4. Conclusion
The study sought to find out with precision, the organoleptic
acceptance of the prepared blended jam samples with different
treatments in terms of body and texture, color and appearance,
flavour and taste and overall acceptability. However, T3
(70:30) was the most liked jam treatment with highest score
for nearly all the evaluating parameters. With the addition of
carrot the beta-carotene content was increased in jam and high
amount of beta-carotene was found in T3 (70:30) sample.
