Penelitian bertujuan untuk mengevaluasi aktivitas antioksidasi ekstrak hidrofilik bekatul dari

beberapa varietas padi di Jawa Tengah yaitu IR-64, Sintanur, Rajalele dan Menthikwangi.
Bekatul dari masing-masing sampel sebelumnya dianalisa proksimat dan kadar serat pangannya.
Ekstrak hidrofilik diperoleh dengan cara mengekstrak masing-masing sampel bekatul dengan
pelarut methanol. Ekstrak diuji kandungan total fenol dan aktivitas antioksidasinya dengan
metode DPPH. Hasil penelitian menunjukkan bahwa keempat sampel memiliki kadar air, kadar
abu dan kadar protein yang hampir sama. Kadar lemak bervariasi dari 15,19 % - 21,73%, dengan
kadar tertinggi dimiliki bekatul varietas Sintanur dan terendah bekatul varietas IR-64. Kadar
serat larut (soluble fiber, SF) bekatul dari keempat varietas padi tidak berbeda yaitu antara 4,314,55 %wb namun terdapat perbedaan pada kandungan serat tak larut (insoluble fiber, IF) yang
berpengaruh pada kadar serat total. Sintanur memiliki kadar serat total tertinggi. Kandungan total
fenol dan aktivitas antioksidan tertinggi dimiliki oleh ekstrak hidrofilik dari verietas
Menthikwangi.
The study aimed to evaluate the antioxidative activity of the hydrophilic extract of
some varieties of rice bran in Central Java, IR - 64 , Sintanur , RAJALELE and
Menthikwangi . Bran from each sample was previously analyzed proximate and fiber
content of its food . Hydrophilic extract obtained by extracting each sample bran
with solvent methanol . Total phenolic content of the extract tested and
antioksidasinya activity by DPPH method . The results showed that all four samples
had moisture content , ash content and protein levels were almost the same . Fat
content varies from 15.19 % - 21.73 % , with the highest levels of bran varieties
possessed the lowest Sintanur and bran varieties IR - 64 . Levels of soluble fiber
(soluble fiber , SF ) of four varieties of rice bran did not differ between 4.31 to 4.55
% ie wb but there is a difference in the content of insoluble fiber (insoluble fiber ,
IF ) the effect on the total fiber content . Sintanur has the highest total fiber content
. The content of total phenols and the highest antioxidant activity of the hydrophilic
extract is owned by verietas Menthikwangi .
