Weve all heard of the latest fad diets: The no-fat, all-fat, cabbage-soup, six-small-
meals, raw-veggies-no-dressing, gluten-free eating plans supposedly proven to help
you lose weight fast.
What if we told you that the answer to losing weight, improving body composition,
and feeling better overall might not even really be about dieting, but instead just
skipping meals every once in a while? For some, intermittent fasting, or going a longer
period of time usually between 14 and 36 hours with very few to no calories, can
actually be a lot easier than you may think, and the benefits might be worth it. If you
think about it, all of us fast every single day we just call it sleeping. Intermittent
fasting just means extending that fasting period, and being a bit more conscious of
your eating schedule overall. But is it right for you? And which method is best?
As far back as the 1930s, scientists have been exploring the benefits of reducing
calories by skipping meals. During that time, one American scientist found that
significantly reducing calories helped mice live longer, healthier lives. More recently,
researches have found the same in fruit flies, roundworms and monkeys. Studies have
also shown thatdecreasing calorie consumption by 30 to 40 percent (regardless of how
its done) can extend life span by a third or more. Plus, theres data to suggest that
limiting food intake may reduce the risk of many common diseases. And some believe
fasting may also increase the bodys responsiveness to insulin, which regulates blood
sugar, helping to control feelings of hunger and food cravings.
The five most common methods of intermittent fasting try to take advantage of each
of these benefits, but different methods will yield better results for different people.
If youre going to force yourself to follow a certain method, its not going to work,
says trainer and fitness expert Nia Shanks. Choose a method that makes your life
easier, she says. Otherwise, its not sustainable and the benefits of your fasting may
be short-lived.
So whats the first step in getting started? Each method has its own guidelines for how
long to fast and what to eat during the feeding phase. Below, youll find the five
most popular methods and the basics of how they work. Keep in mind, intermittent
fasting isnt for everyone, and those with health conditions of any kind should check
with their doctor before changing up their usual routine. Its also important to note

that personal goals and lifestyle are key factors to consider when choosing a fasting
method.
1. Leangains
Best for: Dedicated gym-goers who want to lose body fat and build muscle.
How It Works: Fast for 14 (women) to 16 (men) hours each day, and then feed for
the remaining eight to 10 hours. During the fasting period, you consume no calories,
though black coffee, calorie-free sweeteners, diet soda and sugar-free gum are
permitted. (A splash of milk in your coffee wont hurt, either.) Most practitioners will
find it easiest to fast through the night and into the morning, breaking the fast roughly
six hours after waking up. This schedule is adaptable to any persons lifestyle, but
maintaining a consistent feeding window time is important. Otherwise, hormones in
the body can get thrown out of whack and make sticking to the program harder,
Berkhan says.
What and when you eat during the feeding window also depends on when you work
out. On days you exercise, carbs are more important than fat. On rest days, fat intake
should be higher. Protein consumption should be fairly high every day, though it will
vary based on goals, gender, age, body fat and activity levels. Regardless of your
specific program, whole, unprocessed foods should make up the majority of your
calorie intake. However, when there isnt time for a meal, a protein shake or meal
replacement bar is acceptable (in moderation).
Pros: For many, the highlight of this program is that on most days, meal frequency is
irrelevant you can really eat whenever you want to within the eight-hour feeding
period. That said, most people find breaking it up into three meals easier to stick to
(since were typically already programmed to eat this way).
Cons: Even though there is flexibility in when you eat, Leangains has pretty specific
guidelines for what to eat, especially in relation to when youre working out. The strict
nutrition plan and scheduling meals perfectly around workouts can make the program
a bit tougher to adhere to. (You can learn more about the specifics as well as when

Its all about moderation: You can still eat whatever you want, but maybe not as much
of it. A slice of birthday cake is OK, but the whole cake isnt.
How It Works: Fast for 24 hours once or twice per week. During the 24 hour fast, which
creator Brad Pilon prefers to call a 24 break from eating, no food is consumed, but
you can drink calorie-free beverages. After the fast is over, you then go back to eating
normally. Act like you didnt fast, Pilon says. Some people need to finish the fast at
a normal mealtime with a big meal, while others are OK ending the fast with an
afternoon snack. Time it however works best for you, and adjust your timing as your
schedule changes, he says.
The main rationale? Eating this way will reduce overall calorie intake without really
limiting what youre able to eat just how often, according to Eat Stop Eat. Its
important to note that incorporating regular workouts, particularly resistance training,
is key to succeeding on this plan if weight loss or improved body composition are
goals.
Pros: While 24 hours may seem like a long time to go without food, the good news is
that this program is flexible. You dont have to go all-or-nothing at the beginning. Go as
long as you can without food the first day and gradually increase fasting phase over
time to help your body adjust. Pilon suggests starting the fast when you are busy, and
on a day where you have no eating obligations (like a work lunch or happy hour).
Another perk? There are no forbidden foods, and no counting calories, weighing
food or restricting your diet, which makes it a bit easier to follow. That said, this isnt a
free-for-all. You still have to eat like a grown-up, Pilon says. Its all about moderation:
You can still eat whatever you want, but maybe not as much of it. (A slice of birthday

Cons: Going 24 hours without any calories may be too difficult for some especially
at first. Many people struggle with going extended periods of time with no food, citing
annoying symptoms including headaches, fatigue, or feeling cranky or anxious (though
these side effects can dimish over time). The long fasting period can also make it more
tempting to binge after a fast. This can be easily fixed but it takes a lot of self-control,
which some people lack.
How It Works: Warriors-in-training can expect to fast for about 20 hours every day and
eat one large meal every night. What you eat and when you eat it within that large
meal is also key to this method. The philosophy here is based on feeding the body the

nutrients it needs in sync with circadian rhythms and that our species are nocturnal
eaters, inherently programmed for night eating.
The fasting phase of The Warrior Diet is really more about undereating. During the
20-hour fast, you can eat a few servings of raw fruit or veggies, fresh juice, and a few
servings of protein, if desired. This is supposed to maximize the Sympathetic Nervous
Systems fight or flight response, which is intended to promote alertness, boost
energy, and stimulate fat burning. The four-hour eating window which Hofmekler
refers to as the overeating phase is at night in order to maximize the
Parasympathetic Nervous Systems ability to help the body recuperate, promoting
calm, relaxation and digestion, while also allowing the body to use the nutrients
consumed for repair and growth. Eating at night may also help the body produce
hormones and burn fat during the day, according to Hofmekler. During these four
hours, the order in which you eat specific food groups matters, too. Hofmelker says to
start with veggies, protein and fat. After finishing those groups, only if you are still
hungry should you tack on some carbohydrates.
Pros: Many have gravitated toward this diet because the fasting period still allows
you to eat a few small snacks, which can make it easier to get through. As the
methodology explains (and the success stories section of The Warrior Diet website
supports), many practitioners also report increased energy levels and fat loss.
Cons: Even though its nice to eat a few snacks rather than go without any food for 20-
plus hours, the guidelines for what needs to be eaten (and when) can be hard to follow
long-term. The strict schedule and meal plan may also interfere with social gatherings,
which can be tricky for some. Additionally, eating one main meal at night while
following strict guidelines of what to eat, and in what order can be tough, especially
for those who prefer not to eat large meals late in the day.
How It Works: Not completely satisfied with the IF diets listed above? This method
takes the best parts of Eat Stop Eat, The Warrior Diet and Leangains, and combines it
all into one plan. You also get one cheat day each week (yay!) followed by a 36-hour
fast (which may be not-so-yay for some). After that, the remainder of the seven-day
cycle is split up between the different fasting protocols.
Romaniello and Go suggest saving the longest fasts for your busiest days, allowing you
to focus on being productive and avoid focusing on potential hunger. The plan, which
can be purchased on their website, also includes training programs (using bodyweight

and free weights) to help participants reach maximum fat loss in the simplest way
possible.
Pros: According to the founders, while everyone is technically fasting every day
during the hours when were not eating most of us do so haphazardly, which makes
it harder to reap the rewards. Fat Loss Forever offers a seven-day schedule for fasting
so that the body can get used to this structured timetable and reap the most benefit
from the fasting periods. (Plus, you get a full-fledged cheat day. And who doesnt love
that?)
Cons: On the flip side, if you have a hard time handling cheat days the healthy way (i.e.
being able to indulge in moderation and turn off that green light when its time), this
method might not be for you. Additionally, because the plan is pretty specific and the
fasting/feeding schedule varies from day to day, this method can be a bit confusing to
follow. (However, the plan does come with a calendar, noting how to fast and exercise
each day, which may make it easier.)
How It Works: This ones easy: Eat very little one day, and eat like normal the next. On
the low-calorie days, that means one fifth of your normal calorie intake. So using 2,000
or 2,500 calories (for women and men, respectively) as a guide, that means a fasting
(or down) day should be 400 to 500 calories. Followers can use this tool to figure out
how many calories to consume on low-calorie days.
To make down days easier to stick to, Johnson recommends opting for meal
replacement shakes because theyre fortified with essential nutrients and can be
sipped throughout the day rather than split into small meals. However, meal
replacement shakes should only be used during the first two weeks of the diet after
that, you should start eating real food on down days. The next day, eat like normal.
Rinse and repeat! (Note: If working out is part of your routine, you may find it harder
to hit the gym on the lower calorie days. It may be smart to keep any workouts on
these days on the tamer side, or save sweat sessions for your normal calorie days.)
Pros: This method is all about weight loss, so if thats your main goal, this is one to take
a closer look at. On average, those who cut calories by 20 to 35 percent see a loss of
about two and a half pounds per week, according to the Johnson UpDayDownDay Diet
website.
Cons: While the method is pretty easy to follow, it can be easy to binge on the
normal day. The best way to stay on track is planning your meals ahead of time as

It takes our bodies time to adjust, and some require more than others. Be cautious at
first, and start slowly [with a shorter fast], Shanks recommends.
While these five methods are the most well-known in terms of integrating periods of
fasting into your eating schedule, there are many other similar philosophies based on
meal timing. For those who prefer a more fluid, less rigid method, theres also the
concept of eating intuitively. Primal Diet proponent Mark Sisson is a supporter of the
Eat WHEN (When Hunger Ensues Naturally) method, where dieters simply eat
whenever their bodies ask them to. However, some believe this can also lead to
overeating or overconsumption of calories, since our bodies hunger-induced choices
may be more caloric than otherwise.
Of course, fasting regardless of the method isnt for everyone. If you have any
medical conditions, special dietary requirements, or chronic diseases, its smart to
consult a doctor before giving intermittent fasting a shot. Anyone who tries it should
also plan to be highly self-aware while fasting if its not agreeing with you, or if you
need to eat a little something to hold you over and avoid an even more serious
problem, thats just fine. It takes our bodies time to adjust, and some require more
than others. And for the ladies out there: Keep in mind that hormones can make it
harder for women to follow a fasting plan than for men. Be cautious at first, and start
slowly [with a shorter fast], Shanks recommends. If it doesnt make you feel better,
try something different, or accept the fact that maybe fasting isnt for you.
Drink plenty of water. Staying well hydrated will make the fasting periods much
easier to get through, Pilon says.
Fast overnight. Throw yourself a bone and aim to fast through the night, so that
youre (hopefully) sleeping during at least eight of those hours.
Rewire your thought process. Think of fasting as taking a break from eating,
Pilon says, not as a period of deprivation. It can be a way to break up the monotony of
worrying about what you need to eat next and when. This is the mindset that will allow
you do follow a fasting plan long-term, he says.
Overcommit. It may seem counterintuitive, but the best plan is often to start
when youre busy not on a day when youll be sitting on the couch wanting to snack.

Hit the gym. Pairing intermittent fasting with consistent exercise will help you
get better results. It doesnt have to be hardcore or crazy; it can be something as

says.

practiced throughout all of human history. Its a secret because this powerful habit has
been virtually forgotten, although many are re-discovering this dietary intervention. It
can carry huge benefits if you do it right: weight loss, reversal of type 2 diabetes,
increased energy and many other things.
We asked the great guru on intermittent fasting, Dr. Jason Fung, to assemble this
simple beginners guide, where you can learn everything you want to know about it.
Introduction
How it Works
No. Fasting differs from starvation in one crucial way. Control. Starvation is the
involuntary absence of food. It is neither deliberate, nor controlled. Fasting, on the
other hand is the voluntary withholding of food for spiritual, health, or other reasons.
Food is easily available, but you choose not to eat it. This can be for any period of time,
from a few hours up to days or even weeks on end. You may begin a fast at any time of
your choosing, and you may end a fast at will, too. You can start or stop a fast for any
reason, or no reason at all.
Fasting has no standard duration since it is merely the absence of eating. Anytime that
you are not eating, you are fasting. For example, you may fast between dinner and
breakfast the next day, a period of approximately 12-14 hours. In that sense, fasting
should be considered a part of everyday life.
Consider the term break fast. This refers to the meal that breaks your fast which is
done daily. Rather than being some sort of cruel and unusual punishment, the English
language implicitly acknowledges that fasting should be performed daily, even if only
for a short duration.
Fasting is not something queer and curious, but a part of every day, normal life. It is
perhaps the oldest, and most powerful dietary intervention imaginable. Yet somehow
we have forgotten its awesome power and ignored its therapeutic potential.

At its very core, fasting simply allows the body to burn off the excess body fat. It is
important to realize that this is normal and humans have evolved to fast without
detrimental health consequences. Body fat is merely food energy that has been stored
away. If you dont eat, your body will simply eat its own fat for energy.
Life is about balance. The good and the bad. The yin and the yang. The same applies to
eating and fasting. Fasting, after all, is simply the flip side of eating. If you are not
eating, you are fasting. Heres how it works.
When we eat, more food energy is ingested than can immediately be used. Some of
this energy must be stored away for later use. Insulin is the key hormone involved in
storage of food energy.
Insulin rises when we eat, helping store the excess energy in two separate ways.
Sugars can be linked into long chains called glycogen and then stored in the liver. There
is, however, limited storage space and once reached, the liver starts to turn the excess
glucose into fat. This process is called De-Novo Lipogenesis (meaning literally Making
Fat from New).
Some of this newly created fat is stored in the liver, but most is exported to other fat
deposits in the body. While this is a more complicated process, there is no limit to the
amount of fat created. So, two complementary food energy storage systems exist in
our bodies. One is easily accessible but with limited storage space (glycogen), and the
other is more difficult to access but has unlimited storage space (body fat).
The process goes in reverse when we do not eat (fasting). Insulin levels fall, signaling
the body to start burning stored energy as no more is coming through food. Blood
glucose falls, so the body must now pull glucose out of storage to burn for energy.
Glycogen is the most easily accessible energy source. It is broken down into glucose
molecules to provide energy for the other cells. This can provide enough energy to
power the body for 24-36 hours. After that, the body will start breaking down fat for
energy.
So, that the body only really exists in two states the fed (insulin high) state and the
fasted (insulin low) state. Either we are storing food energy, or we are burning it. Its
one or the other. If eating and fasting are balanced, then there is no net weight gain.
If we start eating the minute we roll out of bed, and do not stop until we go to sleep,
we spend almost all our time in the fed state. Over time, we will gain weight. We have
not allowed our body any time to burn food energy.

To restore balance or to lose weight, simply increase the amount of time we burn food
energy (fasting). In essence, fasting allows the body to use its stored energy. After all,

This may not be too surprising as the corporate media is owned by the major vaccine
manufacturers, and the major vaccine manufacturers are owned by corporate
media(1)(2)(3)(4). Given this fact, its easy to fathom the possibility that these
institutions are desperately trying to protect the reputation of their product.
For example, if we take a look at GlaxoSmithKline and Pfizer, they are owned by the
same financial institutions and groups that own Time Warner (CNN, HBO etc.) and
General Electric (NBC, Comcast, Universal Pictures etc.).(1)(2)(3)(4) This is seen
throughout all of the major vaccine manufacturers and all of the 6 corporations that
control our mainstream media. Keep in mind that these are the major funders of all
medical research thats used to administer drugs and vaccinations. Despite these
connections, medical research and documentation exists to show that vaccines might
indeed be a cause for concern.
Here we will simply present information from both sides of the coin because many are
not even aware that two sides exist. Weve presented multiple studies, citing multiple
research papers and published research conducted by doctors and universities from all
across the world. Here is an example of a paper that describes how vaccine
manufactures and medical experts with drug industry connections have been aware
of the multiple dangers associated with vaccinations for over 30 years. Wed also like

The vaccine-autism debate has been going on for years. It has been a tale of shifting
beliefs as child vaccination rates remain high. On February 1998, Andrew Wakefield, a
British gastroenterologist and his colleagues published a paper that supposedly linked
Autism to Vaccines(5). More specifically, he claimed that the MMR vaccine was
responsible for intestinal inflammation that led to translocation of usually non-
permeable peptides to the bloodstream and, subsequently, to the brain, where they
affected development(5). His work was unpublished, and he lost his medical license
despite the fact multiple studies seem to support Andrew Wakefields work (here is
one example, and here is another.) He has been labelled a fraud by the mainstream
medical world, some experts claim that his research and methods are weak and based
on very little evidence. Dr Wakefields research will NOT be used in this article.
At the same time I must mention that multiple studies from around the world have
concluded that there is no link between Autism and the MMR Vaccine(5). It can
become quite confusing a subject given that we have multiple medical studies
contradicting each other. Was Dr. Wakefield exposing something that the medical
industry did not want you to know? It is known that vaccine manufacturers suppress
harmful data regarding their product, as mentioned and illustrated earlier in the
article. Regardless of the MMR vaccine and autism debate, there are still a number of
studies that link vaccines to a possible autism connection. Please keep in mind that
multiple courts worldwide have ruled in favour of vaccines causing autism, brain
damage and other complications (6)(7), that include the MMR vaccine.

Hepatitis B vaccine to newborn baby boys could triple the risk of developing an autism
spectrum disorder compared to boys who were not vaccinated as neonates. The

According to the FDA, vaccines represent a special category of drugs as they are
generally given to healthy individuals. Further according to the FDA, this places
significant emphasis on their vaccine safety. While the FDA does set an upper limit for
Aluminum in vaccines at no more that 850/mg/dose, it is important to note that this
amount was selected empirically from data showing that Aluminum in such amounts
enhanced the antigenicity of the vaccine, rather than from existing safety. Given that

caused by a problem in brain development. They looked at B-cells and their sensitivity
levels to thimerosal, a commonly used additive in many vaccines. They determined
that ASD patients have a heightened sensitivity to thimerosal which would restrict cell
proliferation that is typically found after vaccination. The research shows that
individuals who have this hypersensitivity to thimerosal could make them highly
susceptible to toxins like thimerosal, and that individuals with a mild mitochondrial
defect may be affected by thimerosal. The fact that ASD patients B cells exhibit
hypersensitivity to thimerosal tells us something.
6. Study published in the Annals of Clinical Psychiatry suggests that Autism is likely
triggered by a virus, and that measles virus (MV and/or MMR vaccine) might be a very
good candidate. It supports the hypothesis that a virus-dincued autoimmune response
may play a causal role in autism.
9. A study published in the Journal of Child Neurology examined the question of what
is leading to the apparent increase in autism. They expressed that if there is any link

falsely stating that no link occurs. Researchers determined that a significant relation

After a week of consuming BrainPlus IQ my energy levels increased, and it was not like
the typical coffee stimulant. This is a gentle boost of natural and lasting energy,

I am more focused now (after a 10-hour working day) than I would normally be upon
waking me up.
I jumped out of bed. I wake up earlier without an alarm clock. It's great. I always woke
up lethargic and like a zombie, with no motivation to get out of bed. Now that I think
about it, it has not happened once. I literally wake up ready to face my day. It is a truly
unique experience.
My attention and concentration are really good. But I discovered that I have to
configure alarms, otherwise it is very easy for me to let myself be carried. Yesterday I
had to get together for lunch with friends but I was very absorbed in the work.
Without the alarm, he would no doubt have continued to work during lunch.
My stress levels also seem reduced. I do not know if this is related or not, because I
have not been so stressed since I started this. So, I do not know if it's thanks to the pill
that I'm not stressed or not.
Week three
I think about my results at the end of this week and I realize this is the best! Well done.
I'm very happy right now. I keep smiling. I'm always on. I'm always in control.
Yesterday at work we had a delivery of an important project that we were not going to
get and I was the only one who kept control of the whole team, including my boss. I
literally feel that I am dominating my emotions. I continue to feel an increase in my
concentration and my memory is more acute than ever.
About the third week of consuming any supplements, I would expect the effect to be
over for my body getting accustomed to the ingredients. But my energy levels have not
been reduced at all.They remain constant throughout the day. I no longer feel the
desire for an early afternoon nap.
Week four
After the fourth week, my final results were surprising. My memory is clear as the blue
sky, and my levels of attention and concentration have soared. While my test is over,
with the results I have experienced over the last month I will obviously continue to
consume BrainPlus IQ, if possible. My boss and my colleagues noticed my improved
performance and I received a special bonus for leading the team to the delivery of the
project I had in week 3. You can not ask for more than that!
As for side effects: none, but you have to configure alarms to remind you of other
tasks that you must perform. You can be easily absorbed in a project that you are
passionate about.

If you have any interest at all in diet, obesity, public health, diabetes, epidemiology,
your own health or that of other people, you will probably be aware that sugar, not
fat, is now considered the devil's food. Dr Robert Lustig's book, Fat Chance: The Hidden
Truth About Sugar, Obesity and Disease,for all that it sounds like a Dan Brown novel, is
the difference between vaguely knowing something is probably true, and being told it
as a fact. Lustig has spent the past 16 years treating childhood obesity. His meta-
analysis of the cutting-edge research on large-cohort studies of what sugar does to
populations across the world, alongside his own clinical observations, has him credited
with starting the war on sugar. When it reaches the enemy status of tobacco, it will be
because of Lustig.
"Politicians have to come in and reset the playing field, as they have with any
substance that is toxic and abused, ubiquitous and with negative consequence for
society," he says. "Alcohol, cigarettes, cocaine. We don't have to ban any of them. We
don't have to ban sugar. But the food industry cannot be given carte blanche. They're
allowed to make money, but they're not allowed to make money by making people
sick."

Lustig argues that sugar creates an appetite for itself by a determinable hormonal
mechanism a cycle, he says, that you could no more break with willpower than you
could stop feeling thirsty through sheer strength of character. He argues that the
hormone related to stress, cortisol, is partly to blame. "When cortisol floods the
bloodstream, it raises blood pressure; increases the blood glucose level, which can
precipitate diabetes. Human research shows that cortisol specifically increases caloric
intake of 'comfort foods'." High cortisol levels during sleep, for instance, interfere with
restfulness, and increase the hunger hormone ghrelin the next day. This differs from
person to person, but I was jolted by recognition of the outrageous deliciousness of
doughnuts when I haven't slept well.
"The problem in obesity is not excess weight," Lustig says, in the central London hotel
that he has made his anti-metabolic illness HQ. "The problem with obesity is that the
brain is not seeing the excess weight." The brain can't see it because appetite is
determined by a binary system. You're either in anorexigenesis "I'm not hungry and I
can burn energy" or you're in orexigenesis "I'm hungry and I want to store energy."
The flip switch is your leptin level (the hormone that regulates your body fat) but too
much insulin in your system blocks the leptin signal.
It helps here if you have ever been pregnant or remember much of puberty and that
savage hunger; the way it can trick you out of your best intentions, the lure of
ridiculous foods: six-month-old Christmas cake, sweets from a bin. If you're leptin
resistant that is, if your insulin is too high as a result of your sugar intake you'll feel
like that all the time.
Telling people to simply lose weight, he tells me, "is physiologically impossible and it's
clinically dangerous. It's a goal that's not achievable." He explains further in the book:
"Biochemistry drives behaviour. You see a patient who drinks 10 gallons of water a day
and urinates 10 gallons of water a day. What is wrong with him? Could he have a
behavioural disorder and be a psychogenic water drinker? Could be. Much more likely
he has diabetes." To extend that, you could tell people with diabetes not to drink
water, and 3% of them might succeed the outliers. But that wouldn't help the other
97% just as losing the weight doesn't, long-term, solve the metabolic syndrome the
addiction to sugar of which obesity is symptomatic.

Many studies have suggested that diets tend to work for two months, some for as long
as six. "That's what the data show. And then everybody's weight comes roaring back."
During his own time working night shifts, Lustig gained 3st, which he never lost and
now uses exuberantly to make two points. The first is that weight is extremely hard to
lose, and the second more important, I think is that he's no diet and fitness guru

himself. He doesn't want everybody to be perfect: he's just a guy who doesn't want to
surrender civilisation to diseases caused by industry. "I'm not a fitness guru," he says,
puckishly. "I'm 45lb overweight!"
"Sugar causes diseases: unrelated to their calories and unrelated to the attendant
weight gain. It's an independent primary-risk factor. Now, there will be food-industry
people who deny it until the day they die, because their livelihood depends on it." And
here we have the reason why he sees this is a crusade and not a diet book, the reason
that Lustig is in London and not Washington. This is an industry problem; the obesity
epidemic began in 1980. Back then, nobody knew about leptin. And nobody knew
about insulin resistance until 1984.
"What they knew was, when they took the fat out they had to put the sugar in, and
when they did that, people bought more. And when they added more, people bought
more, and so they kept on doing it. And that's how we got up to current levels of
consumption." Approximately 80% of the 600,000 packaged foods you can buy in the
US have added calorific sweeteners (this includes bread, burgers, things you wouldn't
add sugar to if you were making them from scratch). Daily fructose consumption has
doubled in the past 30 years in the US, a pattern also observable (though not identical)
here, in Canada, Malaysia, India, right across the developed and developing world.
World sugar consumption has tripled in the past 50 years, while the population has
only doubled; it makes sense of the obesity pandemic.
"It would have happened decades earlier; the reason it didn't was that sugar wasn't
cheap. The thing that made it cheap was high-fructose corn syrup. They didn't
necessarily know the physiology of it, but they knew the economics of it." Adding sugar
to everyday food has become as much about the industry prolonging the shelf life as it
has about palatability; if you're shopping from corner shops, you're likely to be eating
unnecessary sugar in pretty well everything. It is difficult to remain healthy in these
conditions. "You here in Britain are light years ahead of us in terms of understanding
the problem. We don't get it in the US, we have this libertarian streak. You don't have
that. You're going to solve it first. So it's in my best interests to help you, because that
will help me solve it back there."

The problem has mushroomed all over the world in 30 years and is driven by the
profits of the food and diet industries combined. We're not looking at a global
pandemic of individual greed and fecklessness: it would be impossible for the citizens
of the world to coordinate their human weaknesses with that level of accuracy. Once
you stop seeing it as a problem of personal responsibility it's easier to accept how
profound and serious the war on sugar is. Life doesn't have to become wholemeal and
joyless, but traffic-light systems and five-a-day messaging are under-ambitious.

"The problem isn't a knowledge deficit," an obesity counsellor once told me. "There
isn't a fat person on Earth who doesn't know vegetables are good for you." Lustig
agrees. "I, personally, don't have a lot of hope that those things will turn things
around. Education has not solved any substance of abuse. This is a substance of abuse.
So you need two things, you need personal intervention and you need societal
intervention. Rehab and laws, rehab and laws. Education would come in with rehab.
But we need laws."
The Obamas hate him, he says, because they don't want to fight the industry. "They've
got a lot of enemies. I'm not mad at them. I actually kind of like them." On paper,
Lustig is absolutely livid. "In America we have this thing, it's called the Declaration of
Independence. We are entitled to life, liberty and the pursuit of happiness. It doesn't
say a damned fucking thing about the pursuit of pleasure." But he has seen how it
worked with tobacco. It took a long time, he says, but industries can't poison people
en masse for ever.
"We have to do something about it, or there will be no healthcare. In fact, there will be
no society. Are you ready for that? That's what's gonna happen. It's just not OK. There
will be no money left for anything else."
His predictions for world health are apocalyptically pessimistic. Yet in his bearing, he
has the deep-rooted optimism of a person who knows the fight is worthwhile, and
believes that, in the end, he'll win it.
