CHAPTER I

Popoy at Basya is a small specialty restaurant that offers pizza with a local twist.
Launched in March 8, 2015, Popoy at Basya [PAB] was conceptualized by a group of
friends whose main passion is to do experimental cooking and eat. The main aim of
PAB is to create a pizza out of locally sourced ingredients fused up with the Italian
twist. This will be seen in the line-up of food items they offer in the menu.
Why Popoy at Basya? Aside from a very Filipino nickname, Popoy at Basya are two
main characters from the top-grossing movie One More Chance topbilled by John
Lloyd Cruz and Bea Alonzo who portrayed in the late 2000s. The owners were
fanatics of the said movie, and so the name Popoy at Basya.
Located at the heart of Bacnotan, La Union, PAB started as a 3-table, 12-seater
specialty restaurant. With the unprecedented support it got from its customers, PAB
transferred to a bigger location that caters to a 30-seater customer area and a
wider kitchen space ready for menu expansion.
PAB is managed by Mark Anthony Nidoy and currently has 3 multitasking crew.

CHAPTER 2
A. Sanitation Practices
Popoy at Basya does daily cleaning routine to ensure cleanliness and
sanitation of the whole establishment especially the kitchen area. Work
surfaces are cleaned with dishwashing liquid and sanitized with concentrated
bleach overnight. During work hours, a 30-minute cleaning practice is done to
ensure that the work table is clean and sanitize. Dishwashing liquid and
diluted concentrated bleach is sprayed and wiped on the tiles of the working
table.
The rest of the area like the working counter and the customer area are
cleaned on a daily basis. For the tables, a sanitizing agent is sprayed and
wiped after customers leave. Floors are swept off daily to remove sand and
other dirt. Walls, doors and windows are sprayed and wiped with sanitizing
agent on a daily basis too.
B. Menu [see appendices]
The menu is a spread of home-made and hand-made pizza choices, all-time
favorite pasta dishes and tasty dip that enhances the flavor of a plain dish.

C. Food Product Flow
c. 1. Dry Goods
Dry goods such flour, sugar, salt and the like are stored in tightly
sealed containers to prevent staling caused by moisture. This is done after
packaging is opened.

c. 2. Seafood
Seafood items are bought from the wet market. To ensure that quality
is maintained, PAB buys seafood items from one supplier only. This is also to
prevent sudden price changes affected by financial fluctuations. These items
when bought are placed in an ice box with ice in it to ensure the freshness
and prevent the development of foul odor. Cooked, shelled and frozen
immediately.
c. 3. Other items
* Sauces, oils, mayonnaise, cheeses and the like are bought from one
supplier.
* As to beverages, soda drinks and powdered mixes are brought
locally; flavorings are sourced out from a supplier from Manila.
D. Modes of Payment
For fresh produce items, it is paid in cash. As to dry goods, it is paid in terms
of 15 days.
E. Services offered
Popoy at Basya offers dine-in, take-out, advance order/order pick-up and
delivery services.
Chapter III
A. Strength
A. 1. Location: PAB is located near the market area, tricycle terminal, bus stop
and schools giving it an advantage for a heavy foot traffic count.
A. 2. Menu: Affordable prices that ranges from 15 pesos to 480 pesos,
products offered caters the kids to senior citizen bracket; B-E segment of the
society. Moreover, the food and beverage offered are named after cartoon
flicks that kids from the 80s up to the present can relate and recall.
A. 3. Ingredients: locally sourced and always available.
A. 4. New offering to the local market of Bacnotan, La Union.
A. 5. A healthy option from the frozen toppings pizza since PAB offers fresh
produce toppings with a twist.
B. Weakness
B. 1. Customer Area: small and limited that causes over spillage.
B. 2. Kitchen Area: small and limited that prevents menu expansion. Not too
much ventilation for the crew while working.
B. 3. No parking space since tricycles occupies the frontage of the
commercial building.
B. 4. No usual pizza toppings that some people look for and causes customers
to decline PABs offered menu.
