appointment. This year we hope to custom graze cattle for local farmers. We will graze the
cattle using MIG "management intensive grazing" principles. By planning ahead
and thinking through pasture moves, animals can have exceptional gains on
pasture alone. Cattle finished properly on grass, can have great texture, ex-
ceptional flavor, and excellent marbling. In the past months I have immersed
myself in information on rotational grazing, MIG, and Holistic Management, I
have read several books by Joel Salatin, Jim Gerrish, and Greg Judy. I wouldn't
be surprised if I have read more in the last year than in the previous 12
years. I am very excited to put this new knowledge to work. Currently we
are looking for additional farms to lease in the West Charlton area, please let
us know if you have any information on available properties.

Meat Chickens
~Author
Over the course of the summer we will be offering 4 different types of meat chickens.
Unknown They will all be raised on pasture and moved daily to a new feast.

Cornish Cross: these have large breast meat and are a fast growing commercial
breed that grow in 7-8 weeks,

Freedom Rangers: bred to grow in 12-14 weeks, being aged a little longer they will
have a deeper flavor

Scottish Highland Cattle:My brother Jacob had an in-

terest in this type of cattle as a lawn ornament, Stefanie
and I looked into the breed last spring and found they
could be a good fit for our farm. Scottish Highland Beef is
naturally lower in cholesterol, very lean, and full of nutri-
tion, especially when grass fed and finished. Our fold of Scottish Highland
Cattle consists of 18 cattle.

Heritage Breed Pigs: We added pigs to our farm several “I like

Heritage Turkeys

This year we will be offering a limited number of Heritage Turkeys for Thanksgiving and
Christmas, they will provide you with a very juicy and tasty holiday meal. These turkeys
won’t grow as large as the Broad Breasted Turkeys, but the taste is second to none.
Preorder yours today; if you have a large holiday party you may want to order more
than one.

Broad Breasted Turkey

Growing much larger than the Heritage Turkeys, these birds will also be delicious and
very juicy as well.

Other news

This spring we purchased a Maremma LGD (livestock guard-

ian dog), Stefanie named her Ailis. Ailis is 16 weeks old and
has already started working, it’s entertaining to observe her
learning her job and keeping watch over the animals as if
they were her own.

In April we signed a lease for a 75 acre

farm where our livestock will graze for “Expecting
