The authentic sauce is just tomato passata/crushed canned tomatoes. If you want a twist, add
dried oregano and dried basil to taste.

Puree is thicker and more concentrated. The passata is like a tomato sauce sieve
without the condiments. Is just the tomato and salt, even though you always have

What flour can I use in the USA? I've never heard of "strong white bread flour" or "tipo 00 flour."

I just made it and it was great!!! The perfect pizza!! The whole family is happier now. Thanks Genaro!!
I made de tomato sauce one hour before. Three tablespoons of onion, one chopped garlic all this fried
tender I added one can of canned tomatoes chopped. Salt and pepper. I cooked this for one hour and

Just made pizza using this dough recipe. I think Gennaro's recipe in combination with his kneading me
what makes this dough recipe unlike any other. He stretches out the dough and kneads it by folding th
top to the bottom. (This sort of folding method is also used by Joy of Baking baguette recipe which I sw
easiest) homemade baguettes ever). I used Emile Henry's rectangle glazed pizza stone heated for 30m
Than cooked the pizza for 12-15 mins on 430 F as Gennaro instructed. It wasn't cooked in a wood fire
results were pretty awesome. Nice chew with some crunch. The flavor was great too. I didn't have 00 fl
AP unbleached flour. I'm always on the lookout for a good pizza dough recipe- I think I found thee one
sharing.

I often freeze extra balls of dough - haven't tried with this particular recipe though - once
them again and, before they rise anew, put a little coat of olive oil on each ball (I use a bi
hand and then I pat the ball of dough until it is covered), wrap it well in plastic wrap and
(I see this is a few months old but hey, better late than never). Buon appetito!
