Gearing Up For The Snow Season
Dinner Plain Celebrates 30 Years Of Stunning Alpine Architecture

As the first snowflakes
fall on the multi-leveled
pitched rooftops of
Dinner Plains iconic
houses this winter,
the residents will
be celebrating more
than just the start of
the ski season: this
architectural marvel
of alpine Australia is
turning 30 years old.
with an alpine landscape

rare in the Australian
environment were
key elements inspiring
visionary architect Peter
McIntyres early design for
the village.
When it comes to
architecture and vision,
there is nothing quite like
Dinner Plain anywhere
else in the country, says
Malcolm Macpherson, a
long-term resident who is
currently penning a book
on the history of Dinner
Plain.
Built of stone, timber and

corrugated iron and often
boasting magnificent stone
fireplaces, each blends
in beautifully with the
surrounding snow gums
and the high plains.
Mr Macpherson says the

uniqueness of the village
with its strict design
specifications that echo
the cattlemens heritage of
the High Country, paired
His idea was that the

buildings would blend in
with the landscape, Mr
Macpherson says.
McIntyres vision became

a reality in 1986 when
the iconic Dinner Plain
Hotel opened its doors
to the public. And the
rest is history. Today,
Dinner Plain has become
a family favourite for
winter escapes and also a
popular spot for hikers and
tourers along the Great

Alpine Road in summer,
and it remains the only
freehold land above the
snowline.
The history of the village
itself is relatively young,
but the area of Dinner
Plain has long been a
sanctuary. It was first
a resting place for the
indigenous peoples of the
region which traversed
the long line of the
mountaintops, stopping
to camp in the protected
nook of the Dinner Plain
area.
The site of Dinner Plain

village was originally part
of 640 acres selected by
Rundells of Flourbag Plain
and was then known as
Rundells Paddock, Mr
Macpherson says.
When the coaches were
running between Omeo
and Bright, they would
stop here for midday
dinner, hence the area
became known as Dinner
Plain.
These days, Dinner
Plain is a sanctuary of a
different sort, providing

a permanent home for
residents as well as a
mountain retreat for
travellers who come to
enjoy the beauty of the
alps in the comfort of the
village.

for families to stay
who want to enjoy the
snow experience, Mr
Macpherson says.

milestone, Dinner Plain
Later, it was a haven for

the High Country pioneers
who ran cattle through the
rugged landscape prior to
the formation of the Alpine
National Park.
And, significantly, it
was also a stop on the
cliffhanging coach ride

Australias Highest Brewery Opens In Dinner Plain

Melting snow and clear
unpolluted skies make the
waters of the high Victorian
Alps some of the purest
in Australia. And its this
unadulterated ingredient
water from snow melt
that has inspired Blizzard
Brewing Company founder
Mark Hubbard to produce
Australias newest brews,
carefully crafted by an
award-winning brewer.
When you go to a vineyard

you can taste the influences
of the environment on the
wine. Thats what Im mostly
excited about in our beer;
were brewing with the
freshest water available to

any brewer in Australia.
Nestled among the snow

gums at Dinner Plain, 1550
metres above sea level,
Blizzard Brewing Company
opened its doors at Easter,
with its brews served at
venues throughout Dinner
Plain, Hotham and Falls
Creek.
But its at the brewery
itself where visitors get the
ultimate beer experience,
with the opportunity to
witness live brews and
taste the locally sourced
ingredients separately,
including hops from

Myrtleford and lavender
from Harrietville.
We have a tasting deck

over the brew house where
you can actually look down
and see whats happening,
Hubbard says.
Bringing the ingredients
together is head brewer
Alan Sheppard, co-founder
of Barcelonas Edge
Brewing, which was voted
the Top New Brewer in the
World by Rate Beer in 2014.
Hes kicked off the menu
with six unique takes on a
pale ale, amber ale, larger,
IPA and kolsch. There is
even an aromatic lavender

larger on tap which
Hubbard affectionately calls
beer for my dear crafted
to sway his wifes non-beerdrinking taste buds. It has
worked.
The Brandy Creek Kolsch

will be very popular after
a big day out on the
slopes because its very
approachable and doesnt
have too much bitterness in
it, Hubbard says.
As for his favourite, its the

Avalanche Amber Ale.
For those who do like a

hoppy taste, the Powder
Pale Ale will be something
theyll go for.
Its so smooth and

delicious, he says, adding
it will be a popular choice
as the snow falls this winter.
But outstripping this winter
classic, Hubbard predicts
Blizzards German-style
kolsch will be the best
seller on the mountain this
season.

the ability to slide straight
off the run and into the
brewery that has Hubbard
most excited. Its a dream
hes carried with him since

moving to Australia from
Colorado, United States,
more than 20 years ago.
Growing up in Colorado,
I knew that in the Rocky
Mountains all good resorts
have breweries, says
Hubbard. Sometimes two
or three.
I love the alpine areas in
Victoria. This place needs
to have a brewery to match
the Rocky Mountains and
bring a new element to the
alpine visitor experience.

This super easy risotto is made with very few ingredients and is a nice change from the
traditional creamy risotto and it makes a tonne so you will have plenty leftover for lunches

1. Bring 6 cups of stock to the boil then reduce to a simmer.

Be very careful to stir often to ensure the rice does not catch on the base of the pot or
burn.

Preheat a heavy bottomed pot on a medium heat and add oil and chorizo. Sautee for
12 minutes or until edges begin to get a golden crispy colour.
4. Deglaze the pot with red wine then add the olives and tomato's.
5.
Once the tomato and rice mixture has thickened, begin adding the stock one cup at a
time. Allowing rice to thicken before adding the next cup*. Continue this method until
rice is cooked al dente.
6. Remove from heat and stir in remaining butter, 1/2 cup of parmesan cheese and salt
and pepper to taste.
7. Serve with remaining parmesan cheese and a glass of your favorite red wine.
* NOTE: Rice will take on different quantities of water and is dependent on factors
such as brand, humidity, cooking temperature etc. You may need more or less than
the amount of stock stated above. This is just an approximate quantity using the 3:1
method of 3 parts water to 1 part rice.

I launched Trista's Kitchen
in May last year. As a
working mum, I know how
hard it is to prepare healthy
meals and maintain that
lifestyle. It is too easy to go
into the supermarket and
grab something simple, but
that something simple is
full of hidden ingredients,
After 14 years of working

in the beauty industry, I
spent my last day as a
beauty therapist. After just
6 months of launching
the kitchen, with my
brothers by my side, we
built our own registered
commercial kitchen, with all
the qualifications required.
Renovations began as
we started transforming
an outdoor area into a
commercial kitchen with
council approval.
I started preparing meals

for my busy friends in my
spare time. Word got out
and social media was
launched, orders were
taken manually by email,
and the Koonwarra store
started ordering my gluten
free bread, which is still a
weekly delivery to this day.
From preparing 60 meals
a week for friends, it soon
got to 200. Many sleepless
nights, long days, working
2 jobs, raising a family and
maintaining a household, I
wondered how I got through
it all. 200 meals was huge.
I was so excited to keep
moving forward but I had
reached my limit.
My brother, Bronson,
offered his services to
help in the kitchen. I was
appreciative to have his
help. As we took more and
more orders, we soon hit
600 meals. Many more
sleepless nights and long
days while we got a new
routine into place. We were
learning every week of new
ways to multi task to be
more time efficient.
We purchased a delivery
van and now cover a wide
area from Leongatha to
Phillip Island, Traralgon,
Warragul, Mornington and
Melbourne.
We employed kitchen hands
and delivery drivers, and
we have a great range of
pick up points available for
customers to collect their
meals. We now prepare an
average of 1000 meals per
week.
Next, our goal is to help
out the local football clubs.
We can now wholesale
our fresh, healthy meals
and family size dishes to
cater for all the local clubs
that want to fuel their club
members with the correct
nutrition.
After intense training
sessions and the hard,
physical game days, it is

crucial that the players
receive the correct
nutritional values in their
meals to be able to perform
at their peak.
We are putting something
back into the flow of history
that's going to help the
community and help other
people, so that 50 years
from now, people will
know we didn't just have
a passion, but we cared
about making something
that people can benefit
from. Our goal is to inspire
you too to live the best
version of yourself, not only
physically but mentally as
well.

The Traralgon Marathon

is officially the oldest
marathon in Australia. The

The Traralgon Cancer
Council has started
another busy year hoping
to raise $1,000,000 for
Cancer Research, the
target they were aiming
to reach last year. The
Biggest Morning Tea is
being held again this year
at the RSL in Grey Street

youth theatre group
Class Act Productions
are presenting their
performance of "Annie".
This should be a fantastic

show and will be held
at Lowanna College,
Newborough.
Formed in 2001 Class
Act Productions is the
longest running dedicated
youth theatre company in
Gippsland. Class Act is
a non-profit organisation
which provides an
opportunity for youth to
participate in theatre.
The group was originally
formed by David and Jan
Pickburn, Mandie Black
and David Williams who
saw a need to foster
young Gippsland talent.
Class Act Productions
has since seen many
members go on to pusue
professional arts careers
in theatre, music and
dance and also act as

Lakes Entrance
The town jetties are producing tailor and

trevally on pilchard, local prawn and metal
lures. King george whiting, flathead,
leatherjacket and salmon have been landed
in the channel opposite Nyerimilang. Peeled
prawn, sandworm and silver lures picked up
fish. Bream have been taken off the jetties
in the North Arm.
Lake Tyers
Schools of bream are moving up Nowa

Nowa Arm, with anglers taking their share,
plus some trevally and flathead. Fresh
prawn and hard bodied lures resulted
in good catches. Tailor are still about
with some large ones being hooked on
sandworm and lures around No 2 jetty.
Mitchell River
Bream are biting from the barrier to the cut

using spider crab, local prawn and sand
worm. Estuary perch are still being taken
around both bridges in the evening on hard
bodied diving lures.
Tambo River
Bream are being caught from the power

lines to rough road using shrimp, fresh
prawn and sandworm.
Nicholson
Flathead and bream are active around the

cliffs and strait six. Soft plastics and peeled
prawn are best bait.
Metung
Bream and a few king george whiting have

been taken off the boardwalk on local
prawn and pippi. Bancroft Bay has trevally
and salmon.

Blonde Bay is good for bream and flathead

using sandworm and peeled prawn.
Marlo
Both rivers are fishing well with estuary

perch, mullet and flathead taking local
prawn, soft plastics and diving lures.
Salmon, tailor and flathead are biting at
Motts Beach on silver lures, soft plastics
and pilchard. The surf has tailor and
salmon.

Mallacoota
The narrows have bream, flathead and

the odd estuary perch feeding on yabbies,
fresh prawn and hard bodied lures. Both
lakes are good for bream, tailor and pinkies.
The Slipway has luderick taking weed. Tip
Beach is producing large salmon on metal
lures and blue bait.
Omeo High Country
The Gibbo River has trout being landed on

worm and dry fly.

Golden Beach A Hidden Gem
Dear Editor,
I find your paper extremely

interesting and informative
and enjoy finding out
about places nearby but
about which I know very
little.
To this end I would like to
suggest a little village on
the 90 Mile Beach that is
worthy of promotion and I
think your paper would be
a great way of achieving
this.
Golden Beach, less than
a 30 minute drive from

Sale, is a hidden gem. It
has had some unfortunate
publicity in the past due to
greedy developers, but it
is really quite charming.
Apart from an excellent

general store, friendly
takeaway, lovely
restaurant (Olivers) and
two Real Estate Agencies
there is a golf club, a hall,
church, CFA and Surf
Club. There is also a large
Summer camping ground.
I found this village by
accident and have to

admit to having a vested
interest there (I bought a
building block and plan to
build one day).
I certainly wouldnt have
invested in Golden Beach
if I didnt like it, so I think
other people would like to
know about it as well.
Im sure if you were
to do a story, the local
community would
be happy to place
advertisements in your
paper.

In the beginning, the Tanjil
Valley Art Show was an
opportunity for the local
community to organise and
showcase their talents as
artists and photographers,
whilst helping to utilise
the recently closed Hill
End Primary School as a
community hub. Our show
has gone from strength
to strength, and this year,
we celebrate our 10th
Anniversary with nearly
$5,000 of prizes, all donated
by local businesses and

The Show is held over the

Queens Birthday weekend
at Hill End Primary School,
Paynters Road, Hill End.
Our official opening and
presentations will be held

and 13th June. Admittance
is simply a gold coin entry

to Mirboo North in 1994,
I quickly got involved in
the local community. What
better way to meet people.
I am a committed and
passionate community
member, having assisted
in the formation of the
Mirboo North Country
Market of which I
continued to co-ordinate
for over 10 years. The
market continues to
attract both stallholders
and visitors from as far
away as Melbourne.
It provides a regular
stream of income from
which many community
events and facilities are
funded. Some of these
include the Business
Expo, Community Group
Listings, The Easy
Find Directory of Local
businesses, the annual
Santa in the Park Event
and the support for the
annual Arty Gras Parade
and street market.
My involvement with
the Grand Ridge Road
Committee several years
ago, has finally seen the
sealing of the road from
Warragul end to link up
transport. I am confident
that this will assist with the
increased services that
are being considered for
our Shire.
As President of MCDI
(Mirboo Country
Development Inc), we
instigated the Shop Local
campaign to supply
Shopping Bags to local
people and to work with
main street traders to
move from plastic to
recycled bags.
In the 22 years of
residence in the Shire,
I have held various
committee positions on
several community groups,
being heavily involved in
the organization of the
Australia Day festivities
as well as Arty Gras.
My assistance with
applications and receiving
grants in some of those
community groups has
made a difference to their
operations. I am an active
member of the local Op
Shop and a member of
the Mirboo North & District
Community Foundation.
I am one of two Vice
Presidents of the Mirboo
North RSL and have

area also struck a nerve
with me, so with the
assistance of the Mirboo
& District Historical
Society, have compiled a
complete list of those who
enlisted. This amazing
document now records
approx. 450 local lads
who had a connection to
Mirboo North and District,
of which some 80 did not
return. A full history of
these soldiers has also
been completed.
I worked with the RSL
to compile a full history
of their past committee
members and have
installed an Honour
Board of those committee
members in the RSL
Hall. I have catalogued
the memorabilia at
the Branch and also
instigated a project to
involve the whole town
whereby poppies were
either knitted, crotched
or made from felt, and
were displayed on the
magnificent tree at the
front of the RSL. The
amazing display involved
the whole community
from the Kinder, to
the Aged Care Facility,
many members of our

community contributed to
this amazing display.
My involvement with the
South Gippsland Shire
to work on a project to
build Business Resilience
in times of disaster,
has been an amazing
opportunity to both work
with the Shire and to
work with the Business
Community to assist with
succession planning if
an emergency arose. For
the Shire to be awarded
the Fire Awareness
Award for CommunityLed Prevention and
Preparedness showed
their commitment to the
Business Community. To
represent Mirboo North on
this panel will assist our
community to be prepared
for any disaster.
And now I cant wait to
contribute to the South
Gippsland Shire in the role
of Councillor (if elected)
and put all my experience
to full use throughout the
entire region.

A real hidden gem of
Gippsland is the beautiful
Hazelwood Pondage
in Morwell, which is
the cooling lake for
the nearby Hazelwood
Power Station. Located
approximately 160km
south east of Melbournes
CBD, on Yinnar Road, this
manmade lake boasts a
year round minimum water
temperature of around
22 degrees. Hazelwood
Pondage is the home of
the Latrobe Valley Yacht
Club, with various sailing
events held all year round.
It has several great boat
launching areas and is
ideal for water sports such
as boating, canoeing,
waterskiing, jet skiing,
or even just for a swim
in the middle of winter.
With numerous BBQ
areas, picnic tables, a
public toilet, play area,
& secluded little inlets
to commandeer for the
day, it is the perfect little
getaway for the family that
doesnt cost a fortune,
especially as entry is
FREE.
Fisheries Victoria has

just recently released
1600 Barramundi, of
varying sizes, into the
Pondage and is carrying
out monitoring of the stock
levels. As such, there is
NO FISHING allowed at
the Pondage (there is a
moratorium on fishing)
until their research is
completed. They are
allowing time for the fish to
grow and acclimatize, and
will be releasing reports in
due course.
Winter is my favourite
time of year to visit the
Pondage, especially on
a super cold day when
you can literally see the
steam lifting up off the
waters surface. The
bottom of the pondage

is largely mud and rock,
so its very comfortable
underfoot. I pack a picnic
lunch and escape with the
family for a day, swimming
or jet skiing, and relishing
the idea that we can
actually do this when the
weather is so cold and
the rest of my friends are
sitting at home in front of a
fireplace.
Its a hidden gem well
worth visiting as where
else can you take a
thermos full of cocoa
to whilst wearing your
bathers under your winter
clothes?? The experience
is unlike any other and
definitely one to tick off
your Bucket List.

Facts About Calcium And Grit For Birds PART 2

Calcium Grit Mix is the
perfect solution to this
dietary requirement.
The ingredients in
calcium grit mix consists of
crushed baked egg shells,
crushed limestone, shell
grit, cuttlefish bone and
charcoal are all soluble
grits.
Apart from the charcoal
these substances are
composed mainly of
different forms of calcium
carbonate (CaC03) which
contains about 40%
calcium.
They also contain
lesser quantities of
other minerals and trace
elements. For example;
egg shells are a good
source of magnesium
and what better source
of calcium and other
minerals could there be for
breeding birds (egg shell
formation) than egg shells.

Egg shells can be
fed if the grit mix is not
obtainable in a small bowl
that the birds will consume
as required. They need to
be baked in the oven to
rid them of any underlying
bacteria and then crushed
into small pieces prior to
being fed.
Birds have no teeth,
instead they have an
organ in their digestive
tract called a gizzard. This
is located between the
proventriculus (equivalent
to stomach) and the small
intestine.
It is a muscular organ
with a very tough lining.
Powerful contractions of
the gizzard grind food
into a fine pulp. This
increases the surface
area of ingested food so
the digestive juices and
enzymes can extract

nutrients from the food.
In the wild, some birds

eat small stones (grit) to
assist the action of the
gizzard in grinding food,
but not all things we
call grit can perform this
function.
Forms of grit: The
substances that bird
keepers commonly refer
to as grit can be broadly
classified into two types,
Soluble and Insoluble or
digestible and indigestible.
It is the chemical
composition and
hardness of the grit
determines whether it is
soluble or insoluble and
consequently the function
it performs when eaten by
the bird.
Calcium grit mix
is a soluble grit, its
components are relatively
soft and are able to be
physically ground into
smaller pieces by the
action of the birds gizzard.
They are then subject
to chemical breakdown
by digestive juices which
contain hydrochloric acid.
Solid grits are therefore
readily digested.
Calcium grit mix supply
birds with calcium, along

with many other dietary
elements but does not help
much in the grinding of
food within a birds gizzard.
While hard grit is not an

absolute necessity for
seed eating birds, it is
believed to be beneficial in
small amounts.

Insoluble grits are hard

and chemically stable.
They are not subject to
rapid physical or chemical
breakdown within a birds

Seed eating birds that

any access to hard grit.
For healthy birds as

stated earlier it is best to
feed grits in a small bowl
separate from other foods
and not spread on the
aviary floor where it can be
fouled with droppings.
Soft food eaters such as

Lorikeets and carnivores
like Magpies do not eat
hard grit, nor do they need
hard grit.
Preferably soluble and

insoluble grits should
not be mixed togehter
as when fed separately
birds can regulate their
intake of each to suit their
requirements.
Hard grit aids digestion

by helping grind seed and
other foods in a birds
gizzard. It is therefore
sometimes referred to as
digestive grit.
Beach sand, river sand,
concrete sand, crushed
quartz, crushed brick and
crushed granite are all
insoluble grit.
Feeding grit and calcium

to birds: Do not feed grit
to a sick bird, especially
hard grit. Sick birds may
consume too much and

1923, 11:50pm
I drag my dark red suit

case behind me as I make
my way to the train station
arch. I stand in line, well
the line that is barely there
as there are only three
other people.
*Oh, Im sorry I didnt
introduce myself, my
name is Matilda Grace
and this is the year of
1923.
I finally get to the front of
line. I lay down my suit
case to sand on it, I peer
over the counter with a
tinkle in my eye.
May I have a ticket for
the midnight train? I ask
politely.
I guess so, here you go
groaned the ticket master.
11:55pm
I pull my suit case over to
the bench. I lean back into

the seat, waiting patiently
for the train. A really pretty
lady is sitting next to me,
she is wearing a red coat,
black leggings and a
beret. The lady is reading
a book, I cant see any
pictures only very small
words. I leant over her
shoulder to see the page,
the lady looks up at me
and just smiles.

The train pulls up to the

opens the carriage door
and tips his hat to me.

great. I squeaked.
Well lucky I brought a
deck of cards with me, my
favorite game to play is
patience. Im really good

at it.

So after about 50 games

of patience, the engine
is fixed and we are on
our way. It is only about
25-35 minutes until we get
there.

We have arrived and I
cant wait to see Grandma.
I jump out of the train with
so much excitement.

with a huge wave.

sick about you, what
happened? Grandma
asked as she gave me a

to Grandmas kisses,
because she wears red

Howdy Folks!
What a wonderful May day we are enjoying. The weather is beautiful this morning.
We had a curly one this morning and thought you might like to hear about it. John
came in with an apple from his orchard; part of the apple was shiny, swollen and
spongy. Part was sunken in, as though it had sucked in it's cheeks. When opened,
the core was brown. In between the skin and flesh it was all corky and dry, which
points to a boron deficiency. Back to the books. The amount of boron one should
use gave us a tad of concern. To quote one of the many articles we read: The
suggested rates must not be exceeded. Too much boron is harmful. Back to the
drawing board.....John went home and got soil samples from two of the affected
trees. Both lots were highly alkaline, from 9.2 10 on the PH scale! It seems that
when it reads that high, several elements aren't easily available to the plant, including nitrogen, copper, and (ta-da!) boron. We also found that fluctuations in the soil
moisture can influence this problem. After a bit more reading and chatting, John
had decided to be Mr. Guinea Pig since he has almost a year to fix it naturally. He
is going to be more consistent with his watering, add lots of finely chopped horse
and cow manure mixed with straw as a mulch, with the addition of seaweed and
rock dust. Fingers crossed the PH level will come down, nutrients will unlock and
the orchard will be a happy place! Watch this space! Oh, we also thought of adding
sulphur, but decided it was cheating. Anyway, not only will a boron deficiency affect
John's apples but also a wide range of plants including many vegetables. Consult
your local nurseryman .. Well on that happy note, I'm off to plant some snow peas
and poppies!
