Chapter 4 : Plant Layout

Kenny Rogers Roasters plant layout is basically based on process oriented layout. There are
three sections in this restaurant which is dining section, front line and back section. Front line is
where they prepare foods and also a food pickup area while back section is a cooking area.
There are times where customers adding on their order, this is why they separate the front line
section near dining section just to make it easier for the waiters to place customers order to the
front liner. To raise the customers comfort level during eating, the cooking section is placed at
the back so that they would not be bothered by the smoke or the smell.

Their table arrangement in the dining or sitting section is mostly based on customers needs and
comfort level. As this restaurant is one open room, it is easier to arrange the floor layout at the
dining section as the anchored seating is possible in every way (against walls, windows or
columns). There are table positioned for couple which arranged to face each other. There are
also tables for family prepared with sofa and an adequate leg and elbow room and leg room.
This also easier for those with bigger body to sit or move around. There is a section at the back
positioned away from the family gathering section and also the chaos of passersby. This section
is prepared for party or event and they usually open this area for those who make a reservation.
As extra information, Kenny Rogers Roasters just added few tables during Ramadhan 2016 due
to so many customers during break fasting time. They currently have 42 tables compared to 20
tables only before.

Before you walk in to this restaurant, there is a set of menu prepared at the door next to cashier
for those who still deciding where or what to eat. The waiters usually greet those who come to
see the menu and welcome them. Most restaurant prefers to place their cashier section at the
center of the restaurant due to safety factor but Kenny Rogers Roasters placed theirs at the
front as there are many people comes and passing by the restaurant.

Kenny Rogers Roasters at Jusco Bukit raja is one of the biggest branch, therefore the
Headquarters decided to put an inferno (a machine use to roast chicken) as a decoration and at
the same time become the signature of this restaurant. Small Kenny Rogers Roasters branches
only use Combi oven and Rotissol.
