Somebody on CAL wanted this earlier post of weight loss..here it is...

Nitti Sanjeev diet from CAL


I lost 8 Kgs in a month, my skin was soft and pimple free, hair was shiny, nails turned into killweapon (THAT strong) AAAAAAND the most important part.. I havent gained back any weight
till date even after I got back to regular food!! In fact Ive been losing 1-2 Kgs every month since then
by just having salads few days a week and walking when possible
Its called the RAW VEGAN DIET and from what I see now its kinda becoming the next big thing
There are many raw vegan recipes in these websites...its really worth a

I added boiled pulses to this diet inorder to get more protein...
This is what my daily plan looked like:
Breakfast GREEN JUICE
Mid Day Snacks - NUTS, SEEDS, FRUITS
Lunch SALAD
Mid Evening Snacks FRUITS
Dinner SALAD WITH BOILED PULSES
Water PLENTY AND MORE
Apple Cider Vinegar ONCE A DAY (2 teaspoon organic ACV diluted in a glass of water 15 mins
before any one meal)
Exercise HOUR WALKING (anything over and above this will accelerate the weight loss like
crazy!)
Sunlight - 10-15 minutes of direct sunlight everyday preferably between 9-12 noon (for the vitamin D
requirement of the body)
Ingredients:
GREEN JUICE : Half bunch Spinach, Half bunch Coriander Leaf (with part of the stem), Handful
mint leaf, 1 full cucumber, 1 full tomato, Juice from 1 big lemon, inch piece ginger, 2 cloves garlic
Blend everything in the blender instead of putting it into a juicer, because it will lose all its fiber in a
juicer or if it is strained.
It would be 1-2 glasses in quantity and look like a thick smoothie... Don't add water to it and do have
the complete juice.
Nuts : Regular mixed nuts Walnut, Almond, Cashew, Peanut, Pista, etc.- salted ones are fine too 2 handfuls of mixed nuts a day
Seeds : Mix of Chia seeds, Flax seeds, Sesame seeds and Pumpkin seeds I read Hemp seeds,

Sunflower seeds are good as well - 2 Tablespoons of mixed seeds a day...


Fruits : Absolutely any fruit your heart desires! All fruits are perfect, including high carb ones like
banana, mango, etc.
Salad (prepared for few days): 2-3 medium carrots, 2 medium beetroots, small red cabbage, 2-3
celery sticks, red green and yellow capsicum(1 each), olives... (You can also try other raw vegan
salads with dressings... this is the recipe I had during detox...)
Boiled Pulses : White or black chana, kidney beans, black eyed peas, etc. I chose only one pulse for
a day and pressure cook cup in turmeric powder and a pinch of salt. You could also garnish it with
onion, tomato and spices like pepper, cumin, etc. or fresh grated coconut.
ORGANIC IS SAFE!
The only problem with this diet is that its best to go ALL ORGANIC which could be a little expensive.
Also consuming raw commercially grown veggies containing pesticides is not good in the long run at
all!
Now, if you cant go all organic, just wash your ingredients in a pot of water with 4 tablespoons of
regular white vinegar and 1 tablespoon of baking soda. (Simply soak the ingredients in the solution
for 2-3 minutes before cleaning it well and rinsing it under a running tap)
TIPS IF YOUR WORKING:
You could wash the leaves and other ingredients the night before and seal it in an air tight container
to be stored in the fridge. Just juice it the next day morning.
Salad is made for a week so the portion size you want can be taken to the office in a container
everyday. Same with nuts, seeds and fruits.
If you have time to read, below are some useful info I learned over the last year:
1. THE MORE YOU EAT THE MORE YOU LOSE WEIGHT Since this is a high fiber diet, you dont
need to skip a meal to reduce weight. Infact the more you eat the more you will lose weight. So its
perfect for anyone who wants to lose weight but eat more!! Keep munching on fruits and chopped
veggies at any point you get hungry during the day...
2. THIS DIET IS NOT A TEST OF WILL POWER Let me explain All our bodies are Acidic right
now after consuming processed food and meat. So when we are hungry the brain automatically
reaches out for food that will keep it acidic. This is a natural process.
One week into the raw vegan diet, the body changes to Alkaline state because of the detox. After
which when we are hungry, the brain starts reaching out for green food and fruits. This is again a
natural process, so dont be surprised! You could google Acidic & Alkaline body for more info
3. SURVIVING THE FIRST WEEK - What I did to survive the first week of the diet was buy my
favorite chips and whenever my brain reached out for food that my acidic body loved I would have 12 pieces at a time. I would encourage you to do this with any of your fav food (even non veg),
because it is not always easy to fight the brain. Bring down the quantity of your fav food as the days
go by and you'll be able to completely stop it and strictly follow the diet in a weeks time.
If you feel bold and want to go all vegan at once, do this if at some point you might want to give up
and stop the diet completely.
4. SUGAR, CHOLESTROL, BP, THYROID, PCOD - Please don't be surprised when suddenly its all

coming back to normal. This detox will help to bring the above back to perfect levels. So it's goodbye
to all medications in your life!
5. FOR ANY AGE GROUP - The diet is safe for guys and girls whether your 8 years or 80 years
I guess Ive covered all the points If you have any doubts please do go through the most asked
questions below... I hope it is helpful too because I have covered almost everything...

ACTUALLY doing right now is building a whole new generation of super humans who would be salsa
dancing and bungee jumping at the age of 75+!!
There are few questions that were asked my many and I would like to address it for everyone...
Questions on the Raw Vegan Diet:
PS: Im not a dietitianIm just another regular person like anyone of you Iv tried to answer the
questions in the best way possible based on my experience over the last year, but I would encourage
everyone to google and research further when your doing the diet
PS: Again, please dont mind the length of this post
1. CAN I HAVE DAIRY PRODUCTS LIKE MILK, CURD, ETC.? HOW DO I GET MY DAILY CALCIUM
NEEDS? WHAT ABOUT ALL OTHER VITAMINS OUR BODY NEEDS? IS THIS DIET SAFE?
Since vegan is a complete plant based diet its best to avoid dairy altogether during the entire detox
period like milk, curd, paneer, butter, cheese, etc... Once your done with the detox you can go back
to consuming dairy as usual.
But till then all your calcium needs will easily be met with the green leaves/veggies and what I call
The Calcium Super Food CHIA SEED. Chia is an EXCELLENT source of calcium and
magnesium If you have kids who are lactose intolerant this seed is the best source of calcium for
them too.
Infact Vegan diet gives a balanced supply of all the vitamins and mineral our body needs. So its a
very safe and healthy way to get back inshape unlike crash diets.
VERY IMPORTANT POINT Please try and get atleast 10-15 minutes of direct sunlight everyday
(preferably between 9-12 noon) for your vitamin D requirement which will also help your body to
properly absorb calcium and all the nutrition from the food.
2. CAN I DO THIS DIET WHILE BREASTFEEDING? WILL MY MILK FLOW REDUCE?
I found this diet after I had stopped breastfeeding so I dont have direct experience. But Im sure that
the nutrition you will pass to the baby through the milk while on the diet will be extremely beneficial.
Do get ORGANIC SEEDS , NUTS AND PULSES for your diet Also do have organic dates
everyday.the leaves/fruits/veggies can be washed in the vinegar and baking soda solution even if
they are not organic
For all breast feeding moms I would suggest you take the diet one step at a time You can start off
the first week with the green juice in the morning and by snacking on seeds, nuts and fruits during

the day with regular food for lunch and dinner. After a week you can then introduce salad and pulses
(1 cup of pulse since your nursing) for dinner and then gradually move to the diet at a comfortable
pace. Keep a check on the milk flow during the whole time If you feel that you are not comfortable
with raw vegan diet while breastfeeding then wait it out till you stop breastfeeding.
But please do not stop breastfeeding inorder to start the diet. Breast milk is the most important thing
any mom can give her baby apart from her love.
3. CAN I HAVE TEA OR COFFEE WHILE ON DIET?
Its best not to have tea or coffee during the detox period. I would highly recommend Green Tea with
Honey and Lemon once or twice a day because its very effective in weight loss.
4. IM ON SUGAR/BP/CHOLESTROL/THYROID/PCOD MEDICATION. CAN I DO THE DIET?
Yes, this detox diet will help you reduce each of the above ailments and get you back to good health.
I would suggest taking it step by step because there is medication involved You can start off the
first week with the green juice in the morning and by snacking on seeds, nuts and fruits during the
day along with apple cider vinegar and regular food for lunch and dinner. After a week you can then
introduce salad and pulses for dinner and then move to the diet completely at a comfortable pace.
However, please please do check with the doctor after a week or two into the diet if the
medicine/dosage needs to be reduced based on the test results. For example, its not safe to still
continue taking a high dose sugar medication once the sugar level starts dropping down to normal.
Nor is glucophage required by a PCOD girl once her periods are back to normal.
5. HOW LONG DO I NEED TO DETOX FOR? WHAT DO I DO AFTER THE DETOX TO MAINTAIN
MYSELF? HOW DID YOU MANAGE TO LOSE 1-2 KGS EACH MONTH AFTER GETTING BACK TO
REGULAR FOOD?
I would suggest a minimum of one month for the diet to show its effects. But its completely upto you
on how long you would like to continue it you could continue it for 2-3 months if there is any
occasion coming up, you could do it till u reach your ideal weight or even decide to do it for life.
If you choose to get back to regular food, what I had done was mix the diet with my regular food. I
would have the morning green juice or salad atleast 3-4 times a week along with regular food and
went for walks whenever possible.
One of the biggest thing that helps you to lose weight in a steady pace is that the portion size will
reduce most of the time the problem we face is because of the portion size we consume in one
go.. this diet is about eating a healthy portion through the day
6. I LOVE TO GYM. CAN I DO THIS DIET WHILE I STILL CONTINUE TO GYM? / YOU
MENTIONED HOUR WALK EVERYDAY CAN I DO ANY OTHER FORM OF EXERCISE?
Yes you can. I havent researched a lot about VEGAN BODY BUILDERS.. but yes they do exist and
yes these girls/guys do look hot! I would suggest researching into it. My only input would be to
increase the quantity of cooked pulses because they are a great source of protein. This is a site

I have mentioned hour walk because walking is one of the best exercise next to yoga and some
minimal form of exercise is good during detox But u can do any other forms of exercise too and it
will help greatly.

7. WILL I EXPERIENCE TIREDNESS AND FATIGUE AFTER STARTING THE DIET? THERE ARE
NO CARBS LIKE RICE AND BREAD DURING THE DETOX PERIOD.
Few could experience body pain in the first 1-2 days of the diet because the detox will start flushing
toxins out of the blood and help improve blood circulation. If you still feel tired increase the quantity of
nuts and also consume dates everyday. There is no consumption of breads/rotis, rice and pasta
during detox. You can receive your carbs from bananas, beans and lentils... But trust me, after a
point youll have no idea what to do with the sudden increase in energy level youll experience so
please be ready to handle yourself! smile emoticon
8. THE GREEN JUICE IS DIFFICULT TO DRINK BECAUSE OF ITS TASTE. CAN I IMPROVE IT?
Hahahaha! I know exaaaactly what you mean. I remember sitting and staring at my very first glass of
green juice wondering what to do with it! But don't worry, it will be a little difficult at first and as the
days go by it will become a lot easier to drink. Adding any fruit like apple, grapes, kiwi, blueberries or
others will help make it a little sweeter and better. The juice once blend will look like a thick
smoothie... You can add or remove any green leaf of your choice to this if youd like to. But make
sure you have coriander leaf along with cucumber, tomato, ginger, garlic and lemon juice in every
juice because its super amazing for a total detox!
9. CAN I ADD SALT TO THE JUICE OR SALAD?
Its best to keep salt at the minimum during the detox period You could add a pinch of salt in the
salad but I wouldnt recommend salt in the morning juice. What I did was have salted nuts to balance
my salt needs for the day.
However, if you have low BP please do go ahead and add salt as needed in the juice and salads too.
10. DO I NEED TO FOLLOW THE SAME DIET PLAN EVERYDAY?
No, the plan iv posted above is just a guideline to get you started. You can find many more recipes
online if you google RAW VEGAN RECEPIES for salads and juices. As long as it is raw and of
healthy ingredients it can definitely be incorporated to the diet.

picture about the raw vegan diet.
11. HOW MUCH NUTS, SEEDS AND FRUITS CAN I CONSUME IN A DAY? HOW SHOULD I EAT
THE SEEDS? CAN I EAT SEEDS APART FROM THE ONES MENTIONED IN THE PLAN?
You can have two handful of mixed nuts and about 2 table spoons of mixed seeds a day. Fruits are
practically unlimited unless you have a high sugar problem. Even high carb fruits like banana,
mangos, etc. are good to have.
There is a lot of information on the net about how healthy seeds are for us. So go ahead and add
any seed you would like to into the seeds mix. I ate the mixed seeds as it is but Ive read that you
could also add it into juices as well.
Its best to eat the seeds raw without any roasting or heating because the nutrition level will reduce to
a great extent once the seeds are cooked. I used to eat it as it is just like eating nuts.
12. WHAT DO I NEED TO STAY AWAY FROM DURING DETOX?
Please please please stay away from alcohol, cigarettes, fast food, aerated drinks/soft drinks (even

the zero cal ones) during the detox period and as much as possible after the detox too. During detox
the body will flush out toxins from the body and will start absorbing all the nutrition from your food
and having any of the above will suddenly effect the body in a highly negative way.
13. IM A CHOCOLATE ADDICT. HOW DO I DO THIS WITHOUT CHOCOLATE EVERYDAY?
There is extremely good news for every chocoholics out there! Raw cocoa powder is an extremely
healthy ingredient for our body. Its only when its processed with sugar to make the commercial
chocolates that it becomes unhealthy.
There are many HEAVENLY RAW VEGAN CHOCOLATE TRUFFLE recipes on the net with
ingredients like cocoa powder, dates, nuts, rasins, coconut powder, a dash of orange juice, cinnamon
powder, etc. Its insane! And you can eat it with zero guilt!!
I guess I was able to cover most of the points. So this is once again, Cheeeeeers to a younger,
sexier and healthier you!!!

Eggless Vanilla Sponge Cake!

Ingredients
All purpose flour- 1.25 cups
Sugar- 3/4 cup
Baking powder- 1.25tsp
Baking soda- 1/2 tsp
Salt- a pinch or 1/4 tsp
Curd- 1cup beaten curd
Cooking oil- 1/2 cup
Vanilla extract- 2tsp
MethodIn a big bowl, mix powdered sugar with the curd.

Add BP and BS and stir lightly.


Keep aside for 5 minutes till it gets frothy.
Add oil to it and mix gently.
Slowly add(don't dump in at once) in sieved flour( while sieving maida add salt to it). Mix gently.
Preheat oven at 350 F. Place parchment paper, grease your cake tin.
0pour batter., and bake for 15-20 minutes. Cover it with foil, this will prevent from cracks, also you get
flat top cake.
Bake further for 20-25 mins.
Keep looking for brown spots on the cake and check with toothpick if it comes out clean means your
cake is done.
Take it out. Don't unmold right away. Let it cool for 10 minutes and then unmold your cake. That's the
way I do and I get perfect cake every time I bake.

Mango cake
Ingredients
all purpose flour-1/2 cup
wheat flour-3/4 cup
oil-1/4 cup
sweetened condensed milk-1/2 cup(* minus 1 tbsp)
milk-1/4 cup( *minus 1 tbsp)
orange juice-1 tbsp
chopped walnuts-1/2 cup(optional)
fresh mango puree-3/4 cup

baking powder-1 tsp


baking soda-1/2 tsp
cardamom powder-1/2 tsp or 1 tsp can use*
vanilla essence- 1 tsp (optional)
cinnamon powder-1/2 tsp(optional)
chocolate chips-2 tbsp
- HOW TO BAKE
1.preheat the oven to 180 degree C.apply butter to tin and dust with all purpose flour all sides.
2.mix oil,cardamom powder,condensed milk,milk,orange juice and vanilla in a large bowl.
3.add in flours,soda,baking powder,walnuts(optional) and mango puree.mix all together...with this,cake batter is
ready..
4.pour batter into tin..arrange chocolate chips on top nicely and bake for 30-35 minutes.or til turns to light golden
color on top.
5.insert a toothpick if it comes out cleanly off oven.remove cake and let it cool for 15 minutes on wire rack
before serving.........

Recipe : For the marble cake you basically need to make two mixtures,chocolate cake mixture and plain vanilla cake
mixture .For chocolate cake I took 2 tablespoon of all purpose flour, 1 tablespoon of unsweetened cocoa powder ,2
tablespoon of sugar, a pinch of salt, half a teaspoon of baking powder ,3 to 4 tablespoon of milk ,4 to 5 tablespoon of
heavy cream,1 tablespoon of oil.For the vanilla cake mixture you need 3 tablespoon of all purpose flour ,3 tablespoon
of sugar ,a pinch of salt, half a teaspoon of baking powder ,vanilla extract 3 drops, milk 3 to 4 tablespoon ,heavy
cream 4 to 5 tablespoon ,oil 1 tablespoon .
Now, for the chocolate mixture first mix the dry ingredients, then slowly add the wet ingredients to it,mix well ,there
shouldn't be any lumps.
Do the same with the vanilla cake mixture .Both the mixture should be semi solid ,not too runny.
Now in a small bowl(I used a ramekin ) put 1 teaspoon of chocolate mixture and then again 1 teaspoon of vanilla
mixture alternately until the bowl is a little more than half filled .With a toothpick or a stick make the marble design on
the mixture .(you can get detailed demo from youtube ).Now put it in the microwave for 1.30 minutes cake is ready
.P.S: 1.The baking time may vary from microwave to microwave 2.The mixture can make 3 to 4 little cakes ,if made in
a ramekin .

Banana bread -Ingredients:
All purpose flour 1/2 cup
Whole wheat flour 1/2 cup
Quick Cooking Oats 1/2 cup
Baking soda 1 tsp
Salt 1/2 tsp
Sugar 1 cup
Yogurt or Curd 1/4 cup
Milk 1/4 cup
Melted butter 2 tbsp
Bananas 2 medium size
Vanilla essence 1/2 tsp
Chocolate chips
Walnuts
Instructions:
Preheat the oven at 180 C / 350 F.
Powder quick cooking oats in a mixie jar. It should be fine in texture. Seive it and keep it aside
In a big bowl, mix together all purpose flour, whole wheat flour, powdered oats, salt, baking soda and sugar. Transfer
to a plate.
In the same bowl, add bananas and mash well using a masher.
Add melted butter, vanilla essence, yogurt/curd and mix well.
Add the flour mixture in 2 batches stirring gently using a spatula.
Add walnuts, chocolate chips and mix gently. Do not over mix else the bread will become dense.
Line a loaf tin with parchment or butter paper or grease them well.
Transfer the batter in it.
Place the tin in the preheated oven and bake for 35-40 mins or till a skewer inserted comes out clean.
Eggless banana bread is ready.

Mango semolina cake

Ingredients

1 cup of Semolina/Rava /I used the fine variety

1 cup Mango pulp /I used ready made Mango pulp for this/ even fresh mango
pulp should be fine

1/4 cup olive oil/canola oil

1/2 cup Sugar

1 teaspoon Baking powder

tsp ground cardamom/elaichi

cup chopped pistachios , raisins/optional

Pre-heat the oven to 375 degrees.


Mix the Semolina(Rava) with sugar, cardamom, nuts(optional) and baking
powder.
Next add oil and mix well.

Finally add the mango pulp and mix again. Let it sit for 10 minutes.
Place in the oven and bake for 30-35 minutes. keep a close watch after 20
minutes.
If the knife comes out clean then remove immediately. If it is kept for a longer
time, the cake will become hard especially on the top.
Garnish it with your favorite dry fruit. I used pistachios.
Allow to cool completely and then cut and serve.

For making it in the microwave oven This is how Payal Aggarwal made it

She baked it on microwave plus convection mode for 6 min followed by baking
on convection only mode for 8-9 min..
The convection mode gave d requisite texture to semolina cake.
