Paul There are so many food product made from yoghurt, such as an ice cream or commonly called froyo or frozen yoghurt. But, not only for a food product, so many beverage outlets sell the yoghurt with different taste. Now a days, froyo is no longer a rare thing at the mall or shopping center. With the various outlets, yoghurt has become a popular snack. The sensation when we eat yoghurt is the sour taste, but that taste has a good benefit for our body. Due to the popularity of yoghurt, it does no harm if we want to know more about this acidic food. Types of Yoghurt When you want to buy yoghurt, you may be confused in choosing the type of yoghurt. In general, these are the type of yoghurt based on the texture: Set Yoghurt The texture of Set Yoghurt is very thick. Set yoghurt similar with Plain Yoghurt. Plain Yoghurt is usually yoghurt without added sugar, taste, or smell. It is white and taste very sour. Stir Yoghurt The texture of Stir Yoghurt (if we compare with Set Yoghurt) is more watery, but still feels like a thick yoghurt ice cream. Stir Yoghurt was added with sweetener or fruit flavor. To enjoy it, you will need a spoon. Drink Yoghurt For this type of yoghurt, we dont need a spoon for eat the yoghurt, we just drink it. Drink yoghurt is same with fresh milk. These differences because of the difference in raw material and manufacturing processes. So it doesnt mean that yoghurt is better than liquid yoghurt. Fermentation in Yoghurt Yoghurt was made from milk and mixed with a bacteria from lactic acid. The bacteria that was commonly used in the process of making yoghurt is the the Bifidobacterium sp., Lactobacillus sp. Or Streptococcus thermophilus and Lactobacillus bulgaricus. These bacteria trigger the fermentation process of milk, change the lactose in milk into lactic acid. Another effect of the fermentation process is the breakup of the protein in milk that cause the milk become thick. The end of the result, the milk will taste sour and sweet, this is the basic from the yoghurt that has been completed. How to Make Yoghurt For those of you who want to taste yoghurt, you can also make it at home by yourself. The basic ingredients are liquid milk, milk powder, sugar and plain yoghurt that functions are seedling. Place a pan liquid milk, milk powder and mix with sugar. Heat on the stove over low heat until the temperature reaches 75-80 degrees Celcius. Let stand for 15 minutes then remove and increase to 35 degrees Celcius temperature. If you want to produce low-fat yoghurt, then you

can use low-fat milk for the ingredient. Then enter your plain yoghurt (yoghurt with no flavor, sugar, and no smell) or yoghurt seddling which are sold in the market and stir well. Make sure that the yoghurt has reached the temperature of 35 degrees Celcius before putting that bacteria. Cover the pan tightly for the process of fermentation of milk. Let stand for 24 hours. After the yoghurt is formed, you can add fruit with sugar. Or add the syrup or sugar if the taste is less sweet. Storage Yoghurt After the yoghurt was already done, put is in freezer. Store on a temperature of 4-7 degrees Celcius. Frozen Yoghurt (Froyo) Yoghurt can also be processed into ice cream. People know as frozen yoghurt or froyo. Froyo is similar with yoghurt in general and more fun because of the cold and eaten in similar condition when you enjoying ice cream. To produce frozen yoghurt, you need a special machine like the machines to make ice cream. Benefits of Yoghurt Yoghurt is very useful for those who suffer from lactose intolerance. In yoghurt, milk is more easily digested because it has undergone the lactose solution. For health, yoghurt has benefit such as enhance the immune system, reduce cholesterol and rheumatic.
