Research on My Professor

My professor is Taylor C. Wallace. He teaches us Nutrition. He is an Affiliate

Professor in the Department of Nutrition and Food Studies at George Mason University

[1]. He got his Doctors and Masters degree in Food Science and Nutrition from Ohio

State University and Bachelor's degree in Food Science and Technology from the

University of Kentucky [1]. He is also the Principal Consultant at the Think Healthy

Group [1]. He served as the Senior Director of Science Policy and Government Relations

at the National Osteoporosis Foundation and the Senior Director of Scientific Programs at

the National Bone Health Alliance [1]. Since he focused on Food Science from his

undergraduate program and participated in these organizations, he has become an expert

in Food Science.

Professor Wallace has published 3 textbooks and over 30 peer-reviewed papers [1].

His fourth textbook is scheduled to publish in 2018 [2]. The journals he has published in

include Journal of Food Science, Advances in Nutrition, Journal of the American College

of Nutrition, Nutrients and some other journals [1]. In the early years, he mostly focused

on the digestion process and the extract of some chemical compositions in food [2]. For

example, Extraction and normal phase HPLC-fluorescence-electrospray MS

characterization and quantification of procyanidins in cranberry extracts [2]. After

several years, he changed his attention to the intaking of nutrients, especially supplements

[2]. There are articles such as Twenty years of the Dietary Supplement Health and

Education Act How should dietary supplements be regulated? [2]. Recently, he


especially focuses on the relationship between nutrients and bone health [2]. He has

published several articles about it, such as New frontiers in fibers: innovative and

emerging research on the gut microbiome and bone health. [2]. His research interests are

in the area of nutritional interventions, especially micronutrient and dietary bioactive

components, to promote health and prevent the chronic diseases [1]. He worked on all the

research and has found out some relations between nutrition and some diseases. These

achievements make him become a good scholar in this field. In addition, he manages and

operates a large food and nutrition blog. Because nutrition is a kind of science that is

really related to peoples daily life, he provides nutrition, food safety, and food

technology information to the general public on his blog [2]. It is what a scholar in

nutrition should do. As a result, he can get attention from the public. With the

development of nutrition, today people more focus on the relationship between nutrition

and specific diseases. It can be a direction for me.
