Squash Casserole

INGREDIENTS
2 ½ lbs. yellow squash
4 tbsp. butter or margarine
2 eggs (beaten)
½ cup evaporated milk (undiluted)
1 cup grated cheese
1 cup coarse Ritz cracker crumbs
DIRECTIONS
Wash squash and cut into ½ inch slices. Cook covered on medium heat in small amount of
boiling salt water. Drain. Mash with fork into coarse pieces. Add beaten eggs, margarine,
milk, cheese and cracker crumbs (save some cracker crumbs and cheese for topping). Place
in well greased casserole dish and top with additional cracker crumbs and cheese. Bake at
325 degrees for 30 minutes.
INGREDIENTS
1 lb. lean ground beef
1 small onion (chopped)
1 8 oz. can refrigerated crescent rolls
1 16 oz. jar spaghetti sauce
2 cup shredded cheese
DIECTIONS
Preheat oven to 350 degree. Brown beef and onion in large saucepan. Once
brown, drain fat and stir in spaghetti sauce. In a 9 x 13 baking dish, spread
a layer of sauce. Top with half the cheese. Add another layer of sauce and
the rest of the cheese. Top with crescent rolls. Bake in preheated oven for 20
to 30 minutes or until rolls are golden brown.
