Responsible for managing the quality of the non-protein product items by providing instruction to 3 lab technicians
on existing and new lab tests based on AOAC Test Methods. Analyzed lab data and coordinated with vendors to meet
the companys food safety and quality requirements. Coordinated with CKE Supply Chain during annual bids by
providing them technical assistance and working with prospective vendors in matching CKE existing products.

Performed comparative analysis on different tomato and oil based sauces and worked with the Product

Responsible for managing the production and R&D departments by providing effective leadership and technical
assistance to 20 line operators and four laboratory technicians and trainees. Provided training to line operators on the
importance of hygiene, quality improvement and production efficiency. Coordinated with senior managers and the
sales department to develop and commercialize new products based upon market studies and customers needs.
Handled customers complaints (re: product defects) by tracking product processing and by continuously improving

Designed and implemented a water recovery system to filter, collect and reuse heat-exchanger condensate,
resulting in reduction in fuel and soft water consumption by 10% and production cost by 5%, while maintaining a
continuous feed of hot soft water in the boiler.
Researched and performed comparative analysis on different formulations of marketed pizza sauces and formulated
different recipes, spice combinations and flavorings to provide a tomato-based sauce, resulting in improved
customers satisfaction and increased market share with the product.
Developed a new recipe for tomato ketchup by using different product formulations of tomato paste
combinations that yielded viscous tomato ketchup, meeting customers needs and expectations.
Designed and implemented a new strategy for summer intern training of undergraduate food science majors that
taught the basic principles of food processing and product development, resulting in enhanced company reputation
and public awareness in both the public and the academic sectors.
Performed scientific and internet research on food specifications and regulations assigned by the Lebanese Standards

Formulated new recipes and processing schemes for the production of mayonnaise and dressings by successful
operation of a milling machine (FrymaKoruma) which functions under vacuum to generate an oil-in-water
emulsion, resulting in new product launches.
Created, developed and manufactured the first prepared yellow mustard which met and surpassed the quality of
imported mustards in the Lebanese market, resulting in increased customers satisfaction and market share.
Created different grades of tomato ketchups by reformulating recipes to meet the high quality and costing target
of companies tomato ketchups, resulting in the delivery of a value-added product at a competitive price with high

Responsible for monitoring the production line and reporting results and problems to production manager. Assisted
production manager in production evaluation and improvement and the processing of new sauces. Performed physical and
chemical tests on raw materials and processed food items. Tests included: net contents, vacuum, % total acidity, pH
measurement, Brix, % salt, sauces consistency (using the Bostwick viscometer) and water testing (TDS and total hardness).

Researched and instituted chemical and physical analysis of different marketed tomato ketchups and developed
new formulations for product using different spice combinations, resulting in 10% increase in market share.
