Moroccan Spiced Garbanzo Beans


Yield = 2 cups

1 can Garbanzo Beans (15 ounces)


1 each Egg White
2 – 3 teaspoons Moroccan Spice

Drain and rinse garbanzo beans, dry on paper towels


Add egg white to a small mixing bowl and slightly whip
Add garbanzo beans and Moroccan spice
Toss together to evenly coat

Air Fryer Method:


Pre-heat air fryer to 300F
Add garbanzo beans and cook for 15 minutes
Shake pan 2 – 3 times while cooking
Remove beans and serve warm

Oven Method:
Pre-heat oven to 300F
Arrange garbanzo beans on a non-stick sheet pan
Bake garbanzo beans for about 30 – 40 minutes until crisp on the outside – stir beans
about every 10 minutes while cooking
Serve beans warm

Avocado Deviled Eggs


Yield = 12 servings

6 each Hard-Boiled Eggs


1 each Avocado
1 teaspoon Dijon Mustard
¼ teaspoon Chili Powder (optional)

Cut eggs in half


Remove egg yolk and place in small mixing bowl, reserve egg white halves
Cut avocado in half and remove seed
Scrape avocado from shell and place into mixing bowl with egg yolk
Add Dijon mustard to the avocado egg mixture and mash with a fork until smooth
With a small spoon, scoop avocado egg mixture into the reserved egg whites
Garnish each egg with a dash of chili powder if desired
Jalapeno “Poppers”
Yield = 6 servings

6 each Jalapeno Peppers


4 ounces Cream Cheese
¼ teaspoon Cumin
¼ teaspoon Granulated Garlic
¼ teaspoon Granulated Onion
½ cup Riced Cauliflower
1 teaspoon Cilantro – chopped
1 Tablespoon Queso Fresco

Cut peppers in half lengthwise and remove seeds, reserve peppers


Add cream cheese, cumin, granulated garlic and granulated onion to a small mixing bowl
Place riced cauliflower to a microwave safe bowl and heat for 1 minute
While cauliflower is still warm, stir into cream cheese and blend until smooth
Fold in cilantro to the cream cheese mixture
Fill the jalapeno pepper halves with the cream cheese mixture
Place stuffed jalapenos onto a onto stick sheet pan
Sprinkle the stuffed peppers with Queso Fresco

Air Fryer Method:


Pre-heat air fryer to 340F
Carefully arrange peppers into air fryer basket
Cook for 6 to 8 minutes or until golden brown
Serve hot

Oven Method:
Pre-heat oven to 375F
Baked stuffed peppers for 25 minutes or until golden brown
Serve hot
