All 4 powerpoints under the grill
and deep fryer are turned off
Exhaust fan is turned off
2 powerpoints on the wall next to
single sink are turned off
Water tap (single sink) is off and is
not leaking water.
Dishwasher is drained and turned
off
Water tap (double sink is off) and
is not leaking water
2 powerpoints above sandwich
prep bench are turned off
2 powerpoints behind the
microwave are off
The powerpoint behind moffat
oven is off
Both fridges/freezers are on (if the
temp displays are lit up, theyre
on)
All checked

BEFORE LEAVING CAF CHECK:


FOH/COFFEE
Coffee machine is clean
(portafilters, steam wands).
Coffee machine is ON.
Mazzer grinder is clean (no
residue in the chamber). The
grinder is off.
EK grinder is clean (no residue
inside). The grinder is off.
Till is OFF, OPEN all the way and
EMPTY.
Tip jar is put away (any drawer
underneath the till).
Kettle is unplugged from the
powepoint.
Milk fridge is ON
Toaster and microwave are off and
unplugged from powerpoint.
Powerpoint behind the microwave
is off.
Powerpoint underneath the sound
system is turned off. Bose speaker
is off.
Large display FRIDGE is turned
ON, but the LIGHT is turned OFF.
Small display fridge and hot
display are turned OFF and are

OPEN.
Aircon is turned OFF.
Window is closed and locked (lock
and wooden board).
Lights are turned OFF.
Alarm is turned ON.
All checked

OPENING PROCEDURE
As you walk into caf:
Disarm alarm
Put the news papers on the tables
(one on small wooden(!) table, one
on large table)
If delivered, bring bread and milk
inside
Proceed to your duties
Before opening:
Coffee/Front of house/Kitchen:
7.00 AM
Setup outside tables and chairs
Set inside chairs in position
See if chairs and tables need to be
wiped
Turn music on
Turn aircon on (when hot weather)
Front of House / Coffee:
7.00-7.30 AM

Free pour each group for 1-2 minutes.


Prepare towels and cloths for use
Setup milk jugs
Pack away the milk
Fill up and turn on the BonaVita kettle
Dial in the milk blend (Mazzer
grinder)
- run 3-5 shots before adjusting
grinder
Dial in the single origin (EK grinder)
- write down the grind setting for
the day
Turn on the fridge lights
Check writings on fridges and boards
7.30 AM
Put A-Frame outside

OPENING PROCEDURE
Kitchen:
Before 7.30 AM
Pre-heat oven if required
Turn on deep fryer
Turn on dishwasher
Pack away food deliveries
(fridge/freezer/shelf)
Start food prep
7.00 AM
See before opening section
Turn on sandwich press

Turn on microwave
Make sure both fridges are ON and
closed properly
Proceed to food prep
7.30 AM
Fill up food displays and come to the
front
(you are now FOH/barista)

CLOSING PROCEDURE
Kitchen
Stock take food supplies and pass to
the manager in charge for orders*

Wash all plates, cutlery, kitchen


supplies
Turn off all kitchen equipment
(leave fridges on)
Turn fridge lights off
Wipe down bench tops and all
surfaces
Roll up mats, sweep and mop the
floor
Place all the dirty towels and cloths in
laundry basket
Take out bins and line bins with new
liners
Put mats back in place
Coffee
Fully stock milk fridge from big fridge
Stock take and order milk/coffee
(make sure order is placed before
14.00)
Wash all cups, plates, spoons, etc.
Empty and clean grinders
Backflush and clean coffee machine
Empty BonaVita kettle
Top up choc, chai, sugar and tea
cannisters;
Top up choc and cinnamon shakers
Wipe down bench tops and all
surfaces
Take out bins and line bins with new
liners

Roll up mats, sweep and mop the


floor
Place dirty towels and cloths in
laundry basket
Place mats back in place
Front of house
Top up sugar bowls
Wipe down all tables inside/outside
After all tables wipe down chairs
inside/outside
Wipe all other surfaces
Pack up outdoor tables and chairs
Sweep and mop floor
Bring in outside tables and chairs and Aframe
Turn off music, lights and aircon
Take the before leaving checklist and go
through it
Arm alarm and lock the door

* Important: orders need to be passed two


days in
advance (!) Monday for Wednesday,
Tuesday for Thursday, etc.
Also, take note that certain suppliers supply
on
certain days only. See list of suppliers for

more
details.
