CHAPTER 1: INTRODUCTION
BACKGROUND OF THE STUDY

Coffee had been in the Philippines since 1740, when a Spanish Franciscan friar

planted the first coffee tree in Lipa, Batangas. But it was During the 1950s, when the

Philippine government, with the help of the Americans, brought in more variety of

coffee. It was also then that instant coffee was being produced commercially thus,

increasing the demand for beans. Because of favorable market conditions, many farmers

went back to growing coffee in the 1960s. Since then, coffee had always been a part of

every Filipino store. It had become a necessity for some Filipinos to consume coffee at

least once a day. However, there is one innovation that is slowly dying but still has a big

opportunity to gain back its lost market. This is a native recipe from Ilocos Norte.

Long before we had it in instant packs, there was a time when our ancestors made

coffee from roasted rice. The origin of rice coffee is said to go way back in the early

years of World War1. Filipinos back then had to survive on low budget and lack of

resources, pushing them to come up with a cheaper alternative to coffee beans. The idea

to sell rice coffee began as a means of extra income for the farmers and their families.
