a.Chemical Factors

-pH value, calcium, and phosphate and to a lesser extent fluoride content of a drink
or foodstuff are important factors explaining erosive attack. They determine the
degree of saturation with respect to tooth minerals, which is the driving force for
dissolution. Solutions oversaturated with respect to dental hard tissue will not
dissolve it. Addition of calcium (and phosphate) salts to erosive drinks showed
protection of surface softening

b.Physical Factors - The major physical factors which affect microbial growthare solutes and
water activity, pH, temperature, oxygen level, pressure and radiation.

b.1.Temperature

- is the most important factor that determines the rate of growth, multiplication, survival, and
death of all living organisms,

-High temperatures damage microbes by denaturing enzymes, transport carriers and other
proteins.

b.2.Water Activity

-Water activity better predicts the growth of microorganisms because microorganisms can only
use available water, which differs considerably depending on the solute.

b.3 Relative humidity

-relative humidity (RH) of packaged fresh-cut fruits or vegetables that is associated with spoilage
can be used as an advantageous way to deliver antimicrobial compounds using cyclodextrins
(CDs) as carriers. CDs can function as antimicrobial delivery systems as they can release
antioxidant and antimicrobial compounds (guest molecules) as the humidity levels increase in the
headspace.

c.Biotic Factors

-A biotic factor is any living component that affects the population of another organism, or the
environment. This includes animals that consume the organism, and the living food that the
organism consumes. Biotic factors also include human influence, pathogens,
anddisease outbreaks.
