Winegrowing Decisions
BY JOSH STEIN

perspective.
For whites, the decisions
come down to the degree, if any,
of oak influence. Many white
varieties do not benefit from
oak exposure, and even
neutral barrels (barrels used
long enough that oak tannin is
no longer perceptible in wines
stored therein) can cause a
stylistic miscue since barrels
play host to Oenococcus oeni,
the bacteria responsible for
malic-to-lactic acid conversion.
Unless extraordinary and
expensive precautions are taken,
most winemakers would
combine separate lots of filtered
oaked and unoaked whites to
arrive at a blend with the
desired level of oak influence
rather than hoping to arrive at
an ideal middle through chance
in the barrel.
Red wines, though, present a
bit of a different set of options.
Oak is useful throughout the
production process, so some
folks will be using toasted or
untoasted oak shavings at the
crusher in cooler harvests to
alleviate any underripe green
aromatics or flavor compounds
from methoxypyrazines, which
contribute cigar or tobacco at
low levels and green pepper or
grassy, herb-y notes at higher
levels. Winemakers can ferment
in barrels either by removing the
heads and punching down into
upright barrels or through
reassembling the barrels and
using a rotation system to keep
the cap wet by spinning. They
can use larger puncheons to give
more subtle, rounder notes to
Josh Stein has been in the Napa wine business for more than a dozen years, and, in

nationally and internationally distributed portfolio of wine brands and donates a
percentage of its sales, he regularly consults for wineries and organizations throughout the
North Bay and Coast via their subsidiaries, Discrete Wine Support Services and Napa

Sterling
Vineyards
Stunning Views. Brilliant Wines.
Experience Sterling.
An Iconic Winery that Makes You Feel on Top of the World!
Sterling Vineyards is one of the most sought after destinations in
the world. With its stunning panoramic views, Greek architecture,
historic artifacts, award-winning wines and guaranteed good times,
Sterling Vineyards stands majestic above the town of Calistoga,
offering a top wine tasting experience like no other.
For starters, an aerial gondola takes you 300 feet up the hill to the
winery. At the top, feast your eyes on the rugged Mayacamas and
Vaca mountain ranges that showcase both sides of the glorious Napa
Valley. With a delicious glass of Sterling Vineyards wine in your
hand, you will marvel at the views and their extraordinary Greek
architecture. Sterling Vineyards striking white building was inspired
from Mediterranean-style architecture off the island of Mykonos,
where Sterling founder Peter Newton often vacationed.
Newtons love for history can be seen in the winerys towers where
it houses eight bells from Londons Church of St. Dunstans-in-theEast, originally founded in the 10th century. These ancient bells
sound through the valley, tolling the Westminster Quarters chime on
the quarter hour.

Part of what makes Coles Chop House one of the top dining
choices in Napa County is consistency. If you had an amazing
experience on your last visit two years ago, you can expect the same
on your next visit. This is because the philosophy behind the
restaurant hasnt changed since it opened in 2000 and the team
behind it hasnt changed much either. Current Owners, Eric and
Heather Keffer have been involved for 14 years; Chef de Cuisine, Jesus
Mendez has been with the restaurant since opening; and the rest of
the team has been with them for several years.

Castello di Amorosa
Pairing wine and cheese
goes back at least 4,000 years.
Both products are made from living substances
and improve with age. Both are a product of
fermentation, the process by which yeast cells
introduce chemical changes. And, both reflect
their terroir. Terroir refers to the combination of
soil, climate and region from which the product
comes. Traditionalists suggest that the wine and
cheese be paired according to region or strength,
thus preventing one from overpowering the other.
Part of the reason is the tannin levels. Red wines,
fermented with the skins, have a higher
concentration than white wine and this affects the
pairing characteristics. Also, the protein and fat in
cheese helps coat the palate reducing the
harshness of excess tannin.

Napa Valley Boutique Wine Tours is the Valleys Insider to Small Wineries
Ride Along with Andy on a Personalized Tasting Tour
It is rare to find a wine tasting tour company with a sole
dedication to small production wineries. Its even less likely to be
taken on tour by a local with friends throughout the Valley and firsthand insider knowledge of small winery operations. Thats where
Napa Valley Boutique Wine Tours truly shines. Being a former winery
owner himself, Andrew Andy Kiken can guarantee that guests will
meet a winery owner while visiting. Meeting the owner of the winery
is more interesting and memorable, says Andy.
Insider Expertise
Andy began Napa Valley Boutique Wine Tours in spring of 2016,
not long after his family sold its Reverie winery in Calistoga. Having
hosted wine tour guests at his family winery for the past 12 years,
Kiken developed a keen sense of what visitors want to see, do and
learn while visiting Wine Country: A seamless, stress-free and
memorable day amongst the vines where the planning and details are
left to someone else to manage. They also want to have fun while
learning about wine and experiencing real Wine Country lifestyle.
This is exactly what Andy provides.
Calistoga
Kenefick Ranch in All Its Glory
Located in Calistoga, Kenefick Ranch is reminiscent of the
working ranch during the burgeoning days of the Napa Valley. With
125 acres of rich terroir, the land and wine are deeply connected. For
25 years, Kenifick Ranch has been selling its fruit to Napa Valley
Vintners, with the best 10% of the fruit being produced and sold in
its own portfolio of award-winning wines.

award-winning restaurants.

and GoVino glass. For $55, adults can purchase a Platinum Pass which includes unlimited
food and wine tasting and a GoVino glass. Passports for children 12 and under are $5 for
kids to enjoy child-friendly snacks and activities. Tasting tickets include access to all event
activities.

The 13th Annual Pinot on the River event will be held on Sunday,
October 23rd in Healdsburg on the downtown Plaza. The tasting
event will include approximately 100 wineries and will draw guests
from across the state and country. Tickets to the event are available
at www.bgccsc.org/pinot. The event will host a large silent auction
with wine-related lots and a Peoples Choice contest for the
participating wineries. Raffle tickets will also be sold to win either an
instant wine cellar or a selection of magnums, all benefiting Boys &
Girls Clubs of Central Sonoma County.
Funds raised from the event will be used to support summer
camps and afterschool programs throughout Sonoma County. CEO
Jennifer Weiss said A beautiful setting, amazing wines, and
incredibly generous people make day of fun and tremendous
support for our 6,000 Club members.
Major sponsors of the event include Multi-Color Corporation,
MA Silva USA, Pacific Gas & Electric, Enartis Vinquiry, Comcast,
The Press Democrat, and Summit State Bank.
Boys & Girls Clubs of Central Sonoma County serves nearly
6,000 youth every year at 32 locations throughout Cloverdale,
Geyserville, Healdsburg, Guerneville, Monte Rio, Windsor, Santa
Rosa and Rohnert Park. The Clubs provide a safe place, caring adult
mentors, and high-impact youth development programs on a daily
basis during critical non-school hours. The organization seeks to
enable all young people, especially those who need us most, to reach
their potential as productive, caring, responsible citizens.

VJB Cellars
The moment guests step through the gate at VJB Cellars theyll feel as though theyve been
transported to a small Italian village. Buildings made of stone and rustic wood beams lend an
Old World feel, and on sunny, pleasant days the winerys piazza is full of happy visitors
enjoying all that VJB has to offer.
The first stop is usually the tasting room bar where VJBs friendly, knowledgeable staff
walks guests through the tasting menu that features the winerys limited production Italian
varietals such as the estate Sangiovese or Montepulciano. Chances are visitors will try wines
theyve never tasted before and gain an appreciation for these rare, California-grown Italian
varietals that are produced with an eye toward New World innovation and Old World
sensibility.
Afterwards, guests can enjoy a relaxing afternoon on the piazza enjoying wood-fired
pizzas and flatbreads from VJBs Red Rooster Pizza Co. Crisp Neapolitan-style pizzas,
calzones and flatbreads are delivered hot and fresh to guests tables to enjoy with one of VJBs
many wines available by the glass or bottle.
There is also a large selection of cheeses, salumi and antipasti in La Cucina, the onsite deli.
Get a cheese and salumi platter to share or freshly pressed panini. There are also several
grilled selections including ribs seasoned with owner Henry Belmontes secret rub, or pair
some of the chicken thighs with a freshly made salad.
Guests can also take home a taste of VJB from the marketplace which feature Estate grown
olive oil, Maria Belmontes homemade sauces, and even pasta thats made in house. An onsite
chocolate and gelato shop is the perfect ending to a visit here.
From the wine to the food, the atmosphere and hospitality, VJB is the ideal place to
experience all that wine country has to offer.
Follow us on Twitter @WineCountryTW
Standout Wines
Italian varietals rarely grown outside of Italy are the big draw here,
such as the Sagrantino, a rare, bold, red wine thats known as one of
the most tannic varietals in the world. The estate-grown
Montepulciano is the perfect pairing for Italian dishes and admired
amongst Cabernet Sauvignon fans for its similarities in body and
dark fruit. Guests who find the estate Sangiovese before it sells out
are in for a true Italian treat. New varietals are released every month,
ensuring that guests will have a unique tasting experience each visit.
Stay Awhile
Plan ahead and schedule a piazza tasting of the family wines on
the Italian inspired piazza with one of the wine educators. Soak up a
bit more of VJBs Italian wine knowledge and learn the history and
significance of each unique wine produced by the Belmonte family.
After tasting, stay to sip on your favorite bottle while enjoying an
assortment of wood-fired pizzas or the acclaimed Enricos ribs. The
in-house, fresh-made burrata is a must for any cheese lover. Sit back
and relish in all that our little slice of Italy in the Sonoma Valley has
to offer.

Do the Math
One of the questions most asked when it comes to wine is how much of this does it take to make that, and so on. We wont pretend that its simple, but here are some industry statistics that will give a pretty good
answer to that query. As with anything agricultural, of course, they are all based on countless variables when it comes to acre yields, but this is a good starting point. The rest of the information varies little if at all.

pairing, and wine tasting experiences for both the wine novice and
expert.
The Restaurant at Wente Vineyards uses locally grown organic
ingredients and features ingredient-driven California wine country
cuisine. While the menu holds its foundation in American dishes, it is
influenced by French and Italian provincial cuisine. The seasonal menu
changes daily, utilizing produce from The Restaurants organic garden.
Wente Vineyards is also the only winery in Livermore Valley to
offer a championship 18-hole public golf course.
Family, food, entertainment, and of course, the wines beckon
visitors to experience the legacy that is Wente Vineyards.
VASCO ROAD
Livermore Valley, with its rich heritage and variety of wine tasting
experiences, should be a top destination that people consider when
planning their next wine country getaway. As the countrys oldest,
continuously operated, family-owned winery and Californias First
Family of Chardonnay, Wente Vineyards would be a good place to
start the journey. The winery, led by fourth and fifth generation family
members, has clearly proven their leadership both in winegrowing
and in being one of Californias premier wine country destinations.
The Winemakers Studio is an option for consumers to learn more
about wine. This state-of-the-art wine education studio offers an
intimate, behind-the-scenes look at grape growing, wine and food
