ABSTRACT

Taken into consideration that the deficiency of micronutrients needed in the diet was a
common problem, the aim of this work was to study the domestic chicken (Gallus
Domesticatus) eggshells and jackfruit (Artocarpus Heterophyllus Lam) seeds as a
substitute of flour at households since eggshells were just insignificantly disposed after
commercial and domiciliary use, and jackfruit seeds were usually dispersed anywhere
or planted just to have a new breed of such. In addition, there is undeniably an
enormous need for vitamins and minerals in both animal feed and human food – such
in the proper quality , quantity and form.

Moreover wheat is a grain product that cannot be grown un the Philippines due to the
climatic conditions; besides, the country is a foreign-dependent sate on wheat. Thus,
the rest of the nation’s wheat need is imported as flour.

The researcher employed two (2) portions of the research; the first part was the
preparation of eggshell powder, while the other part was the groundwork of the jackfruit
seed powder. Washing and peeling, disinfection, sun drying, grinding and sieving
processes were done thoroughly. After such, the products were sealed in two (2)
different containers and were labeled as Powder A and Powder B respectively. Products
were mixed and undergone physical, compositional and functional analysis and
comparison over customary ones to achieve anticipated and modified outputs.

As a result, it can be concluded that it is possible to produce develop natural and


local flour which can easily be done by people without wasting too much money. This
research study can profit and benefit the people in the community.
