add pasta sheet
6. Next layer add Napoletana Sauce/White Sauce

1. Saut mushroom, spinach and corn in butter, add salt to taste.
2. In a pasta dish add olive oil and spread it through the container
3. Add pasta sheet at the bottom.
4. Next layer add mushroom, spinach and corn
5. Add pasta sheet
6. Next layer add Napoletana Sauce/White Sauce
7. Add pasta sheet

Boil the Farfalle in a dish with water and oil, add salt to taste
Add white sauce to the mushroom, spinach and corn
Add pesto to the white sauce
Add the Farfalle to the mushroom, spinach and corn and saut.
Serve with a basil leave for garnish

Steps and Ingredients are same for Chicken Farfalle in Pesto White Sauce

Add water to a vessel and the spaghetti add oil and salt to taste
In a pan add prawns and squids and fry them in olive oil
Once the seafood is fried add the Napoletana sauce to it.
Add the spaghetti to the serving dish and add the seafood along with the
sauce to the dish
