ABSTRAK
ABSTRACT
The presence of many fried food sellers can be found in the city of Medan.
some of which were located at the intersection of the highway near the traffic lights,
where it was risk contaminated by lead resulting smoke emission vehicles. Lipophilic
of lead could be attached to the cooking oils. It could indicate an initial source of
lead contamination in the processing of fried foods.
This study aimed to determine the lead levels in the oil before and after fried
process that used fried merchants around the area of traffic lights, also to determine
the behaviors of traders about the air pollution due to motor vehicle fumes.
This study was descriptive research, to know the levels of lead (Pb) in the oil
before and after fried that used fried merchants caused smoke pollution by motor
vehicles around the area of traffic lights in the city of Medan. The object of this study
were 10 points oil samples consist of 5 samples before and 5 samples after fried.
The results of the study showed that there was one sample before frying oils
that were not eligible under the Regulation of BPOM RI No. HK.00.06.1.52.4011
2009, while the other four were eligible. For a sample of oil after fried, all points
were not eligible. Behaviors of traders at five intersections also was still not in
accordance with the principles of food hygiene and sanitation in food processed to
avoid contamination of lead (Pb).
It was recommended to the traders should paid more attention to the
principles of food hygiene and sanitation, the distance of the trade from the traffic
lights, protective / barrier around the frying pan, and the using of cooking oil that
were not repeated because it can harm consumers health. To the Medan City Health
Department was suggested to coach and supervise the fried food trade that were
found sold friend food in the highway intersections.
