granted a new trial.

Tuesday reversed the
conviction of a man
convicted of killing Nelson

Over the last few years, Last House
on the Block has become something of a
misnomer.
Since relocating to the former Masonic
Lodge building in east Columbus in 2013,
the faith-based, sober-living residential
treatment center has expanded to four
houses.
In the past year, LHOB has opened its
third home for men on the property locat-
ed at 206 Tuscaloosa Road while also tak-
ing over Avante House, which had oper-
ated as a residential program for women
who had just been released from prison.
The home on Highway 182, which is cur-
rently home to eight women, now oper-
ates as a sober-living facility called Last
House on the Block Women.
In all, LHOB currently provides so-
ber-living space for 30 people.

Matt Eichelberger of Jackson.
“The jury didn’t have the options
in front of them that they should have
had,” Eichelberger said. “You have a
right to present a theory of defense.

Area counties show strong absentee voting leading up to Election Day

Early signs are pointing to-
ward strong turnout for next
week’s elections, according to
local circuit clerks.
Pat Stanley, a court clerk
with the Lowndes County Cir-
cuit Clerk’s office, said 717
voters have cast absentee bal-
lots by mail and in person as of
Wednesday morning. The same
election in 2014 drew 648 total
absentee ballots.
Lowndes County Circuit
Clerk Teresa Barksdale said
she believes the trend bodes
well for Tuesday’s election.
“We’re anticipating very
good turnout,” she said.
She said interest seems to be
significantly higher than a June
election that included a Dem-
ocratic runoff for next week’s
U.S. Senate election and a Re-
publican runoff for the Third
Barksdale Rook
Congressional District elec-
tion. That election drew turnout
from only 13 percent of voters.
On Tuesday, voters across
Mississippi will cast ballots
for the state’s two U.S. Senate
seats. Locally, voters will se-
lect candidates in the First or
Third congressional districts,
depending on location, as well
as in the 14th Chancery District
for three new judges.
Several other elections are
on the ballot, such as for the
16th Circuit judge seats and
various school board positions
in Lowndes and Oktibbeha
counties. Those races are un-
contested.
In Oktibbeha County, absen-
tee ballots have already surged
well beyond the total for the
same elections in 2014.
Oktibbeha County Deputy
Elections Clerk Sheryl Elmore
said she’s fielded 916 requests
for absentee ballots, both by
mail and in-person. As of Tues-
day afternoon, 733 absentee
ballots had been returned.
The 2014 mid-term election
saw 393 total absentee ballots,
she said.
In-person absentee voting
will remain available through
noon Saturday. Circuit clerks’
offices must receive ballots sub-
mitted by mail by Monday.
Oktibbeha County Circuit
Clerk Tony Rook said if absen-
tee voting is any indication,
Election Day voting also will
exceed 2014 totals.
“We’ve had a huge influx of
absentee voters compared to
the same election that occurred
four years ago,” Rook said. “We
do expect a substantially higher
turnout for this election.”
Rook said the three contest-
ed chancery judge races likely
are major contributors to the
heightened interest. So too, he
said, is the national political
landscape, with three federal
elections on the ballot.
Rook also mentioned two
polling place changes that his
office notified voters of earlier
in the fall. A voting location at
Starkville Fire Station 3 on Gar-
rard Road has moved to Trini-
ty Presbyterian Church at 607
Hospital Road, and the location
at the Humphrey Coliseum on
MSU’s campus has moved to St.
Joseph Catholic Church at 607
University Drive.
Barksdale said there have
been no moves in Lowndes
County, other than the National
Guard Armory precinct return-
ing to its usual location after
having moved temporarily to
Southside Church.
Rook also said he was grate-
ful for his staff’s work in han-
dling the high absentee voter
turnout, while also dealing with
a term of circuit clerk.
“Our entire office has been
working very diligently the
past several weeks,” he said.
“They’ve had to balance the
influx of voters with a term of
circuit court. They’ve all been
working very hard and very
diligently and I’m very proud of
our staff.”

JACKSON — A civil
rights lawyer forced from
a teaching post at the Uni-
versity of Mississippi in
one of the last spasms of
segregationist control at
that Southern university
in the 1960s has died.
Michael Trister died
Oct. 20 in Washington af-
ter battling pancreatic can-
cer, said his wife, Nancy
Duff Campbell. He was 77.
“He always said his
years in Mississippi were
very formative,” Campbell
told The Associated Press
in an interview Tuesday.
Trister made headlines
in 1968 when state offi-
cials forced him from his
Ole Miss law school posi-
tion.

day acquitted a Christian
woman who was sentenced
to death on blasphemy
charges in 2010, a landmark
ruling that sparked protests
by hard-line Islamists and
raised fears of violence.
Chief Justice Mian Saqib
Nisar announced the ver-
dict to a packed courtroom
and ordered Asia Bibi re-
leased. She has been held at
an undisclosed location for
security reasons and is ex-
pected to leave the country.
The charges against
Bibi date back to a hot day
in 2009 when she went to
get water for her and her
fellow farmworkers. Two
Muslim women refused to
drink from a container used
by a Christian. A few days
later, a mob accused her of
blasphemy. She was tried,
convicted and sentenced to
death.

Wilma Earle Walters Brooks,
a loving wife, mother, grand-

passed away in Dallas, Texas on
October 24, 2018.
Mrs. Brooks was born in
Laurel, Mississippi on October
6, 1927, to Winnie Carlisle Wal-
ters and Thomas Earl Walters.
She graduated from George S.
Gardner High School in Laurel, Mississippi and
Mississippi State College for Women (now Mis-
sissippi University for Women).
While in Laurel, Mrs. Brooks was a charter
member of the Laurel Jaycettes, a member of the
D.A.R. and a member of the Girls Cotillion Club.
In Columbus, Mrs. Brooks served on the boards
of directors and held positions at the American
Red Cross and Lowndes County Kidney Founda-
tion. She served as the president and treasurer
of the Milady Garden Club and a reporter for the
Columbus Garden Club Council. She was also
a life member of the Junior Auxiliary, having
served as president, ball chairman and president
of the Crown and Gavel.
Mrs. Brooks was a docent at the Bluette Har-
rison Lee Home and a member of First Baptist
Church. She loved playing bridge and rummikub
with her cherished friends and was an avid Mis-
sissippi State fan.
Mrs. Brooks is preceded in death by her par-
ents; and her husband of 64 years, William Haid-
en (Bill) Brooks;
She is survived by her son, William Haiden
Brooks, Jr. (Ann) of Hendersonville, Tennessee;
daughter, Susan Brooks McCombs (David) of

Jackson businesswoman recounts journey from
South Korea to the United States

In 1975, 18-year-old Jeanhee
Kang arrived in the United States
with $40 in her pocket and hope that
she could make her dreams come
true.
“To get a visa to America from
South Korea at the time was like
winning the lottery,” Kang told the
Columbus Rotary Club at its weekly
meeting Tuesday. “Poor people like
me virtually had to sell (their) soul
to get to it.”
Kang said she had decided at
the age of 5, working on her fami-
ly’s rice paddy in South Korea, that
she wanted to go to high school so
she could one day be a “fat Korean.”
Kang said her family grew up poor
and starving, unable to keep the
rice they grew.
Leeches would cling to her legs
when she worked in the fields. The
polio vaccine hadn’t arrived in her
village and clean drinking water
was “a stretch of the imagination,”
she said.
“I would eat anything that didn’t
eat me first,” she said. “To feed
hunger, I would catch birds, rats,
grasshoppers. ... I remember pull-
ing potatoes out of fresh dirt, fresh
corn off the husk, just to eat to sur-
vive.”
Now Kang is a Jackson resident,
businesswoman and published au-
thor who in 2016 was named a top
10 finalist for Business Women of
Mississippi.
“I cannot imagine what my life
would be like at this very moment
if I had given up my dreams,” Kang
said.
She finally convinced her moth-
er to let her go to school when she
was 6 — either because her mother
was tired of her asking or because
she figured that one day Kang
would send her money from Missis-
sippi so she could make her friends
“super jealous,” Kang joked.
At school, Kang said she didn’t
make good grades and was teased
relentlessly because of her pover-
ty. But she walked the 10 miles to
school every day, including Satur-
days, she said.
At 16, she was kicked out of high
school after having an abortion,
she said, “breaking every taboo in
Korea.” She cared less that she was
no longer considered marriageable
than that she couldn’t go to school
anymore, Kang said. She ended up
working as a prostitute at an Amer-
ican military base, memorizing En-
glish out of dictionaries, until she
could catch a flight to the United
States.
Even in the U.S., her life was
not particularly easy, she said. She
talked about being a single mother
and peddling watches and purses
out of a borrowed car in Mississippi
in the 1980s. Eventually, she said,
the car turned into a booth at a lo-
cal flea market, which turned into a
kiosk at the mall, which turned into
her own store, which turned into
Underground Inc. — a multi-mil-
lion dollar business in Louisiana,
Mississippi, Georgia and South
Carolina that she owned and oper-
ated for 20 years.
Now working in real estate,
Kang is a motivational speaker and
published author, having written
— and re-written and edited — her
memoir, “Meegook: Dry Bones,”
which she signed for Rotarians
after her talk Tuesday. She said
she believed it was God giving her
those dreams in that rice paddy
when she was 5, and God prodding
her mother to “send your crazy
daughter to school.”
“After all that, I finally got to
have a beautiful house with a real
window,” she said, “and I got to eat
plenty of white rice, and yes I sent
plenty of cash money to my mama
so she could make all her friends
super jealous.”

Benefits of dual enrollment go beyond finances
This semester, hundreds of
high school juniors and seniors
in Lowndes and Oktibbeha
County are getting a head start
on higher education through
dual enrollment programs.
The idea of allowing high
school students to take college
courses isn’t exactly new -- the
concept has been around since
Minnesota first offered that
option in 1985 -- but has caught
fire in recent years.
In fact, the Golden Triangle
Early High School was found-
ed four years ago with that in
mind. This spring, the majority
of those in the first graduating
class of GTECHS will leave
their campus at EMCC-May-
hew with an EMCC associate’s
degree or a trade skill certifi-
cation.
But the opportunity to earn
college credits is not confined
to GTECHS. There are nearly
300 juniors and seniors taking
dual credit courses in the
Starkville-Oktibbeha County
School District this semester
while 133 juniors/seniors in
the Lowndes County School
District are enrolled in college
courses with another 118 stu-
dents from Columbus Munici-
pal School District enrolled in
those classes.
The benefits to students are
obvious and often focus on the
financial implications of taking
college courses at free or great-
ly reduced costs. For some
students, it can mean saving
the cost of up to two years
of college. That’s no small
savings at a time when the
financial burden of higher edu-
cation continues to shift toward
tuition and away from taxpayer
funding. With the prospects
of facing tens of thousands of
dollars in student loan debt,
families are looking for every
opportunity to reduce costs.
Certainly, dual enrollment is a
good strategy for that.
But the benefits of dual
enrollment aren’t confined to
costs.
There is a powerful psycho-
logical dynamic in play here,
we believe. When a high school
student commits to taking
college courses, it serves to
help the student orient them-
selves toward life after high
school. These college credits
represent “skin in the game”
with regards to continuing
their higher education. There
is nothing more encouraging
in any kind of race than a fast
start, after all. Often, it builds a
momentum of its own.
It helps the student think

We believe that taking college

more mature approach to their

be demanded of them upon
their arrival in college.

believe dual enrollment rep-
resents a major step forward in
education.

aged that our schools have
provided these programs and

couraged that so many of our
students have seized these

to a dozen leaders of the

From restaurants to Capitol corri-
dors, this campaign season we have
seen ugly face-offs between leftist
radicals and Republican senators.
Are we more divided than we have
ever been? Are our politics more poi-
soned? Are we living in what Charles
Dickens called “the worst of times” in
America? Is today worse than 1968?
Certainly, the hatred and hostility,
the bile and bitterness of our discourse, leading a strike of garbage workers,
seem greater now than 50 years ago.
But are the times really worse?
1968 began with one of the greatest
humiliations in the history of the Amer- was called up everywhere and federal

race, accusing the president
who had enacted civil rights
of “dividing the country”
and removing himself from
“the enduring and gener-
ous impulses that are the
soul of this nation.” Lyndon
Johnson, said Kennedy, is
“calling upon the darker
impulses of the American
spirit.”
Today, RFK is remembered as a
“uniter.”
With Gov. George Wallace tearing
at Johnson from the right and Kenne-
dy and McCarthy attacking from the
left — and Nixon having cleared the
Republican field with a landslide in
New Hampshire — LBJ announced on
March 31 he would not run again.
Four days later, Martin Luther King,
was assassinated in Memphis. One
hundred U.S. cities exploded in looting,
arson and riots. The National Guard
troops rushed to protect Washington,
ted, not to be rebuilt for a generation.
Before April’s end, Columbia Univer-
sity had exploded in the worst student
uprising of the decade. It was put down
only after the NYPD was unleashed on
the campus.
Nixon called the Columbia take-
over by black and white radicals “the
first major skirmish in a revolutionary
struggle to seize the universities of
this country and transform them into
sanctuaries for radicals and vehicles for
revolutionary political and social goals.”
Which many have since become.
In June, Kennedy, after defeating
McCarthy in the crucial primary of
California, was mortally wounded in
the kitchen of the hotel where he had
declared victory. He was buried in
Arlington beside JFK.
Nixon, who had swept every prima-
ry, was nominated on the first ballot
in Miami Beach, and the Democratic
Convention was set for late August.
Between the conventions, Soviet Pre-
mier Leonid Brezhnev sent his Warsaw
Pact armies and hundreds of tanks into
Czechoslovakia to crush the peaceful
uprising known as “Prague Spring.”
With this bloodiest of military crack-
downs since the Hungarian Revolution
of 1956, Moscow sent a message to
the West: There will be no going back
in Europe. Once a Communist state,
always a Communist state!
At the Democratic convention in Chi-
cago, the thousands of radicals who had
come to raise hell congregated nightly
in Grant Park, across from the Hilton
where the candidates and this writer
were staying.
Baited day and night, the Chicago
cops defending the hotel, by late in
the week, had had enough. Early one
evening, platoons of fresh police arrived
and charged into the park clubbing and
arresting scores of radicals as the TV
cameras rolled. It would be called a
“police riot.”
When Sen. Abe Ribicoff took the po-
dium that night, he directed his glare at
Mayor Richard J. Daley, accusing him
of using “Gestapo tactics in the streets
of Chicago.” Daley’s reply from the floor
was unprintable.
Through September, Democratic
candidate Hubert Humphrey could not
speak at a rally without being cursed
and shouted down.
Describing the radicals disrupting
his every event, Humphrey said, these
people “aren’t just hecklers,” but “high-
ly disciplined, well-organized agitators.
... Some are anarchists and some of
these groups are dedicated to destroy-
ing the Democratic Party and destroy-
ing the country.”
After his slim victory, Nixon de-
clared that his government would take
as its theme the words on a girl’s plac-
ard that he had seen in the Ohio town of
Deshler: “Bring us together.”
Nixon tried in his first months, but it
was not to be.
According to Bryan Burrough,
author of “Days of Rage, America’s
Radical Underground, the FBI, and the
Forgotten Age of Revolutionary Vio-
lence,” “During an eighteen month pe-
riod in 1971 and 1972, the FBI reported
more than 2,500 bombings on U.S. soil,
nearly 5 a day.”
No, 2018 is not 1968, at least not yet.

sor to presidents Richard Nixon, Gerald

ry. As the Trumps placed
their tributes outside the
Tree of Life synagogue,
protesters nearby shouted
that the president was not
welcome.
The emotional, disso-
nant scene reflected the
increasingly divided na-
tion that Trump leads, one
gripped by a week of polit-
ical violence and hate and
hurtling toward conten-
tious midterm elections
that could alter the path of
a presidency.
On their arrival in
Pittsburgh, the Trumps
entered the vestibule of
the synagogue, where
they lit candles for each
victim before stepping
outside. Shouts of “Words
matter!” and “Trump, go
home!” could be heard
from demonstrators gath-
ered not far from where a
gunman had opened fire
on Saturday.
Rabbi Jeffrey Myers,
who had been conducting
services when the shots
rang out, gestured at the
white Star of David posted
for each victim. At each,
the president placed a
stone, a Jewish burial tra-
dition, while the first lady
added a flower. They were
trailed by first daughter
Ivanka Trump and her
husband, Jared Kushner,
who are Jewish.
Near the synagogue,
flowers, candles and chalk

was slain in federal pris-
on. He was 89.
Bulger was found unre-
sponsive Tuesday morn-
ing at the U.S. penitentia-
ry in West Virginia where
he’d just been transferred,
and a medical examiner
declared him dead short-
ly afterward, according
to the Federal Bureau of
Prisons. Authorities did
not immediately release a
cause of death, but Justin
Tarovisky, a prison union
official, told The Associ-
ated Press it was being in-
vestigated as a homicide.

Prosecutors: More than 250 investors in at least 14
states lost money on bogus timber rights scheme

JACKSON — A Mississippi
man was sentenced on Tuesday to
nearly 20 years in federal prison
after he pleaded guilty to running
a Ponzi scheme in which investors
lost more than $85 million.
U.S. District Judge Carlton
Reeves sentenced Arthur Lamar
Adams on wire fraud charges in
Jackson following a two-day hear-
ing. Adams pleaded guilty in May
after deciding not to fight the
charges.
You hurt a lot of innocent peo-
ple,” Reeves told Adams. “Many of
these victims incurred a substan-
tial hardship.”
Adams remains under house ar-
rest and was ordered to report to
prison in January.
Reeves ordered Adams to pay
restitution for the losses, but that
amount will be decided later. A
receiver is trying to round up as-
sets for defrauded investors, but it
appears doubtful she will identify
enough to fully repay them. She’s
currently suing salesmen to whom
Adams paid millions in commis-
sions, seeking return of that mon-
ey.
Adams and salesmen sold bogus
timber rights, promising interest
rates of 12 percent or more. In real-
ity, though, Adams was using new
money to pay off old investors.
More than 250 investors in at
least 14 states lost money, prosecu-
tors have said. They argued during
the sentencing hearing that at least
34 investors sustained “substantial
financial hardship.” The minimum
investment was generally $10,000,
but some invested much more.
Disabled veteran Eric Orth of
Canton, who used a walker to make
his way before the judge, said Ad-
ams’ Ponzi scheme left his family
almost destitute.

about the debt. So, we en-
courage them to take as
many classes as they can,
while we are paying for it.
Tuition is one thing, but
now textbooks for college
courses are becoming so
much more expensive.
Books cost over $100 a
piece.”
Though Rush said she
has always been on a col-
lege track and ahead of
the game, she said she’s
seen fellow classmates
take college courses who
otherwise may not.
“It’s not only helping
me, but kids that wouldn’t
go to college because they
couldn’t afford it, now they
can,” Rush said. “Colum-
bus High gives us an op-
portunity through EMCC
and MUW. They’re giving
people that might not nor-
mally go to college that
chance.”

STARKVILLE — The plans for college foot-
ball’s new redshirt rule that allows players to
play in four games and still receive a redshirt
have varied.
Some have elected to divide the season into
thirds and allow redshirt candidates to play in
each third. Some have opted to hold freshmen
back and to use them only if they are needed for
depth due to injury.

right? The side dishes then have
a tiered level of time and effort
afforded to each of them, often
ending with something exciting
like “rice.”
But sometimes it just makes
sense to flip that paradigm on its
head, keep the main dish unde-
manding and uncomplicated, and
show the side dishes some love.
Pick an entree that can be
tossed into the oven and then —
other than the setting of a timer
and maybe an occasional basting
— be ignored. A roast chicken, a fi-
let, a leg of lamb. Then get started
on this sexy side dish.
In a way, this recipe is about
lavishing attention on the details.
Making roasted squash is just a
matter of cubing squash (which
can easily be bought peeled and
seeded), tossing it with some oil
and salt, and letting it do its thing
in the oven.
Once the oven door is closed,
you’ll spend a few minutes puree-
ing several green and flavorful
ingredients in a blender or food
processor for a verdant salsa verde,
washing the bowl, then pureeing
some ricotta and feta for a creamy
finish. By the time the vegetables
(and the roast) are ready to come
out of the oven, you’ve got your
squash accessories ready to go.
Add salt with a light hand here
as several of the ingredients —
feta, capers and anchovies — have
a lot of salt already. You can always
give the finished dish an extra
sprinkle of salt if you think it’s
needed.

or many of us, the menu
for Thanksgiving is etched
in stone. We eat the same
dishes every year because we
love every one of them. But
what about switching it up a
little by swapping in a grape and
cranberry crisp for the more
traditional apple, pumpkin or
pecan pie?
“Eh,” replies The Husband.
“Grapes are so boring. Wouldn’t
the crisp be tastier made with
raspberries or blueberries?” I
calmly note that grapes turn
intensely flavorful than in their
raw state. Also, fall is grape
season, which isn’t true of blue-
berries and raspberries. Best
of all, the grapes in this dessert
require no prep — no peeling
or coring or slicing. Just a quick
rinse and they’re good to go.
Plus, this recipe is almost
wantonly customizable. What
kind of grape to use? Any
seedless grape of any color will
do. Don’t like pistachios? Roll
instead with one of your favor-
ites, including walnuts, pecans
apricots, or even raisins (aka
dried grapes!) will do nicely.
Allergic to gluten? Replace this
recipe’s flour with one of the
gluten-free brands available at
most supermarkets.
GRAPE AND CRANBERRY
CRISP
Start to finish: 40 minutes
Servings: 6 to 8
3 cups seedless red or green grapes
or a mix
1/4 cup seedless raspberry jam or
1 tablespoon fresh lemon juice
1/3 cup dried cranberries
1/4 cup all-purpose flour
1 tablespoon packed light brown
sugar
1/8 teaspoon table salt
6 tablespoons cold unsalted butter,
cut into pieces
1/2 cup rolled oats
1/2 cup chopped pistachios, almonds
or walnuts
Vanilla ice cream
n Preheat oven to 375 F.
n In a medium saucepan combine
the grapes, jam and 2 tablespoons of
the orange juice. Cover and bring the
mixture to a boil. Stir, reduce it to a
simmer, and cook, partially covered,
lemon juice and remaining tablespoon
orange juice. Add the mixture to the
grapes, in a stream, whisking, and
bring to a boil. Boil for 20 seconds,
stir in the cranberries and pour the
mixture into an 8- to 9-inch deep-dish
pie plate.
n In another medium bowl, stir
together the flour, sugar and salt. Add
the butter and blend it in using your
hands, until the butter is broken into
small pieces the size of peas. Stir in
the oats and pistachios and sprinkle
the mixture evenly over the grape fill-
ing. Bake in the center until the crust
is golden, about 20 minutes. Let cool
for 5 minutes and then serve with the
ice cream.

CIDER-GLAZED APPLE
BUNDT CAKE

Start to finish: 1 hour 45
minutes (plus 2 hours, 30
minutes cooling time)
4 cups apple cider
3 3/4 cups (18 3/4 ounces)
all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons baking
powder
1/2 teaspoon baking soda
3/4 teaspoon ground cinna-
mon
1/4 teaspoon ground allspice
3/4 cup (3 ounces) confection-
ers’ sugar
16 tablespoons (2 sticks)
unsalted butter, melted
1 1/2 cups packed (10 1/2
ounces) dark brown sugar
3 large eggs
2 teaspoons vanilla extract
1 1/2 pounds Granny Smith
apples, peeled, cored and
shredded (3 cups)
n Bring cider to boil in 12-inch
skillet over high heat; cook
until reduced to 1 cup, 20 to
25 minutes. While cider is
reducing, adjust oven rack to
middle position and heat oven
to 350 F. Grease and flour 12
cup nonstick Bundt pan. Whisk
flour, salt, baking powder,
baking soda, cinnamon, and
allspice in large bowl until
combined. Place confection-
ers’ sugar in small bowl.
n Add 2 tablespoons cider re-
duction to confectioners’ sug-
ar and whisk to form smooth
icing. Cover with plastic wrap
and set aside. Set aside 6
tablespoons cider reduction.
n Pour remaining 1/2 cup
cider reduction into large bowl;
add melted butter, brown
sugar, eggs, and vanilla and
whisk until smooth. Pour cider
mixture over flour mixture
and stir with rubber spatula
until almost fully combined
(some streaks of flour will
remain). Stir in apples and any
accumulated juice until evenly
distributed. Transfer mixture to
prepared pan and smooth top.
Bake until skewer inserted
in center of cake comes out
clean, 55 minutes to 1 hour 5
minutes, rotating cake halfway
through baking.
n Transfer pan to wire rack
set in rimmed baking sheet.
Brush exposed surface of
cake lightly with 1 tablespoon
reserved cider reduction. Let
cake cool for 10 minutes.
Invert cake onto wire rack and
remove pan. Brush top and
sides of cake with remaining
5 tablespoons reserved cider
reduction. Let cake cool for 20
minutes. Stir icing to loosen,
then drizzle evenly over cake.
Let cake cool completely, at
least 2 hours, before serving.

Servings: 8
Start to finish: 2 hours, 25
minutes (Active time: 25
minutes)
1 recipe Classic Tart Dough
(recipe follows)
1/2 cup packed (3 1/2 ounc-
es) light brown sugar
1/3 cup light corn syrup
4 tablespoons unsalted butter,
melted and cooled
1 tablespoon bourbon or dark
rum
2 teaspoons vanilla extract
1/2 teaspoon salt
1 large egg
1 3/4 cups walnuts, chopped
coarse
n Roll dough into 11-inch cir-
cle on lightly floured counter.
Loosely roll dough around roll-
ing pin and gently unroll it onto
9-inch tartpan with removable
bottom, letting excess dough
hang over edge. Lift dough and
gently press it into corners
and fluted sides of pan. Run
rolling pin over top of pan to
remove any excess dough. n
Wrap loosely in plastic, place
on large plate, and freeze until
dough is fully chilled and firm,
about 30 minutes.
n Adjust oven rack to middle
position and heat oven to
375 F. Line chilled crust with
double layer of aluminum foil,
covering edges to prevent
burning, and fill with pie
weights. Bake until tart shell
is golden and set, about 30
minutes. Carefully remove
weights and foil and continue
to bake until tart shell is fully
baked and golden brown, 5 to
10 minutes.
n Meanwhile, whisk sugar,
corn syrup, butter, bourbon,
vanilla and salt together
in large bowl until sugar
dissolves. Whisk in egg until
combined. Pour filling into
warm tart shell and sprinkle
with walnuts, pressing them
into the filling. Bake until filling
is set and walnuts begin to
brown, 30 to 40 minutes,
rotating sheet halfway through
baking.
n Let tart cool on sheet to
room temperature, about 2
hours. To serve, remove outer
metal ring of tart pan, slide
thin metal spatula between
tart and tart pan bottom, and
carefully slide tart onto serving
platter or cutting board. Serve
with whipped cream, if using.

1 can (8 ounce) refrigerated crescent dinner
rolls
1/4 cup miniature semisweet chocolate chips
2 teaspoons powdered sugar or unsweetened
baking cocoa
n Heat oven to 375 F. Separate dough into 8
triangles.
n Sprinkle a heaping teaspoon of chocolate
chips on wide end of crescent triangle, and roll
over once to form brim of hat.
n Form the rest of the crescent triangle into
hat shape. Repeat for remaining crescent
triangles. Place on ungreased cookie sheet.
Bake 9 to 11 minutes or until golden brown.
n Using fine mesh strainer, sprinkle crescent
hats with powdered sugar or cocoa; serve
warm.

Total time: 10 minutes
2 bags homestyle popcorn
1 1/2 cups white chocolate chips
1 cup caramel candy corn
n Pop popcorn and place in a big bowl. Make
sure to remove all unpopped kernels so it
doesn’t get in the munch mix.
n Place chocolate chips in a microwave safe
bowl. Heat on half-heat for 30 seconds, then
stir. Return to microwave and heat at 20 sec-
ond intervals at half-heat until fully melted.
n Poor melted chocolate over popcorn, and
stir with a wooden spoon until evenly coated.
Once cooled, stir in caramel candy corn. Store
in an air tight container before bagging or
boxing up for Halloween treats.

ROASTED SQUASH
WITH SALSA VERDE
AND WHIPPED FETA
AND RICOTTA
Servings: 8
Start to finish: 45 minutes
Roasted squash:
2 butternut squash (about
3 pounds total), peeled and
cubed
3 tablespoons olive oil
Kosher salt and freshly ground
pepper, to taste
Scallion salsa verde:
1 cup packed flat-leaf parsley
leaves
1 cup sliced scallions
1 teaspoon fresh thyme leaves
2 anchovies, rinsed
1 tablespoon capers, rinsed
1/2 cup extra virgin olive oil
Zest and juice of 1 lemon
Pinch red pepper flakes
Kosher salt and freshly ground
pepper to taste
Whipped ricotta and feta:
1 cup fresh whole milk ricotta
1/2 cup crumbled feta
Freshly ground pepper to taste
1/4 cup extra virgin olive oil,
or more to taste
Kosher salt to taste, if needed
n Preheat oven to 425 F.
Spray a rimmed baking sheet
with nonstick cooking spray,
spread the squash on the bak-
ing sheet. Drizzle with the 3
tablespoons olive oil, sprinkle
with salt and pepper, and toss
until squash is evenly coated.
Bake for 35 to 40 minutes,
until squash is nicely browned
in spots and tender inside.
n Meanwhile, make the scal-
lion salsa verde. Place parsley,
scallions, thyme, anchovies,
capers, 1/2 cup olive oil,
lemon juice and zest and red
pepper flakes into bowl of a
food processor. Pulse several
times, then let motor run until
it is pureed. Taste and add
salt and pepper as desired
(be generous with pepper, but
perhaps lighter on salt thanks
to the anchovies and capers).
Transfer to a small serving
bowl.
n Then, make the whipped
ricotta and feta. Place ricotta
and feta into the (cleaned!)
bowl of a food processor and
pulse to combine. Add a nice
amount of pepper. With the
motor running, drizzle in the
1/4 cup olive oil until mixture
is fluffy and smooth. Taste
and see if mixture needs salt.
Transfer to a small bowl.
n Transfer squash to a serv-
ing platter. Spoon the whipped
ricotta and feta in little
mounds over the squash. Driz-
zle salsa verde over squash.
Remember to serve the roast.
