In the 1600’s-1700’s, wine was often fortified to survive long voyages at sea. While afloat, casks
of Madeira were naturally heated. The resulting wine developed complex flavors that became
highly prized. Producers then developed techniques to mimic this process. The result is Madeira
as we know it today; one of the most unique and interesting wines in history. George
Washington, Betsy Ross & Thomas Jefferson are among America’s most celebrated lovers of
Madeira. Madeira is very likely the wine which was consumed at the signing of the Declaration
of Independence and at most of the milestones of early American history. Virginia owes the
success of its wine industry to Thomas Jefferson’s attempts to recreate Madeira on his own
estate. In their honor we have curated a collection of rare Madeira dating back over 150 years
and available by the ounce. We encourage you to try one of our recommended flights or take a

PÉTILLANT NATUREL {OR PÉT-NAT, AS THE COOL KIDS CALL IT}
While newly (re)popularized, Pét-Nat actually pre-dates Champagne, making it the OG way to
produce sparkling wine. Pét-Nat is produced in the Méthode Ancestral wherein the wine is
bottled prior to fully completing its first fermentation. As it continues to ferment in bottle,
carbon dioxide is trapped. Unlike Champagne, Pét-Nat is not disgorged (lees removed) and is
rarely filtered. The result is lower alcohol, lightly sparkling, often cloudy, rustic wine.

ORANGE WINE
Most of the color in a wine comes from the skins, rather than the juice. Orange wines are
intentionally darker in color because the winemaker has made a choice to let the white grape
juice ferment with extra skin contact, like they might with a red wine. This extra contact with
the skins of the grapes results in a deeper color to the finished wine and often, a richer flavor
and more texture on the palate. Orange wines can be clean and fruity or very funky and
fun. These are often what people think of when they think of ‘natural wines’.
YELLOW WINE
Yellow wine, or vin jaune in French, is very process driven. These wines are made similarly to
sherry, wherein they age in small barrels after fermentation under voile (or a veil or film of
yeast). This keeps the wine from getting oxidized during a typically longer than usual (often
more than 6 years!) aging process for wines made from white grapes. The finished wines are
similar in style to a fino sherry, without the additional alcohol from fortification. These wines
are slightly nutty in style and often cloudy in the glass.
