Workshop Overview: The application of a HACCP system, as a tool for risk management by the food industry and by mass catering services, is an essential component in the implementation of a modern food safety system Your journey towards HACCP compliance and/or certification begins with the Food Safety Manual. The documentation, for most organizations, tends to be a difficult, time consuming and sometimes costly, part of developing a Food Safety Management System. It is for this reason, and the many requests to produce such a Workshop, that has a specific focus on the total understanding of HACCP and, the development of the relevant documentation, that this program was developed, tried, tested and accepted, through to HACCP accreditation. This very same workshop has now been made available, for assistance to the South African food industry, to prepare for the many Legislative changes that have been introduced regarding Food Safety, in the case of Food Poisoning Incidents, and the Consumer Protection which, was brought into law in April of this year 2011. Workshop Objectives: On completing this workshop the participant will: Understand the requirements of a Food Safety Management system Have a thorough understanding of HACCP and how to conduct a HACCP Study within their own organization: Have compiled a Food Safety Manual with all relevant procedural documentation to meet the requirements specific to their own organisation: Be in a position to design an Internal Audit Program and audit effectively against this program: Be competent to carry out internal audits: Be able to prepare an organization for third party assessment:

How w i l l y o u b en efit by attending thi s workshop and ho w d o es it differ from other courses or workshops? You will leave this 5 day workshop with a complete Food Safety Manual with associated procedures (electronic version) which is specific to satisfy the SANS 10049:2011 and SANS10330:2007 documentation requirements. You will be working with pre-written documentation templates and accompanying forms The Facilitator will take you step-by-step through the development of twenty three (23) procedures to meet the requirements of a HACCP System. The Facilitator will also assist in the alignment of these documents, to suit your own organisation, during the workshop. The Workshop will provide you with a full understanding of the contents of the manual, how to implement the manual and how it relates to the Standards. This will allow you to start the implementation stage sooner rather than later. Enrolment requirements: Have a basic knowledge of your companys food processes, production lines, cleaning schedules, etc. (This will aid in the development of your documentation. On securing your place on this workshop, a list will be provided as to what relevant information could be brought to the workshop) Each delegate will be required to bring a laptop to the workshop. Key elements to this Workshop: General overview: What is HACCP; Food safety hazards; Developments in HACCP within South Africa; Stages in HACCP implementation; Prerequisite programs How to conduct a HACCP Study: Application and understanding of the Codex Principles Review, and practical application, of the Clauses within SANS 10330: 2007: Scope; Definitions; National legislation; Documentation requirements; Management responsibility; Prerequisite programs (PRPS); Corrective Action; HACCP systems requirements (12 Stages) Auditing with practical applications using documentation developed during the workshop: Audit Planning; Development of Audit Checklists; Conducting an Audit; Audit Report Writing; Writing non-conformance reports and closing out with corrective action and preventive action.
