Summary of Report on Current Trends
The nutritional guidelines shall be known by ordinary Filipinos to become more
competent and more competitive citizen of our country. The nutritional guide makes the
Filipino aware at the same time, different sectors initiate efforts to maintain the nutrition of
the Filipinos. The Department of Health and the National Nutrition Council creates the ten
kumainments to educate the Filipinos by means of making it a habit to ensure the awareness
in health and nutrition of everyone. There are instances how the nutrition status of every
Filipinos affected like the economic status of a Filipino at the same time it will follow what is
the trend on the market. Today, this generation has a fast-phasing lifestyle so that people
nowadays do not measure the nutritional value but rather it will only select what is appealing
and delicious to what has been perceived by eyes. Manufacturers of food seem to make a
research regarding the acceptability and marketability of the products they produced. For
instance, in the supermarkets, they hire promodizers to promote the products and also there
are some cases especially when a new product produced by the manufacturers, they offer free
samples to the consumers. Since we are in the age of information technology, the producers
utilize the social media as a marketing tool to reach more number of customers due to
widespread and faster information flow and large numbers of viewers compared to other
media even ordinary Filipinos and low-income class can access the world wide web due to
cheaper cost of mobile data usage and more affordable cost of smartphones as well as
computer rentals. Culture is a huge factor how the food become acceptable to the consumers.
There are cases that it shall follow the norms of a particular people group if the food to be
presented will be acceptable to them. Another case also is the religion of people due to some
restrictions in their laws like in Islam, pork and alcohol are prohibited; in Jewish, it shall
follow the Kosher laws and Hindus are restricted in beef due to their views on the holiness of
cows.
In line of this issues, there some made food made for different special needs. Due to
different cultures and religions in different countries, producers made different foods for
different celebrations like Christmas. Christmas is the celebration of the birth of Jesus Christ
in the Christian world. In the Philippines, when Christmas comes, the demand and price for
jamon de bola and keso de bola increases since it is named to become a star of the Pinoy
Krismas. Another thing, the sweet confectioneries and grocery items being in-demand for the
preparation of Noche Buena which is a banquette of foods during the Christmas eve and
also giveaways especially for the children. During New Year celebration, there are also
banquette during the new years eve and the foods being in-demand are kakanin or rice-
based desserts which symbolizes the solidarity of the Filipino family. There are price surge
for the round fruits in the market which shall not be missing on a dinning table since it
represents a good life for a year every month. In different celebrations, there are huge number
of people need to be accommodated like debut, birthday, anniversaries, reunion, etc. Since
then, there are made to order items which has been produced and bulk design for those
involve in food service like 3 kg of tomato sauce for catering and large packs of condiments
designed. There has been also motif aligned in different celebrations like beach wedding,
retro-themed reunions, kiddie birthday, etc. In line of those, caterers also align their foods
according to the motif requested by their customers. The menu also design which according
to the motif of the celebration. Nowadays, the caterers aware what will be the audience for a
celebration and know what will be the special needs of the audience and how they will
address it.
Today, people also aware and watch their diets. There are arise of diet monitoring
applications to watch their calorie intake as well as the activity has undergone to reduce the
calories. Since there is been a high number of cases of lifestyle-related health cases not just in
the Philippines but also it is a worldwide concern. Due to the rise of those numbers according
to the World Health Organization, there are foods specially made for them to address the need
for their illness. Nowadays, there are trends for low calorie, less intake of salt, no cholesterol,
low-fat foods for those struggling with heart-related diseases. In addition, in the house, there
a bill which shall increase the taxation for sugar-sweetened beverages as prescribed by the
World Health Organization (WHO) despite a low number of sugar-related diseases in the
Philippines compared to the ASEAN neighbors. Another thing, different manufacturers vows
to reduce their sugar usage in the future years like Hersheys and Nestle. Food allergy is a big
issue since there are no treatments yet made aside from avoidance of food with allergen
present on it. Regulations are strengthened to ensure that no cross-contamination will occur in
the manufacturing plants in addition of proper information and awareness for the consumers
what will be avoided and the food service also initiate measures in the menus of their
restaurants and food chains. There is also equipment being developed to measure the allergen
content of a certain food for quality assurance and auditing purposes. Food intolerance is a
different issue from food allergens which the body does not have enough enzymes to break
down a nutrient or components. Since then, there is a huge number of cases of lactose
intolerance in the Filipinos so that there are invented lactose-free milk and rise of plant-based
milk which has a similar number of nutrients compared to the conventional milk available to
the market and other nutrient-skimmed in the market.
Due to lifestyle-related diseases, there are more engaging to the active lifestyle so that
sports nutrition becomes a trend nowadays. The obese now wanted to become more hunk and
achieve the six-pack abs nowadays and they aware that being fit results in more healthy and
more beautiful figure that build self-esteem and more confident. In the gyms, there are sports
supplements being sell like whey and protein supplements design for bodybuilders. Not only
bodybuilding foods can be a trend but also replenishment and recovery foods like sports
drinks to replace the electrolyte and energy loss during activity. Energy providing foods shifts
slowly with dairy which provide sufficient amount of protein as well as energy loss. Diet
program will arise according to the need of a consumer as well as technology related to the
diet.
But then the population rapidly grows but the production of food does not. Since
then, the distribution how it will spread equally until in the poverty line. Another thing, the
land distribution gradually decreases due to the conversion of agricultural lands to residential
lands, therefore, there is insufficient food production occurs in the third world countries
including the Philippines. In the third world countries especially in the poverty line still uses
traditional methods of agricultural tools and equipment which has slower production and
lower yield of crops yet it has lower risk on environment and health. In the evolution of
technology, the tools, and equipment for farming has been revolutionized throughout the time
like rice hull separator, a tractor from using sleigh pulled by a buffalo and much more. Since
malnutrition is a major concern, it has been addressed through revolutionized farming which
results in faster yield production to feed a high number of the population like the
development of golden rice and other Genetically-modified Organisms (GMOs), 30-day old
chicken, enlargement of tomatoes and fortification of different crops. In contrast of that, it has
many concerns regarding environment and health. Another thing, the organic foods arises as
the belief that it is healthy compared to the conventional crops which normally bought from
the market but then it is much expensive so that only few can afford to buy organic crops.
To open opportunities in the poverty line nowadays, the government provides subsidy
and loans for creating micro and small-scale enterprises that will give livelihood and become
more productive and raise their life to middle-class incomes. The Department of Science and
Technology (DOST), as well as different universities, provides the technology needed in the
countryside that will help to improve their enterprises and cooperative to become more
competitive in the market. Today, the small and medium scale enterprises (SMEs)
contributes larger in the economy rather than multinational companies (MNCs).
Since there are trends which there is a huge number of attendees in an event and then
there are arise of themed-events so that there is an increase of trends in the catering service
and nowadays the food service seems to become cheaper than before. Catering service must
have proper planning and coordination to the client what he/she wants for the guests.
However, it shall also be check by authorities whether the caterers follow the sanitation code
and other rules and regulations implemented by health authorities. They shall avail labor-
saving devices to conserve the energy.
ASEAN is predominantly Islamic country except for the Philippines which is a
Christian-dominant country but there are Muslim settlers in the Southern part of the
Philippines. Today, Islam is the second largest religion behind Christianity. Since there are
increasing in members of Islam in the world, there shall establish Halal standards for a
country and it shall be harmonized to the international Halal standards to reach more
consumers in the international market. The manufacturers nowadays complied with Halal
regulation that gains more consumers. Not only Islams are benefited but also Christians
which has been engaged in the healthier side rather than conventional preparations.
Since there is been the rise of the use of social media, there are widespread of
photographs in different social media like Facebook, Twitter, and Instagram. Since then, it
has been used as a marketing tool for different establishments like the restaurant business.
There is been increasing number of blog related to foods that attract many viewers which it
creates an opportunity for the bloggers that their blog sites being a medium of
advertisements. A creative photograph needs certain conditions of environment that makes
the photograph better. It shall have reflectors, tungsten light, a plain background and flash to
arrange the lighting and shadows of the object. In the object side, it shall have a proper
arrangement of garnish and proper positioning of the object in the plate. The garnish must
have a contrast to the main food to give emphasis to the object. After all, it will create a
mouth-watering appeal for the viewer of the photograph that can be used as a marketing tool
for a certain product. The food styling becoming a fad for the advertisers to reduce the cost
rather than using real foods for photography. In the food styling, it used different artificial
things that will prolong the style of food to be used.
The trends in the food industry are fast-phasing due to fast-moving of the lifestyle of
people nowadays. There will rise in technology aside from that, the taste is changing over the
times. We, the food technologists must be aware in the trend to stay in the industry.
