COCONUT FLAKES

For the salad, assemble:


⅔ cup shredded spring greens
Handful of white mushrooms, sliced
3½ ounces purple broccolini, chopped
½ small red chile, sliced
2 scallions, sliced
2 tablespoons unsweetened coconut flakes
Handful of fresh cilantro leaves

For the dressing, mix:


1 tablespoon extra virgin olive oil
1 teaspoon cider vinegar
Pinch of salt and pepper

OMNIVORE ALTERNATIVE
Add 2 ounces roasted chicken breast
