Scope:
Themillingprocessremovestheouterlayers(bran)frombrownrice,resultinginawhiteorpolishedrice
fraction,alsoknownasmilledrice.
Principle:
Ricemillsremovethebranfrombrownricebyabrasionand/orfriction.Duringtheprocess,bran
materialisexpelledfromthemill,whilethericekernelsareretainedinsidethemillingchamber.Degree
ofmillingisevaluatedbyvisualinspection,fromwellmilledtoundermilled,accordingtoUSDA
definition.

McGill#2RiceMill,RAPSCO,Brookshire,TX
Materials:
Brownrice
Vesselforcollectingbranandmilledricefractions
Vacuumcleaner,metalspatulas,andwirebrushesforcleaningmill
ProcedureAMillingtherice:
NOTE:Beforemillingsamplerice,itisnecessarytowarmthemillbyrunningdummybrownrice
(obtainedbydehullingdummyroughrice)throughittwotimes,accordingtotheinstructionsbelow.
Oncethemilliswarmedup,itmustbecleanedthoroughlybetweeneachsample.
1. Beginwithacleanmillandworksurface,freeofpowder,residues,andricekernels.
2. Recordinitialweightofthebrownricesample.
3. Placeapanunderthemillingchambertocollectthebran.
4. Lockthemillingchamberinplacebyliftingthelevertotheuprightposition.
5. Positiontheflexiblemetalcoveroverthemillingchamber.
a. Thelongerofthe2sidesmustbeplacedontherightsideofthechamber.
b. Leaveanapproximate2inchopeningbetweenthetopcurveofthecoverandthe
chamber,inordertoloadrice.
6. Pourthebrownricesampleintothemillingchamberandlowerthecoversothatitisfirm
againstthechamber.
7. Fastentheweightleveroverthecover,ensuringthatthe1.5kgweightisplacedapproximately
15cmawayfromthemillingchamberontheflatend.
8. Settimerto30s.
9. Presstheredbuttonatcenteroftimertostartthemill.
10. Afterthe30smillingprocessiscomplete,removetheweightlever.
11. Discardthebranfromthepanandreplacethepanunderthemillforcollectionofmilledrice.
12. Afterthemillingprocessiscomplete,butbeforethecoverhasbeenremoved,useavacuum
cleanertoremovethepowderthathascollectedinthegroovesoutsidethemillingchamberand
onthesurfaceofthecover.
13. Gentlyliftthecoveroffofthemillchamber,applyingpressuretobothsidesinordertoprevent
aspringingactionthatcouldthrowricekernels.Beforeremovingthecovercompletely,usethe
backofabrushtoknockthekernelsthathavestucktothetopsurfaceintothepan.
14. Unlockthemillchamberandemptytheremainderofthemilledriceintothecollectionpanby
turningthechamberupsidedown.Itmaybenecessarytoplaceahandattherightsideofthe
chambertodirectthekernelsintothepan.Usespatulasand/orbrushestoscrapekernelsoffof
thescreenandallsidesoftheroller.Takecaretoretrieveallricekernelsfromthemillchamber.
15. Placethemilledriceintotheaspiratorfor3minutestoremoveanyremainingdustor
particulatematter.RefertoProcedureBforinstruction.
16. Recordfinalweightofthemilledricefraction.
17. Betweensamplesandfollowingthelastsampleoftheday,itiscriticaltothoroughlycleanthe
millandcover.RefertoProcedureCforinstruction.
ProcedureBBlowingthemilledriceusingtheGrainAspirator:
1. Placemilledriceintothebottomportionofthegrainblower.
2. Insertthelongertopsectionofthetubeintothebottomsection.
3. Placetheentiretubeovertheblowingport.
4. Settimertoblowfor3minutes.Notethattheaspirationcontinuesforafewseconds,even
afterthetimerhassounded.
5. Whenaspirationiscomplete,removetheentiretube(bothsections)fromtheblowingport.
6. Removethetopsectionofthetubeandemptycontentsofthebottomsectionintoabagor
othervessel.
ProcedureCCleaningtheMill:
1. Betweensamples,usewirebrushestoscruballaccessiblepartsofthemill:cover,rollerand
chamber.Thesecontactareasgetoilyfromthelipidsintherice,andmustbecleanedwellin
ordertopreventhardening/cakingoftheresidue.
2. Usedrybristlebrushestoremovetheloosepowderandresiduefromtheseparts.
3. Useavacuumcleanertocleanupalldebrisonandaroundthemill,aswellasinthecollection
pans.
