Currently Working as Food Safety Hygiene Manager in Sheraton
Hotel, Manama, Kingdom of Bahrain, Since October 2011 to till
date (5 Star Hotel, Managed by Starwood Hotels and Resorts , EAME)
Conduct Hazard analysis for each process and implement a strong Food
safety Management System
Implementing Pre R e q u i s i t e Programs (PRPs), H A C C P plan,
Operational Pre R e q u i s i t e Programs (OPRPs) Standard
Operation Procedures (SOPs) & (SSOPs).
Regular inspections of entire premises to ensure compliance to food
safety, food hygiene, Corporate Starwood standards & HACCP standards
with reference to Codex Alimentarius principles of food hygiene.
To maintain the HACCP implemented within the establishment and
efficiently run the systems as Food Safety & HACCP Team leader.
Maintain all the HACCP related documents and verify the records,
conduct monthly HACCP meetings.
Conduct supplier audits & Coordinate for any food safety related issues
Conduct internal Food safety hygiene audits and follow upon the
corrective actions.
Coordinate with other departments within the hotel for any Food
Safety, Environment Health & Safety issues & as EHS Team member.
Liaise with the local authorities for any food safety, Environment,
Health & safety matters & to ensure compliance to local regulations.
Design, implementation, application, documentation, record drafting,
verification of HACCP/ISO 22000 (Food Safety Management system)
and Corporate food safety standards at the unit
Carry out & ensure food safety hygiene, HACCP trainings to work force
and core team members, in house trainings for all food handlers /
managers as per Corporate Standards & HACCP requirement.
Set up a well-equipped Microbiological Laboratory for testing food,
water & swabs samples, for Le Royal meridian Hotel Chennai, INDIA.
Liaison with external accredited laboratories for food analysis for
chemical and microbiological parameters & ensure results within limits.
Ability to proactively identify the areas of improvement and potential problems
to ensure smooth functioning and participation in audit procedures.
Ability to provide objective feedback for improvement in performance of team.
Ability to lead team members to understand & follow the continuous
improvement concept.
Ability to identify the training and development needs for self & team.
Ability to understand of the mission and values of the company.
