A. This manual has been compiled in accordance with the requirements set out in
specification ATA 100. It is intended for provision of such data as in necessary for an
approved repairer to return an unserviceable Oven Assy to a serviceable condition.

1. GENERAL
A. This manual provides descriptive information, specific shops maintenance procedures and
illustrated parts list, applicable to oven basic part number 8201.

B. The ovens are designed to reconstitute frozen food and to maintain it at its desired
temperature.
CAUTION: DO NOT PUT DEEP-FROZEN FOOD INTO THE HOT OVEN!
REASON: AN IMPLOSION OF THE INTERIOR OVEN HOUSING CAN BE THE CONSEQUENCE!
C. The oven is manufactured to close tolerances and tooled to insure uniformity and
interchangeability between parts and units. Quality control is conforming to health
requirements and inspection essential to airplane equipment specifications.
Stainless steel and high quality materials have been used to provide long service and
ease of cleaning under all inflight conditions.

2. DESCRIPTION
A. Oven General Setup
(1) The oven consists of a double walled insulated casing and an oven door.
(2) The electrical heating elements, blower assy, temperature sensor and overheat
cutoff switch are mounted to the oven cavity rearwall.
(3) An airflow insert which is slid into the oven, holds the entree shelves and
provides even distribution of the recirculated air.
(4) Oven connector and wiring are installed to rearwall of oven outer casing.
The electrical components are installed to oven rearwall and in the oven control
module.
(5) The oven control module is installed on top of the oven.
(6) Alignment bolts are provided in the lower section of the rearwall, for oven
attachment and correct interfacing with the galley compartment.
CAUTION: THE MAXIMUM SCREW TORQUE VALUE IS 70 KPCM (61 LBSIN).
B. Principal Features
(1) Oven casing
(a) The oven casing consists of the outer casing, the insulated inner casing and
the front frame.
(b) The outer casing is a riveted assy of aluminum alloy sheet.
(c) A recess with handle for carrying is provided on top of the oven.
(d) The inner casing is a formed and spot-welded stainless steel sheet assy
wrapped in insulating material.
(e) Front frame
1 The front frame forms the structural closure between the inner and outer
casing simultaneously keeping the door seal in position.
2 The front frame is made of lacquer coated plastic material.

(2) Door assy
(a) The door assy consists of the insulated outer panel, the inside
plate and the door latch.
(b) The inside plate and latch parts are made of stainless steel except the door
handle which is made of lacquer coated plastic material.
(c) Outer panel
1 The outer panel is made of lacquer coated plastic material.
(3) Control module
(a) The control module accomodates all major electrical components for the
oven. It is spot-welded assy, made of plastic coated aluminum.
(b) A control panel is mounted to the front of the control module.
(c) A receptacle interfacing with the oven is located in the rear plate of the
control module.
(d) The control panel contains the following electrical components:
1 Socket outlet (fed up to 1000 W at 115 V AC only).

(Control module PN 8201-01-4000 and PN 8201-51-4000 only.)
2 Switch (oven on-off-outlet; vesp. ON-OFF).
3 Timer.
4 Illuminated switch for temperature setting including indiactor for

adjusted temperature and cycle light.
(e) In the control module are installed:
1 Relay for blower assy.
2 Relay for heating elements.
3 Terminal board and ground studs.
(4) The electrical installation of the oven consists of the following details:
(a) Connector for power supply mounted in the middle of the lower section
on the oven rearwall.
(b) Connector for control module mounted in the upper installation area behind
the control module.

(c) Heating elements mounted to the oven rearwall.
(d) Blower assy mounted to the oven rearwall.
(e) Overheat cutoff switch mounted in the left upper part of the sidewall.
(f) Thermostat mounted to the left sidewall.
(g) Terminal boards are mounted to the oven rearwall.
(h) Wiring in compliance with the wiring diagram and grouped in a wire bundle
acordingly.
(5) Blower assy
(a) The blower motor is an internally ventilated threephase asynchronous motor.
(b) Operating data: 115/200 V; 400 Hz

190 W at 7300 RPM.
(c) The blower assy is mounted to the rearwall of the oven cavity and connected
with a wire bundle to the oven wiring.
(d) For further details and illustrated parts list refer to manual 25-35-95 or
25-36-51 or 25-36-62.
(6) Heating elements
(a) Two, three filament heating elements are provided on the cavity rearwall of
the oven. Power is 3 times 610 watts at 115 volts per element.
(b) Power terminal connection for the heating elements passes through the cavity
rearwall and the rearwall of the outer casing to the terminal board.
(7) Overheat cutoff switch
(a) The overheat cutoff switch is installed on the rearwall of the oven cavity
and cuts off power in case of oven overheating.
(8) Airflow insert
(a) The airflow insert is a welded aluminum assy. The cutouts in the insert are
designed, in conjunction with the entree shelf configuration, to provide
uniform distribution of the recirculation air.
(9) Vapour outlet
(a) A vapour outlet is provided in the lower section of the door.

3. OPERATION
A. General
(1) Heat transfer to the food is accomplished by recirculation of electrically heated

air. Two air circulation schemes operated by a common blower assembly are
utilized.
(2) Recirculation of oven cavity air
The circulation fan generates an airflow or steam to which the food, to be recon-
stituted is exposed with optimum distribution via the airflow insert.
The funnel at the rear side of the airflow insert collects and directs the
circulated air to the circulation fan. From the circulation fan the air passes
over the nergized heating elements and is directed to the entrees by means of a
specially designed airflow insert.
(3) Cooling air
The cooling air, required for cooling the motor, is circulated by the motor fan
(inner). The cooling air is sucked in, on both sides of the control module,
through holes and slots in the room behind the oven and is exhausted by the
airplane ventilation system.
B. Operating Modes
CAUTION: DO NOT OPERATE EMPTY OVEN.
(1) Reconstitution mode (refer to fig 118, "temp. LOW")
(a) During reconstitution the deep-frozen food is warmed up from a nominal

temperature of -18° (0°F), deep frozen; or 6°C (43°F), chilled, to the
necessary serving temperature.
(b) Upon initiation of the reconstitution cycle, the blower and heating elements
are energized.
(c) When the reconstitution temperature is achieved, the heating elements

are switched off and on by thermostat via relay as required to maintain a
constant mean temperature.

(2) Grill mode (refer to fig 118, "temp. HIGH")
CAUTION: DO NOT OPERATE EMPTY OVEN AT A TEMPERATURE OF 230°C.
(a) The grill mode is provided, to grill steaks - or other - from a nominal tem-
perature of +2°°C (+35°F).
(b) During the grill mode the heating elements are switched off and on by
thermostat as required to maintain a constant mean temperature.
C. Door Latch Mechanism
(1) Latch general setup
(a) The door latch is a spring loaded latching linkage which engages into the
strikes in the lower and upper supports. The operating knob is installed on
door front side.
(2) Opening of the door
(a) By turning operating knob in LH direction latching linkage will disengage

from the strikes and the door can be opened.
(3) Closing of the door
(a) Slam door lightly to close. The linkage will engage into strikes.
The knob must manually be put into vertical position in order to achieve
secure latching.
D. Overheat Protection (Manual Reset)
(1) The overheat cutoff switch installed on oven rearwall, switches off heating
elements at thermostat malfunction. The oven must be removed, the malfunction
be remedied and the overheat cutoff switch be reset.

A. General

CAUTION: TO REPEAT DIELECTRIC TESTS ONLY 80 % OF SPECIFIED VOLTAGE MAY BE USED.
CAUTION: MAX. FAULT CURRENT ALLOWED MUST NOT EXCEED 2.0 MILLIAMPERES.
(1) Dielectric test at 1000 V AC
Dielectric test is performed with each wire in each wire bundle against all other
wires in the bundle and against the oven structure.
Max. fault current allowed must not exceed 2.0 milliamperes.
(2) Dielectric test at 1500 V AC
Dielectric test is performed with each wire in each wire bundle against all other
wires in the bundle and against the oven structure.
Max. fault current allowed must not exceed 2.0 milliamperes.
(3) Insulation resistance test
Insulation resistance measuring device used at 500 V DC is a hand crank generator

or battery operated device. Insulation resistance is measured between each
wire in each wire bundle against all other wires in the bundle and against the
oven structure.
NOTE: The insulation resistance must be a minimum of 200 megohms for each wire.
(4) Electrical bonding test (static ground measurement)
At maintenance- and modification work it must be taken care that the requirements
of the airplane manufacturer will be fulfilled.

B. Test Preparation

(1) Remove bulbs (16) from illuminated switches (15, 8).
(2) Activate timer (7).
(3) Set oven main switch (9) to OVEN (wiring diagram fig 116).

1. GENERAL
A. Procedures are provided for removal of major subassemblies from the oven casing and for
disassembly and component removal of the oven casing.
NOTE: Refer to TESTING AND FAULT ISOLATION for operational test and fault isolation to
establish most probable cause of malfunction and the extent of disassembly
required.
2. OVEN REMOVAL FROM GALLEY UNIT
A. Remove the two screws (1/4-28UNF3B thread) in the front area, work from compartment
below oven or the two screws (NAS604 or NAS564) from the front respectively.
3. MAJOR SUBASSEMBLIES - REMOVAL
A. Door Assy (30)(Refer IPL, Fig 1 and Fig 1A)
(1) Open door.
(2) Insert screwdriver into hole in upper door hinge area. Force down
hinge bolt, slightly tilt door from oven and lift out from lower
hinge hole.
(3) Remove washer (45), stops (35, 40) and lock washer (50) from door.
B. Control Module Assy (10)(Refer IPL, Fig 1 and Fig 1A)
(1) Loosen fasteners (15).
(2) Pull out control module assy (10) from oven casing.
C. Airflow Insert (20)(Refer IPL, Fig 1)
(1) Lift airflow insert (20) and withdraw from oven.

(1) Loosen fasteners (325) with rings (70) and take off cover assy (55).
(2) Pull off sealing strips (60, 65) from cover assy (55).

(230) and withdraw blower assy (220) from oven rearwall.
H. Blower Assy (215)(Refer IPL, Fig 1A)
(1) Disconnect electrical lines from blower assy (215)
(2) Remove hexagonal nut (245), spring washer (250), gasket (255) and withdraw
circulating fan (240) from oven interior.
(3) Remove pan-head screws (235), washers (236) spacers (220, 230) and shock mounts
(225) and withdraw blower assy (215) from oven rearwall.

4. COMPONENT REMOVAL AND DISASSEMBLY FROM MAJOR SUBASSEMBLIES
A. Door Assembly
(1) Door assy (refer IPL, fig 2)
(a) Remove pan-head screw (35B), knob (30B) and washer (150) from door assy
(-1B) and remove ball catches (80) from knob (30B).
(b) Remove bushing (135) and vapour outlet (130) from door assy (-1B).
(c) Remove countersunk screws (15) and inside plate (10) from outer panel
(-5B).
(d) Remove insulating material (20, 125), countersunk screws (45) and insulating
disk (25).
(e) Remove lock washer (160), teflon washer (175), bolt (50) and rods (55) from
outer panel (-5B).
(f) Remove pan-head screws (75), bars (60), washers (70) and springs (65) from
rods (55).
(g) Remove countersunk screws (45), bushing (85) and washer (155) from outer
panel (-5B).
(h) Remove pan-head screw (100), setscrew (90), hinge bolts (95, 110) and
springs (105, 115).
B. Door Seal Removal (Refer IPL, Fig 1 and Fig 1A)
(1) Pull off door seal (170 fig 1, 160 fig 1A).
NOTE: Start at joint.
C. Electrical System (Refer IPL, Fig 3)
(1) Wire bundle
(a) Disconnect wires from ground stud assy (65).

CLEANING
1. GENERAL
A. Thorough cleaning is essential after every flight to meet public health requirements,
prevent corrosion and to ensure satisfactory operation.
Thorough cleaning is also an essential prelude to inspection to determine the existence,
extent and exact location of defects.
B. Clean especially all recessed parts of the oven. Deposits of food, spilled liquids,
etc., are quite likely to be missed in nooks and crevices and thus allowed to build up
and act as cultures for bacteria and mold spores. Therefore, thorough cleaning and ste-
rilization is extremely important also during maintenance.
C. Cleaning is also an extremely important overhaul function for light metal parts that are
exposed to repeated wear, minor nicks, scratches and acids in the form of liquid or
vapors.
D. Cleaning Intervals

(a) Clean surfaces with IDEAL FLUESSIG.

Application: 95 parts of water and 5 parts of IDEAL FLUESSIG.

1. GENERAL
A. Perform all checks according to the intervals shown in figure 501.

Record all damages detected in order to retrace the frequency and in some cases the
reason and/or source. All damages detected must be repaired immediately.
B. Visually check all parts, minor assemblies and electrical system and water installation
for the following criteria:
(1) Damage.
(2) Unobjectionable attachment.
(3) Corrosion and surface protection.
(4) Wear.
(5) Unobjectionable sealing.
(6) Attachment of electrical wires and components.
C. Use a strong light and preferably some means of magnification.

Use an inspection mirror in order to examine all exposed surfaces.
D. Use only tools being in good condition and of appropriate size.
E. All repairs must be performed by skilled personnel, who, if no physical values are
available, can still judge the condition.
F. Damages which are unmistakeably traceable to material or manufacturing errors must be

reported to the oven manufacturer immediately.
G. Inspection and the following maintenance or overhaul must be performed according to the
requirements in figure 501.

B. Repair
(1) In case of wear or damage most components will not be repaired but replaced.
(2) Remove minor scratches, nicks, pitting or corrosion from metal parts by polishing
with abrasive cloth 220 grit or finer. Refinish as necessary for surface
protection.
(3) Remove minor defects from thread with small triangular file or thread chaser.
(4) Minor deformations can be eliminated by flattening and straightening.
(5) Deformations and/or damages on air baffle must be removed by straightening and/or
welding.
NOTE: In case of large damages air baffle should be replaced.
(6) In case of damages on powder coated surfaces, roughen damaged area by grinding and
apply spray PN 553204-452406.
(7) In case of damages on front frame and door, clean and raughen damaged area by
grinding and apply spray PN MCE6.
C. Replacement
(1) Replace all parts found damaged or worn beyond allowable limits or damaged beyond
repairs noted herein.
(2) Electrical components will be replaced.
(3) Broken or frayed wires be replaced according to wiring diagram fig 115, 115A,
115B, 115C, 115D, 115E, 115F, 116, 116A, 116B, 116C, 116D, 116E and 116F.
(4) Worn parts of the door latch and hinges cannot be repaired. Replacement is
necessary.

(7) Install hourmeter service (335) with washers (310B), pan-head screws (305, 320),
hexagonal nuts (325) and holder (330)(for oven 8210-14/64-0000 only).
(8) Install filter (280) with hexagonal nuts (220) and washers (225).
(9) Install threaded bushings (135), binding cord (125), grommet strips (275) and
shrink hose (285).
(10) Wire bundle
(a) Position wire bundle inclusively plugs (5) and receptacle (10) to rearwall
and top.
(b) Fasten receptacle (10), sealing pins (115) and bracket (155) with pan-head
screws (315) and washers (165, -310A).
(c) Fasten plug (5) with screws (240) and washers (235).
(d) Install pan-head screws (170), washers (165) and hexagonal nuts (180).
(e) Install cable clamps (255, 260, 265) and spacers (270) with pan-head
screws (245, 250) and washers (235).
(f) Connect wires to ground stud assy (65).

(2) Install circulating fan (245) to blower assy (220) and secure with spring washer

(3) Make electrical connection between blower assy (25) and terminal board
(50) and fasten wire bundle with clamp (255), pan,-head screw (245) and washer
(235)(refer IPL, fig 3).
B. Blower Assy (215)(Refer IPL, Fig 1A)
(1) Install blower assy (215) to oven structure and attach with pan-head screws (235),
washers (236), shock mounts (225) and spacers (220, 230).
(2) Install circulating fan (240) to blower assy (215) and secure with spring washer
(250) and heaxgonal nut (245).
(3) Make electrical connection between blower assy (25) and terminal board
(50) and fasten wire bundle with clamp (255), pan,-head screw (245) and washer

B. Attach oven with either two screws 1/4-28UNF3B in the front area, work from compartment
below or NAS604 or NAS564 through oven front into galley unit structure.

5. STORAGE INSTRUCTIONS
A. Packaging
(1) The oven unit should be packed in an ATA 300 category II container for storage and
handling.
NOTE: It is recommended to use category I containers.
(2) Adequate shock absobing material should be provided perticularly for the oven
door.
(3) The oven should be enclosed in a suitable moisture proof wrapping

(e. g. PVC-bags).

DESCRIPTION AND OPERATION

(1) Ovens, with door hinged on PN 8201-11-0000 (PRE SB E33-3-137SB)

(2) Ovens, with door hinged on PN 8201-61-0000 (POST SB E33-3-139SB)

CAUTION: DO NOT PUT DEEP-FROZEN FOOD INTO THE HOT OVEN!

REASON: AN IMPLOSION OF THE INTERIOR OVEN HOUSING CAN BE THE CONSEQUENCE!

(1) Control module designed for PN 8201-01-4000 (PRE SB E33-3-137SB)

(2) Control module designed for PN 8201-51-4000 (PRE SB E33-3-137SB)

A. Oven General Setup

(5) The oven control module is installed on top of the oven.

CAUTION: THE MAXIMUM SCREW TORQUE VALUE IS 70 KPCM (61 LBSIN).
