Chocolate Cake (High Fat)

Ingredients
2 cups APF
2 cups sugar
cup cocoa
1 tsp baking soda
2 eggs
2 cups water
1 cup butter
1 T vanilla

Cream butter, shortening and sugar until smooth or well-blended.


Add eggs one at a time. Add vanilla.
Mix drug ingredients together. Add alternately dry and liquid ingredients, dry first, dry last.
Bake at 320 until when you insert toothpick, it will comes out clean.
Cool completely before frosting

Basic Butter Cake (High fat cake)


Ingredients
1 cup butter, softened
1 cups sugar
3 large egg yolks
1 T vanilla
3 cups cake flour
2 tsp baking powder
tsp salt
1 cups milk
Procedure:
1. In a bowl, with a mixer on medium-high speed (use the paddle attachment if using a
standing mixer), beat butter and sugar until fluffy and pale yellow, 4 to 5 minutes. Add
eggs, then yolks, one at a time, beating well after each addition and scraping down sides
of bowl as necessary. Beat in vanilla.
2. In another bowl, mix flour, baking powder, and salt. Stir (or beat at low speed) about a
third of the flour mixture into butter mixture. Stir in half the milk just until blended. Stir in
another third of the flour mixture, then remaining milk, followed by remaining flour. Scrape
batter equally into two buttered and floured 9-inch round cake pans and spread level.
3. Bake in a 350 regular or convention oven until a wooden skewer or toothpick inserted in
the center comes out clean, 25 to 30 minutes. Cool on rack pans for 10 minutes., then
invert cakes onto racks and remove pans. Cool completely before frosting.
Notes: Soften the butter briefly in a warm place in the kitchen or in a microwave oven until very
soft but not melted.

Butter Cream Frosting

Ingredients:
3 cups confectioners sugar
1 cup butter
1 tsp vanilla extract
1-2 tablespoons whipping cream
Directions:
In a standing mixer fitted with a whisk, mix together sugar and butter. Mix on low speed until well
blended and then increase speed to medium and beat for another 3 minutes. Add vanilla and
cream and continue to beat on medium speed for 1 minute more, adding more cream if needed
for spreading consistency.
Orange Sponge Cake (Low fat)
Ingredients:
8 egg yolks
c sugar
2 c cake flour
1 T baking powder
1 tsp salt
c oil
cup water (orange or any flavoring)
1 tsp cream of tartar
8 egg whites
c sugar
Procedure:
1. Beat sugar with yolks. Add salt, oil, and water, then add flour and baking powder.
2. Beat egg whites with cream of tartar, adding sugar gradually. Beat until they hold a peak.
Fold in flour mixture into egg whites. Bake at 350.
3. Cool completely before frosting.
Boiled Icing:
cup egg whites
1 tsp cream of tartar
cup water
2 cups white sugar
1. Boil sugar in a sauce pan, do not stir it.
2. Beat egg whites and cream of tartar. Gradually add the boiled sugar. Beat until it holds a
peak.
