International Food History and Food Customs

HROP Individual Project

Lesson: Select a country and research its food history. Prepare a power
point presentation or a poster board to include all gathered information to
present to class (on 1/10). Presentations must include at least all of the
points discussed below. You will be teaching the class about your country.
On Thursday, at the beginning of class, there will be a short quiz on your
country. On Thursday, 1/13 everyone will be preparing their selected recipe
in class for an International street food feast!

Included in your research report will be:


1. A map depicting the country/countries within this culinary region. Map
should highlight culinary regions. (Ex: Tuscany is a region in Italy,
Provence is a region in France, Szechuan is a region in China, etc)
2. What are some examples of traditional foods from your country?
3. What are some unique cooking terms and cooking vocabulary from
your country?
4. How does your region’s geography/land affect the foods that they now
eat and grow? (Ex: climate, land, soil, etc.)
5. Authentic street foods and most importantly, spices associated with
this region/regions and how they are used. (Ex: Ginger is used in
Japan, cinnamon is used in Morocco, cilantro is used in Mexico, etc)
6. Historical events, people and or institutions that influenced the food
history of this region. (Ex: wars, trading, etc)
7. Special cooking techniques that may be associated with this regional
cuisine and it’s street food preparation. (Ex: a wok is commonly used
in China, a special crepe pan is used in France)
Also Included in your assignment will be:
1. One recipe that is representative of your chosen region. Your recipe
should only be enough for 4 servings. If yours makes more, you need
to scale the measurements.

2. Prepare poster or Power Point presentation containing all information


you have gathered. You will present this to the class starting Tuesday.
3. A list of 5 multiple choice questions about your country, to be included
on the quiz to be taken on Thursday.
4. On Thursday and Friday, 1/13-1/14, each group will make their dish
and the class will get to sample a dish from each country represented.
5. Please turn in all at once on Monday, March 10th:
a. your completed poster or power point (copy and paste it into the
HROP Foods Folder on school computers)
b. Your recipe and shopping list WITH AMOUNTS OF INGREDIENTS
NEEDED!!!
c. Your 5 multiple choice questions for the quiz, with answers.
d. Completed KWL chart

Be prepared to start teaching/presenting at the beginning of class on


Monday.
