4-302.14 - SANITIZING SOLUTIONS, TESTING DEVICES
Observation: No quat test kit is available to monitor the concentration of the quat sanitizer used at the three
compartment sink and in wiping cloth buckets.
Corrective Action(s): Provide a quat test kit or other device for measuring the concentration of quat sanitizing
solutions. Correct By: 30-Apr-2018
Code citation: A test kit or other device that accurately measures the concentration in mg/L of SANITIZING
solutions shall be provided.
5-202.12 (A) - HANDWASHING SINK, INSTALLATION
Observation: The front most hand sink (next to the service counter has the hot water shut off due to major leak
from water line. NOTE: Another hand sink is available approximately 10 feet away. Employees are
demonstrating correct handwashing using the other two kitchen hand sinks where hot water is available.
Corrective Action(s): Repair leak and turn on hot water at hand washing sink so that a water temperature of at
least 38°C (100°F) through a mixing valve or combination faucet is available. Require employees to continue to
use the other two handwashing sink that have hot water available until the hand sink is repaired. Correct By: 21-
Apr-2018

6-501.11 - PHYSICAL FACILITIES - GOOD REPAIR
Observation: Some wall tiles are missing above the mop sink.
Corrective Action(s): Replace missing wall tiles to provide a smooth, cleanable wall surface. Maintain the
physical facilities so they are in good repair at all times. CORRECT BEFORE THE NEXT INSPECTION.
