CHEF
Q: 1 Identify and list activities that are performed as part of the selected position.
The chef is an individual who oversees the culinary staff and were quite a few different
hats with regard to what goes on in their workplace.
Frequently a chef will oversee the staff, place orders for culinary items and direct the
overall preparation of the food which is served in the dining establishment.
From time to time, the chef will also don the apron and help to prepare the meals as well.
One who holds the title of chef has quite a few different general responsibilities related to
their professional role.
The chef is responsible for overseeing all who work below them in the establishment and
ensure that their duties are being carried out to the fullest of their potential.
An individual who is a chef will also be responsible for planning the set menu items and
any specials as well as provide the recipes in most cases.
In addition the chef is usually responsible for placing food orders and necessary kitchen
tool orders in order to enable the preparation of the meals.
The chef will also address any complaints which affect his kitchen staff and resolve those
issues.
One who is the chef of the establishment may also like to get behind the burners and
engage in some cooking and food preparation as well.
Also, the chef is one of the main individuals who is responsible for training the kitchen
staff.

The chef is also the main planner with regard to the menu items and any specials which
the dining establishments offer to its patrons. Along with planning the menu, the chef is
also responsible for creating the recipes and may or may not allow input from the
assistant chefs. One who is in the position of chef will spend many hours developing their
recipes and making them just perfect to serve the patrons.
Personal protective equipment (PPE) comprises a range of clothing and equipment which
is worn by employees, students, contractors or visitors as appropriate to protect or shield
their bodies from workplace hazards.

Personal protective equipment is the least effective way of controlling risks to health
and safety and should only be used as a temporary measure until better control
methods are put in place. Employers must first try to eliminate or remove hazards in
the workplace. Where this is not possible or practicable, other control methods
should be used, such as:
• Substitution: Can a less harmful substance be used, or can the substance be used
in
a less harmful form (e.g. pellets instead of powder)?
• Isolation: Can the process be isolated from the operator? Noisy machines enclosed?
Guards installed?
If there is still exposure to risk after these control measures have been tried, then
suitable PPE should be provided. PPE can also be used effectively in conjunction with
other measures to adequately reduce the level of risk.
PPE is typically needed for the following types of activities:
• Irregular short duration operations, such as maintenance inspections and entry into
confined spaces;
• Jobs where location continually changes and fixed engineering controls are not
appropriate.
PPE Plans
If personal protective equipment is to be used to minimise exposure to hazards, a
Personal
Protective Equipment Plan should be developed.
As part of this plan, determine and record:
• The basis for selecting each type of equipment used in the workplace;
• Necessary medical data, such as the results of individual hearing tests undertaken
prior to
and periodically during exposure to noise;
• Worker training needs;
• Exclusive use of personal protective equipment by workers, where relevant;
• Fitting requirements for individual items of personal protective equipment;
• Cleaning and disinfecting procedures;
• Storage requirements of the equipment;
• Maintenance and/or replacement requirements.

The personal protective equipment plan should allow for periodic assessments to
ensure that the equipment is used properly and is effective.
Problems with using PPE
• Wearing PPE may adversely affect the performance of tasks being undertaken.
(e.g. restricting vision or mobility).
• PPE may be uncomfortable to wear, and some employees may not be able to wear
it.
(e.g. workers who are allergic to latex cannot wear rubber gloves.)
• Ongoing supervision is required to ensure the PPE is being used correctly.
• PPE may create new hazards. (eg. some items of PPE can hinder the body’s natural
cooling
mechanisms by preventing evaporation of perspiration.)
• PPE may be an expensive option if used as a long term control measure, when the
costs of
continuous maintenance and replacement are taken into account.
Signage
Signs should be posted in the workplace wherever it is necessary to use PPE. These
signs
serve as a useful reminder to workers of the kind of PPE that should be used.
