Pineapple upside-down cake

Ingredients
 ¼ cup butter or margarine
 1 cup packed brown sugar
 1 can (20 ounces) sliced pineapple in juice, drained and juice reserved
 1 jar (6 ounces) maraschino cherries, drained
 1 package yellow cake mix
 Vegetable oil and eggs

Instructions

Heat oven to 350ªF. Melt butter in 13X9 pan in oven. Sprinkle brown sugar evenly over butter. Arrange
pineapple slices and cherries over top; press gently. Add enough water to pineapple juice to measure
1 ¼ cups. Make cake batter as directed on package –except use pineapple juice mixture instead of the
water. Pour batter over pineapple and cherries. Bake 42 to 47 minutes or until toothpick inserted in
center comes out clean. Immediately turn pan upside down onto heatproof serving plate, leave pan
over cake 1 minute. Serve warm or cool. Store loosely covered.

You Eat What?

Coming to Costa Rica as a tourist or an exchange student is a very exciting and educational experience.
There are many things to see, to do and to experience.

One of the most memorable experiences a person can have is in regard to the food. The Costa Rican diet is
a very starchy and for many tourists this seems strange. Can you imagine eating rice, beans and spaghetti
all on the same plate? Once you get past the everyday carbohydrate shock then comes the really good
“food” like yucca flower. In many businesses in the United States the yucca flower is planted at the
entrance and for only ornamental purposes. This is because it is very easy to care for and can cut down and

Let us not forget the traditional pork tamales. This unusual item is wrapped in layers of banana leaves.
Unless it is unwrapped and served properly on a plate, a tourist is likely just to take a bite out of one corner
of it, leaves and all. It has been done.

Other strange foods are turtle eggs, iguana meat, blood sausage, stomach soup… the list goes on! It is very
important to give tourists all the culinary instructions in order to eliminate the element of surprise, and in
some cases, laughter!

THE COCONUT`S USES


Every culture has used the flesh (a soft moist part of a fruit) and milk of the coconut in its own way. “Not
shy” is one way to describe the coconut milk presence in many stews and dishes. For example, the famous
“rondon” or rundown”, a traditional Afro- Caribbean dish from the Caribbean province of Limón, is usually
made for a large group. “Rondon” is a seafood stew featuring local tubers such as “yucca” (cassava or manioc)
and “camote” (a type of Caribbean sweet potato). The stew is gently simmered and exquisitely spiced with
cinnamon, allspice, ginger, coffee and hot chilies. The Caribbean version of curry, “rondon” is a must when
visiting Puerto Viejo and Cahuita.
Another example of the coconut`s use is rice and beans, Limon´s delicious “gallo pinto”, made with
refreshing coconut milk, different spices and peppers, regularly accompanying baked chicken with coconut
gravy. In other parts of Costa Rica, the coconut is used on sweets and desserts. Look for classic “cocadas”
or delicious “tartaras” which are baked in pastry of coconut and molasses-(thick dark syrup produced by
