ABSTRACT
Anthocyanins are pigments soluble in water which causes red , purple and blue and is
found in many fruits and flowers . Protein is an important component or main component of
animal or human cells . The purpose of this lab is to determine the anthocyanin content by
spectrophotometric method and protein content by the biuret method . 0 % sugar content derived
anthocyanins levels of 6.3815 % and a sugar content of 20% amounting to 4.9468 % . The protein
content of lentils surly amounted to 27.68 % .
