CP Holiday Train to benefit local


food pantries with stops in both
Lansing and New Albin this year
Residents and visitors of
Allamakee County will get
twice as many chances to see
the Canadian Pacific Holiday
Train this year, as the holiday
spectacle on rails will make its
way up the western edge of
the Mississippi River Sunday,
December 4 to make a pair
of stops within the Allamakee
County borders. The Holiday
Train will be stopping in Lansing
that December 4 afternoon, at
approximately 4:50 p.m., and
again in New Albin a little over
an hour later, at approximately
6:15 p.m.
The
Canadian
Pacific
Holiday Train is adorned with
hundreds of thousands of lights
and serves as a stage for live
musical performances. Both
stops are scheduled to include
performances
by
country
music singer Kelly Prescott

and veteran blues singer Colin


James. Santa Claus will also
be making an appearance in
conjunction with the train stops.
The lighted holiday train will
be stopping across from the
Sports Complex in Lansing
located
on
South
Front
Street. The performances and
presentations taking place
during the trains stop in Lansing
are scheduled to take place
from 5-5:30 p.m. Santa Claus
will be in attendance during the
stop in Lansing, and Lansing
Main Street Matters will also
be offering hot chocolate and
other refreshments during the
event.
The stop in New Albin will
take place in the parking lot
described as being located
adjacent to the railroad tracks
along Railroad Street (Highway
26) between Ross Avenue and

Oak Street. Performances and


presentations are scheduled to
take place from 6:15-6:30 p.m.
in New Albin. In conjunction
with the arrival of the Holiday
Train, free hot cocoa, caroling
and a Christmas tree lighting
will take place in a Light Up
New Albin celebration.
The Lansing and New Albin
locations will be among nine
stops the train will be making in
Iowa this holiday season. Prior
to its arrival in Lansing, the train
will be stopping in Marquette,
and after the New Albin stop
the train will depart for its next
destination in La Crescent, MN,
its final stop for that December
4 date.
The Holiday Train visits
will help the community and
surrounding area collect food
and money for local food

1 Egg
1/2 C. Milk
1 C. Ripe Mashed Bananas
(2 Medium)
1/2 C. Chopped Nuts
1 Tsp. Vanilla
1 Tsp. Cinnamon
Mix cake mix, egg
and milk. Beat 1 minute,
add bananas, nuts and
cinnamon. Beat 2 minutes
on medium speed.
Pour into 2 greased 8x4x2
loaf pans. Bake at 350
degrees for 40-45 minutes
or until a tooth pick inserted
comes out clean. Cool 10
minutes then remove. Cool
on rack.

1 Can Coconut Pecan
Frosting
Mix water, oil and eggs
and then mix in cake mix
and flour. Add coconut
pecan frosting and beat 1
minute.
Pour into greased bundt
pan. Bake in 350 degree
oven for 55-60 minutes.

The history of holiday lights

Holiday celebrants employ
holiday lights in various ways.
Certain individuals may be
content to hang lights on their
Christmas trees and call their
decorating complete. Others
may get their holiday jollies
by making sure each square
inch of their home is covered
in twinkling lights. Still, other
people prefer the more subdued
effect of lights framing one
picture window of the house.
The tradition of Christmas
lights stretches back to early
modern Germany when people
used candles to decorate
Christmas trees in Christian
homes. Those candles were
harbingers of what would come
when electric lights replaced
gas and other open flame
illuminating devices that were
commonplace prior to the 20th
century.

Thomas Edison, the inventor


of the first successful practical
light bulb, also created the
first strand of electric lights
that would be used in holiday
decorating. By 1880, Edison
had standard incandescent
light bulbs well sorted out
and desired a way to better
advertise his invention, so
he decided to make the most
of the holiday season and
put his light bulbs on display.
According to a 2003 article in
American Heritage magazine
titled The Wizard of Your
Christmas Tree, Edison strung
incandescent bulbs all around
the compound of his Menlo
Park, NJ, laboratory. Edison
constructed
an
eight-mile
underground wiring system in
order to power this grand light
display. Because the laboratory
was
situated
along
the
railroad that passed between
Manhattan and Philadelphia,
thousands of people were able

to see the display.


The concept of electric
holiday lights took a bit of time
to catch on. Edisons friend and
associate Edward Johnson was
tasked with stringing together
colored lights in 1882 and
placing them on an evergreen
tree. Johnson hand-wired 80
red, white and blue light bulbs.
In 1895, President Grover
Cleveland requested the White
House family Christmas tree
be illuminated by multi-colored
electric light bulbs.
In 1903, when General
Electric began to offer preassembled kits of holiday lights,
stringed lights were reserved
for the wealthy and electrically
savvy. For example, in 1903 a
single string of electric lights
cost $12, or around $300 today.
It would take several more
years before holiday lights
became a national tradition.
On Christmas Eve 1923,
President Calvin Coolidge

began the countrys celebration


of Christmas by lighting the
National Christmas Tree on
the Ellipse located south of the
White House with 3,000 electric
lights.
Today, illuminated strands

of lights have become a large


part of holiday celebrations and
have even been adopted for
use during various year-round
events. Such lights can be a
beautiful and festive addition to
many celebrations.

2 Tsp. Vanilla
Stir in:
2 C. Shredded Zucchini
1 C. Well Drained Crushed
Pineapple

Combine:
3 C. Flour
1 Tsp. Salt
2 Tsp. Baking Soda
1 Tsp. Baking Powder
1 1/2 Tsp. Cinnamon
3/4 Tsp. Nutmeg
1 C. Nuts
1 C. Raisins (plumped in
boiling water)
Mix and stir into first
mixture. Pour into two 5x9
pans greased and floured.
Bake at 350 degrees for 1
hour.

Refrigerate covered for 3
hours or until firm, Using foil,
lift out fudge. Remove foil,
cut fudge. Store between
layers of waxed paper in
airtight containers. Yields 3
pounds - 117 pieces.

Tips to prolong the life of your Christmas tree

Christmas trees are symbols
of the holiday season and the
spirit of giving that the season
champions. Choosing and
decorating a Christmas tree is
a tradition for many families,
and depending on the trees
they choose, families may have
some work to do to keep their
trees glowing all season long.
Artificial Christmas trees
require little, if any, maintenance.
But live Christmas trees, which
some people feel are more
authentic and welcoming than
their artificial counterparts,
require daily maintenance. In
addition to supplying the tree
with water at least once per
day, live Christmas tree owners
can take these steps to prolong
the life of their trees.
Protect the tree on the

way home. Your tree might be


vulnerable to damage as you
transport it from the farm to your
living room. Unwrapped trees
placed atop vehicles can be
dried out by the wind. Prevent
wind damage by wrapping the
tree if you plan to place it atop
your vehicle. If possible, lay the
tree in the bed of a pickup truck
and close the cover over the
bed. If you dont have access
to a pickup truck but can use
a minivan or SUV to transport
your tree, see if the tree fits
inside your vehicle. If it doesnt,
wrap it tightly in a blanket or
another form of cover, making
sure the cover wont blow off in
the wind when you hit the open
road.
Have the tree cut before
you take it off the lot. If you

Carrot Hot Dish

2 Lbs. Carrots
1 Stick Oleo
8 Ozs. Velveeta Cheese
2 Tbsp. Milk
1/2 C. Rice Krispies or
Bread Crumbs Mixed with
Melted Butter

Slice and cook carrots


until tender but not mushy.
Drain and put into buttered
casserole dish. Melt oleo,
cheese and milk and pour
over carrots. Top with Rice
Krispies or bread crumbs
mixed with melted butter.
Bake at 350 degrees for
20 minutes.

1 C. Sugar
1 C. Light Corn Syrup
1 Stick Butter
3 Ozs. Dark Chocolate
Morsels
Preheat oven to 325
degrees.
Stir together sugar,
corn syrup and butter in
small sauce pan, stirring
constantly until mixture
comes to a simmer and
sugar dissolves. Remove
from heat and stir in
chocolate until melted. Cool
5 minutes.
4 Large Eggs, Beaten
2 Tbsp. Bourbon
1 Tsp. Vanilla
1/4 Tsp. Salt
1 C. Chopped Pecans
1 9 Pie Crust
Whisk eggs in a bowl until
well blended. Then whisk
in bourbon, vanilla and
salt. Slowly pour chocolate
mixture into egg mixture,
whisking constantly. Stir in
pecans. Pour into pie crust.
Bake 50-55 minutes. Cool 2
hours.

Mix and let stand:


2 Pkgs. Dry Yeast
1 C. Warm Water
In large mixing bowl:
1/2 C. Butter or Oleo
1/2 C. Sugar
1 Tbsp. Salt
3 Eggs - add to above,
blend well on low speed.
5 C. Flour - add 1 cup to
above, then yeast mixture,
beat well until smooth.
Stop mixer, add more
flour, first with a spoon
and then with hand.
Scrape down side of bowl.
Refrigerate, cover with wax
paper and then a damp
cloth, 2 hours to 3 days
maximum. Punch down
when it rises. Total 48 to 64.
Roll 1/4 of dough in circle,
cut 12 or 16 wedges. Roll
from outer to center. Place
on greased sheet. Cover
and let rise 1.5 hours. Bake
in preheated oven at 400
degrees for ten minutes
or more. Cool on rack and
brush with butter.

Chopped Nuts
Beat together first 7
ingredients. Pour into 9x13
inch pan. Sprinkle with dry
cake mix and nuts. Drizzle
with butter. Bake 1 hour (no
longer) at 350 degrees.

Sweet Potatoes
9 Unbaked Pie Crust
Topping
1/3 C. Butter
1/3 C. All-Purpose Flour
1/2 C. Packed Brown Sugar
1/2 C. Chopped Pecans
In a bowl, blend sugar
and spices. Beat eggs, add
milk and vanilla. Combine
sugar mixture. Stir in
potatoes, beat until smooth.
Pour into pie shell. Bake at
425 degrees for 15 minutes.
Reduce heat to 350 degrees
and bake additional 30
minutes.
Combine topping
ingredients. Remove pie
from oven; sprinkle with
topping. Bake 10-15 minutes
or until topping is golden
brown. Cool on wire wrack.
Store in refrigerator. Serve
with whipped topping or ice
cream. (6-8 servings)

In a large bowl, combine

uncovered at 350 degrees
for 40-45 minutes or until

Lansing Christmas Ornament


Every
two
years
the
Lansing
United
Methodist
Sunday school offers for sale
a Christmas ornament. With
the closing of the Blumenthal
Lansing Button Company this
past year it was the ideal time
to commemorate the event on
our 2015-2016 year. In 1997
the Turner Pearl Button Factory
was highlighted on the Lansing
ornament with a picture of
the predecessor company,
started by Captain J. M. Turner.
Eventually Captain Turner
turned his company, then
known as the Lansing Button
Works, over to his grandson
L.T. Hufschmidt.
By the early 1930s the
company discontinued cutting
buttons from clam shells
and concentrated on selling
carded buttons. Hufschmidt
invented the carding machine
used in his business as well
as moving his business into
the South Lansing building
presently owned by Brennan

Construction Co.
The 2016 picture on the
Christmas ornaments shows
a young John Brophy (future
president of the company)
standing by the light pole at the
corner of South Front St. and
Valley Street. At this location,
Hufschmidts
business
expanded into making and
selling wooden and metal toys
by the millions. Many people in
Lansing and the surrounding
area owed their livelihood
to him. Also at this time,
John Brophy, Hufschmidts
nephew, began to take over
management duties.
When the old Ford Garage
closed on Lansings Main
Street, the company then
known as Lansing Company,
Inc. moved into that location. By
the mid 1950s they employed
150 people. The 2015 side of
the commemorative ornament
shows a photo of the continuing
evolvement of the business.

for sale at the upcoming


Breakfast with Santa event
scheduled for November 26 at
the Lansing United Methodist
Church starting at 7:30 a.m. and
lasting until noon, and also at
the Red Geranium Gift Shop in
Lansing during open business
hours. The ornaments cost $10
each and with a limited number
available are expected to be
gone quickly.

4 Tsp. Vanilla Extract
1 1/2 C. Flour
1 1/2 C. Oatmeal
1 Tsp. Cinnamon
1 Tsp. Baking Soda
1/4 Tsp. Salt
1 C. Chocolate Chips or
Chunks
Melt butter for 45
seconds, stir with fork to
finish melting.
Combine butter, brown
and white sugar in large
bowl. Mix with wooden
spoon until smooth. Add
pumpkin, egg and vanilla,
stir until blended. Add flour,
oats, cinnamon, baking soda
and salt and mix until almost
combined with a little bit of
flour still visible. Fold in the
chocolate chips. Chill about
1 hour.
Preheat oven to 375
degrees and bake 10-15
minutes until golden brown.

1 C. Shortening (Butter Crisco can
be used)
3/4 Tsp. Salt
1 Egg, Separated
Milk
1 1/3 C. Sugar
1 Tsp. Cinnamon
3 Tbsp. Flour
4 Tbsp. Tapioca
Apples (4-6)
Mix first three ingredients.
Separate egg. Put egg yolk in
measuring cup and add enough
milk to make 2/3 cup liquid. Mix
in flour and shortening. Roll out
half the pastry. Place in jelly roll
pan. Cover pastry with apples,
sprinkle with mixture of last four
ingredients. Cover with remaining
pastry after rolling to pan size.
Beat egg white and brush over
top of dough. Sprinkle sugar and
cinnamon on top of egg white.
Bake at 425 degrees for 10
minutes, then at 375 degrees
for 20-25 minutes. Can drizzle
powdered sugar frosting on top
when cool.

December 25 from 5-9 p.m.
A live fireworks display will be
featured November 26. And
