Dear Editor,
As a professional chef, I enjoy your magazine immensely and look forward to its
arrival every month.
In regard to last month's comparison of stainless steel cookware in the Kitchen Test
section, I'd like to offer your readers some advice. Purchase cookware that is constructed
around a copper core, not an aluminum core. Copper distributes heat more evenly. Also,
make sure the copper core is on the bottom and extends up the sides of the pan. This will
result in evenly cooked food. I can't stress the importance of these two features enough.
The right pots and pans will bring a lifetime of good cooking and eating. And what could
be more important than that?
