7-204.11 - SANITIZERS, CRITERIA
Observation: (CORRECTED DURING INSPECTION): Concentration of quaternary sanitizer used at the three
compartment sink for pot and pan washing is 500 ppm or above per test papers. Concentration should not be
above 400 ppm per manufacturer use instructions.
Corrective Action(s): Adjust concentration of quat sanitizer so between 150 and 400 ppm as required by the
manufacturer. Action Taken: Employee added fresh water to bring the concentration to the acceptable range.
Manager plans to contact chemical company to have concentration adjusted for mixing solution.
Code citation: Chemical SANITIZERS and other chemical antimicrobials applied to FOOD-CONTACT
SURFACEs shall meet the requirements specified in 40 CFR 180.940 Tolerance exemptions for active and inert
ingredients for use in antimicrobial formulations (food-contact surface sanitizing solutions).

6-202.14 - TOILET ROOMS, ENCLOSED
Observation: Doors of staff restrooms located in hall off of kitchen are not self-closing.
Corrective Action(s): Provide a self- closing door mechanism on bathroom doors to provide a tight fitting self
closing door. CORRECT BEFORE THE NEXT INSPECTION.
Code citation: Except where a toilet room is located outside a FOOD ESTABLISHMENTand does not open
directly into the FOOD ESTABLISHMENT such as a toilet room that is provided by the management of a
shopping mall, a toilet room located on the PREMISES shall be completely enclosed and provided with a tight-
fitting and self-closing door.
