Journal of Food Science and Technology

Scope
JFST, a bimonthly journal, publishes original
research papers and reviews in all branches of
science, technology and engineering of foods and
food products. JFST does not levy any page
charges and publication is based purely on the
scientific and technical merit of the paper. Peer-
reviewed, critical, concise reviews of topical
interest and book reviews of relevant books are
also published.

rejected at this stage. Papers that pass the pre-

two independent referees, but the Editor may also

and editorial inputs will be intimated to the

If revision of a paper is requested, the revised
version should be returned within 30 days.
If more time is required, the author should contact
the Editorial Office or the Editor-in-Chief to agree
a new deadline. If revision is delayed by the author
without prior agreement, the revised version will
be treated as a new submission.
Online Submission
Authors are requested to submit their manuscript
to the Editorial Office
(www.editorialmanager.com/jfst). All manuscripts
submitted to JFST should be in English. Step-by-
step instructions on how to submit your
manuscript online are available during the
submission process. Further information can be
obtained online from the submission site (see
“HELP”). You can also contact the editorial office
for online submission support.
 Prepare your text, in Word (.DOC file).
 Prepare your graphics.
 Illustrations: The preferred figure
formats are JPEG/TIFF. For
halftones, please use TIFF format.
The file name (one file for each
figure) should include the figure

number. Figure legends should be
included in the text and not in the
figure file.
 Scan resolution: Scanned line
drawings should be digitized with a
minimum resolution of 800 dpi
relative to the final figure size. For
digital halftones, 300 dpi is usually
sufficient.
 Color illustrations: Store color
illustrations as RGB (8 bits per
channel) in TIFF format. Color
images will be printed only on
recommendation of the Editor-in-
Chief.
 Vector graphics: Fonts used in the
vector graphics must be included.
Please do not draw with hairlines.
The minimum line width is 0.2 mm
(i.e., 0.567 pt) relative to the final
size. If you are unable to embed
your figures in the text document,
then upload the figures separately as
.GIF, .JPEG, .EPS, .TIFF, .PPT or
.XLS files. Users of Macintosh
computers should type the file
extension name (e.g. .DOC) after
the file name before uploading to
ensure conversion to .PDF files.
Each figure must be labelled with a
figure number.
 To ensure accurate conversion of
characters, standard fonts such as
Times New Roman, Ariel or
Helvetica should be used for
preparing the text and figures.
 Symbol font should be used to
convert Greek characters and other
non-standard characters such as the
degree symbol.

The following should be provided during the
submission process:
 The names of four suggested referees, together
with their institutions, telephone numbers and e-
mail addresses. Please add the relevant areas of
expertise and indicate their suitability as
referees, in brackets, after the names. Do not
suggest scientists based in your own institution
or close collaborators elsewhere, as they will
not be approached.
 The editors will check the standing of the
referees in their stated fields by reference to
PubMed and other public databases.
 A covering letter of submission (giving the
postal, fax, and e-mail addresses of the
corresponding author) should be inserted into
the appropriate box (“comments for the Editor
in-Chief”). Please add fax numbers of suggested
referees in the covering letter.
 Evidence of submission of sequences to a
databank.
 Approval of citation of any personal
communications.
 Any unpublished papers that are cited must be
uploaded for referees to access. An electronic
copy of any related paper under consideration or
in press elsewhere must also be submitted to
facilitate evaluation by the referees. Failure to
do this may delay the review process.
 Any other supplementary material (see below)
 If the manuscript is a resubmission, please
upload a letter giving point-by-point responses
to the comments by the reviewers of the
previous version.
Note: After uploading the manuscript files please
ensure that the “save and continue” button is
clicked. This enables viewing the proof of the
uploaded manuscript, and enables submission. An

onscreen submission acknowledgement and
reference number will also be provided.
Submission of a revised
manuscript
 Submit the revised manuscript online to
https://www.editorialmanager.com/jfst
following the instructions provided in the
editorial decision letter.
 Upload revised manuscript/figures as for
initial submission (PDF file) but please ensure
a word document (DOC or RTF file) is
available.
Manuscript preparation
Authors should strictly follow the journal‟s format
while preparing the manuscript to avoid delays in
processing. Manuscript must be typeset using 12
point font size with at least 1.5 line spacing on A4
size paper and should have at least 2.5 cm margin
on all sides. Manuscript should be submitted as a
single file as MS Word document.
Arrangement of Manuscript
MS should be arranged as indicated below.
Title page
The title should be typeset in sentence case,
followed by authors name(s) in the next line
followed by their institutional affiliations as
separate lines. The corresponding author should be
indicated with an asterix. This should be followed
by e-mail address of the corresponding author.
Abstract and Keywords
Each paper should have an abstract not exceeding
200 words and should concisely report objective,
methodology and results. An abstract should
briefly describe the results and conclusion within
200 words. The abstract should not contain any
undefined abbreviations or unspecified references.
Abstract should be followed by not more than 6
key words that reflect the theme of the paper.
Text
The text should be type set with Introduction in the
beginning followed by Materials and methods,
Results and discussion, Conclusion and
Acknowledgement (if any) and References, in that
order. Material and methods should be precise and
without any ambiguity indicating details of
sampling methods, replicates and relevant
statistical analyses. Scientific nomenclature should
be mentioned for all biological names at their first
appearance. Vernacular names like pulav, kabab,
kofta, etc. should be in italics and briefly described
at their first use.
References
 In the text reference to publication should be
cited with author(s) name and year of
publication in bracket, e.g. Sachindra and
Mahendrakar (2004), George et al. (2005),
Bawa (2007).
 All publications cited in the text should be
presented in the list under references in
alphabetical order.
 Use standard abbreviations for the names of
scientific periodicals.
 Unpublished data including thesis and
dissertation or personal communications
should not be cited.
References should be cited in the following

Tables
 Tables should be numbered consecutively
(use Arabic numbers).
 Tables should always be cited in text in
consecutive numerical order.
 Each table should appear after the
Reference section on a separate page and
should have a brief, self-explanatory title.
 No vertical/horizontal lines in between
columns/rows should be drawn and each
table should not exceed 12 columns.
 Column headings should be brief.
 Nil results should be indicated by ND
(not detected), while absence of data by
the sign „-‟. The mean±SD/SEM should
be indicated as footnote.
Figures and Illustrations
 All illustrations should be provided in a form
and size with proper legibility for
reproduction and each figure should not
exceed half the size of A4 page and letters
should not be less than 12 points size to
maintain legibility when reduced to single
column size.
 All photographs, charts and diagrams should
be indicated as “Figure(s)” and numbered
consecutively as per the order of appearance
in the text.
 All figures should have a legend written at
the bottom.

 Original photographs must be supplied as
separate file, at the time of manuscript
submission.
Abbreviations
Use standard abbreviations. A few are: ml
(millimetre), g (gram), t (ton), mM (milli mole), d
(days), min (minutes), h (hours), sec (seconds), ha
(hectare), SD (standard deviation), kD (kilo
Dalton), SE (standards error), wt (weight),
DOS (days of storage), mol wt (molecular weight).
The binomial Latin names of microorganisms,
plants and animals should be italicized.
Galley Proof
Galley proof is sent to the corresponding author as
a PDF file. It must be checked stringently and
returned within 48 h of receipt. No major changes
at this stage should be made.
Review Process
A peer-review process is used to assess the quality
of work submitted to JFST for publication and
assess its importance. It provides reliability and
credibility to the research work. It also helps
authors meet the accepted standards of their
discipline. Reviews are done by experts in the
subject field. All articles submitted to the journal
go through a minimum of two rounds of double-
blind review. This helps us maintain high-quality
of our publication.
