Steamed Chocolate Moist Cake

Ingredients:
1/4 cup butter
1/2 cup + 2 tablespoon fresh milk
1/2 cup sugar
1/2 cup all-purpose flour
1/4 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
1 large egg
1/2 teaspoon vanilla

for the ganache:


1 cup all-purpose cream
1 cup dark chocolate chunks

Procedure:
1 Combine butter, sugar, and milk in a small saucepan. Cook over low
heat until sugar is dissolved.

2 In a bowl, lightly beat egg and vanilla. Add butter-sugar mixture.


Whisk together until combined.

3 Sift together flour, cocoa powder, baking soda, baking powder, and
salt. Gradually add dry ingredients to milk-egg mixture.

4 Pour cake batter into a cake pan and cover with foil. Place cake pan
on top of the steamer and cover with a lid. Steam over medium heat
for 40 minutes or until a toothpick inserted in the middle of the cake
comes out clean. Set aside to cool.

5 Meanwhile, make the ganache: Scald milk in a saucepan over low


heat. Add chocolate chunks and stir until chocolate has melted.

6 Once cooled, pour ganache over cake, making sure to glaze all sides.
Let stand at room temperature to set.
Cheese Puto

Ingredients:
2 cups all purpose flour
1 1/4 tablespoons baking powder
1 cup sugar
2 cups water
1 cup evaporated milk
1 medium egg
1/4 cup unsalted butter, melted
Pinch of salt
Cheddar cheese, for topping

Procedure:
1 Mix flour, baking powder, sugar, and salt together. Set aside.
2 Mix milk, egg, water, and butter together.
3 Whisk wet ingredients into dry ingredients.
4 Preheat the steamer.
5 Pour mixture into molds then arrange into the steamer. Steam for 10
minutes.
6 Take off the heat, and top with cheese.
7 Cover for 2 more minutes to make the cheese melt
8 Cool to room temperature, then serve.
Leche Flan

Ingredients:
10 pieces raw eggs
1 small can condensed milk
1 cup fresh milk (or evaporated milk)
1 cup granulated sugar
1 tsp vanilla extract

Procedure:
1. Using all the eggs, separate the yolk from the egg white (only egg
yolks will be used).
2. Place the egg yolks in a big bowl then beat them using a fork or an
egg beater
3. Add the condensed milk and mix thoroughly
4. Pour-in the fresh milk and Vanilla. Mix well
5. Put the mold (llanera) on top of the stove and heat using low fire
6. Put-in the granulated sugar on the mold and mix thoroughly until
the solid sugar turns into liquid (caramel) having a light brown color.
Note: Sometimes it is hard to find a Llanera (Traditional flan mold)
depending on your location. I find it more convenient to use
individual Round Pans in making leche flan.
7. Spread the caramel (liquid sugar) evenly on the flat side of the mold
8. Wait for 5 minutes then pour the egg yolk and milk mixture on the
mold
9. Cover the top of the mold using an Aluminum foil
10. Steam the mold with egg and milk mixture for 30 to 35 minutes.
11. After steaming, let the temperature cool down then refrigerate
